APPLE CIDER COUNTRY PANCAKES
A wonderfully delicious breakfast! With sweet bits of apple and a tangy apple cider syrup topping, these are not your momma's pancakes! The syrup is a little time-consuming to make, but well worth it!

Steps:
- Combine pancake mix and water in a large bowl; mix well. Stir in diced apples. Place batter in the refrigerator to rest, about 15 minutes.
- Heat sugar in a large saucepan over medium heat, stirring constantly, until it melts into a thick amber-colored liquid, about 5 minutes. Reduce heat to low. Add apple cider slowly to the saucepan, stirring constantly, until mixture is the consistency of syrup, about 5 minutes. Remove from heat and cover.
- Heat a lightly greased skillet over medium-high heat. Drop a scant 1/4 cup of batter into the skillet and cook until bubbles form and the edges are dry, 1 to 2 minutes. Flip and cook until golden brown on the other side, 1 to 2 minutes. Repeat with remaining batter. Serve with cider syrup.

I created this one Sunday morning when I was craving that Autumn flavor. These sensuous pancakes have all the beautiful flavors of autumn but only use what you probably already have in your pantry!

Steps:
- Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.
- Heat a large skillet over medium heat, and spray with cooking spray. Use about 1/4 cup of batter per pancake. Cook 3 to 4 pancakes at a time. Turn over when bubbles appear in the center, and cook until golden on the other side. Serve immediately with pats of butter and maple syrup.

- Combine buttermik and eggs in large bowl and mix well.
- add flour, sugar, baking powder, salt and baking soda and mix well.
- stir in butter.
- stir in apples and nuts.
- chill covered in refrigerator at least 2 hours or more --
- Pour 1/4 cup at a time onto hot lightly greased griddle.
- bake until golden brown.on both sides, turning once.
- to prepare CIDER SYRUP:.
- combine sugar, cornstarch and pumpkin pie spice in saucepan and mix well.
- stir in cider and lemon juice.
- cook over low heat until mixture thickens, stirring constantly.
- Bring to a boil and boil for 1 minutes.
- Remove from heat and add butter and stir till melted.

- Combine flours, baking powder, sugar, and salt.
- Combine eggs, apple cider, oil, and apples then mix with dry ingredients just until moistened.
- Spray hot griddle with cooking spray, ladle 1/4 cup batter onto griddle, cook until bubbles form on top, flip, continue cooking until golden.

- SYRUP:.
- Combine cider, 2 tablespoons brown sugar, lemon juice and cornstarch in a small saucepan.
- Bring to a boil over medium heat, whisking, and cook until thickened, 1 to 2 minutes.
- Set aside.
- PANCAKES:.
- Whisk whole-wheat flour, all-purpose flour, baking powder, baking soda and the remaining 1 tablespoon brown sugar in a small bowl. Whisk egg, egg white and buttermilk in a large bowl.
- Stir in the dry ingredients, apples and bacon until just combined. (The batter will be thick.).
- Brush a large nonstick skillet with 1/2 teaspoon oil and place over medium heat until hot.
- Cooking 4 at a time, use about 1/4 cup batter for each pancake and gently spread it to make them about 3 inches in diameter.
- Cook until the edges are dry and bubbles begin to form, about 2 minutes. Flip the pancakes and cook until golden brown, 1 to 2 minutes more. Repeat with the remaining oil and batter, reducing the heat as necessary to prevent burning. Reheat the cider syrup, if desired, and serve with the pancakes.
- TIP:.
- Make Ahead Tip: Cover and refrigerate the syrup (Step 1) for up to 1 week. Reheat on low before serving.

- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 3 tablespoons unsalted butter, melted

- 1 apple, peeled and finely chopped

Instructions
For the pancakes:
- Mix together the flour, sugar, baking powder, and salt in a large mixing bowl.
- In a separate mixing bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the crumbled bacon and chopped apples.
- In a large skillet over medium heat, melt a tablespoon of butter.
- Spoon a scoop of the pancake batter (around ¼ cup) into the skillet for each pancake.
- Cook the pancakes for 2 to 3 minutes on each side until golden brown.
- Keep the cooked pancakes warm in the oven at 200°F until ready to serve.
For the cider syrup:
- Pour the apple cider and brown sugar into a small saucepan.
- Bring to a boil over medium-high heat.
