Applesauce Parfaits with Yogurt and Crispy Quinoa image

Provided by Bobby Flay

Time 1h

Yield 4 servings

Number Of Ingredients 13

3 pounds assorted apples (Macintosh, Granny Smith or Gala), cored, peeled and cut into 1-inch chunks
Juice of 1 lemon
1/4 cup packed light brown sugar
2 tablespoons pure cane sugar, plus more as needed
1 to 3 teaspoons ground cinnamon
Pinch fine sea salt
1 1/4 cups quinoa
2 tablespoons coconut oil
2 tablespoons clover honey
2 cups Greek yogurt (fat-free or 2-percent)
Seeds of 1/2 vanilla bean
1/4 teaspoon pure vanilla extract
Fresh mint sprigs, optional

Steps:

  • For the applesauce: Put the apples, lemon juice, brown sugar, sugar, cinnamon and salt in a heavy-bottomed saucepan with a lid. Bring to a boil, then cover, turn to heat to low and simmer, stirring occasionally, until the apples are completely soft, 20 to 30 minutes. Taste, and add more sugar if desired.
  • Off the heat, mash the apples well with a potato masher or a fork. Allow to cool before serving in the parfaits.
  • For the crispy quinoa: Preheat the oven to 325 degrees F. Line a baking sheet with parchment. Toss the quinoa, coconut oil and honey in a bowl and spread in an even layer on the prepared baking sheet. Bake until lightly golden brown, about 20 minutes. Remove to a baking rack to cool.
  • For the parfaits: Mix together the yogurt, vanilla bean seeds and vanilla extract in a bowl. Spoon some of the yogurt mixture into four parfait glasses. Scatter some quinoa on top, then spoon in a thick layer of applesauce. Sprinkle with more quinoa, add another thick layer of yogurt, and sprinkle again with quinoa. Add a dollop each of applesauce and yogurt, and a final sprinkling of quinoa. Garnish with fresh mint sprigs if desired.

Apple Cinnamon Greek Yogurt Breakfast Parfaits image

Honey, vanilla, and cinnamon stirred into Greek yogurt and then layered with crisp apples and applesauce. We love this as a fancy fall breakfast, but it passes just as easily for a surprisingly decadent dessert.

Provided by Kare for Kitchen Treaty

Time 10m

Number Of Ingredients 7

1 1/2 cups Greek yogurt (I use 2%)
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 medium crisp apple (I like honeycrisp, gala, or pink lady for these, cored and diced)
1/4 cup applesauce
Additional honey and cinnamon for topping (if desired)

Steps:

  • Have two sturdy glasses, mason jars, or mini trifle bowls ready.
  • To a medium bowl, add the yogurt, honey, vanilla, and cinnamon. Stir well to combine.
  • Grab 1/4 of the apples and sprinkle them at the bottom of the glasses. Add 1/3 of the yogurt, a few spoonfuls each. Depending on the size of your glass, you may need to spread the layers gently with the back of a spoon to distribute to the edge of the glass. Top with more apples (1/4), then more yogurt (1/3). Add all of the applesauce (2 tablespoons per glass), then more apples (1/4). Top with remaining yogurt and sprinkle with remaining apples. Drizzle with a little more honey and sprinkle with cinnamon if desired. Serve.

Making apple applesauce yogurt delightful recipes is a great way to enjoy a nutritious and delicious snack or dessert. The combination of applesauce, yogurt, and other ingredients make for a flavorful treat that satisfies your taste buds while providing you with important nutrients. However, creating the perfect recipe takes some trial and error. In this article, we’ll share some tips that will help you create the perfect apple applesauce yogurt recipe.

Tip 1: Choose Quality Ingredients

The quality of the ingredients you use will greatly influence the taste and texture of your apple applesauce yogurt recipe. When choosing your applesauce, make sure to choose unsweetened and preferably homemade. This will give you the most control over the sweetness and texture of your applesauce. If you’re short on time, look for store-bought applesauce that contains only apples and water. For yogurt, make sure to choose plain Greek yogurt, which is a great source of protein and probiotics. Avoid flavored or sweetened yogurts, which contain added sugars, artificial flavors, and preservatives.

Tip 2: Experiment with Different Flavor Combinations

To create a unique and flavorful apple applesauce yogurt recipe, try experimenting with different flavor combinations. Some great flavor combinations include: - Cinnamon and nutmeg: These warming spices give your recipe a warm and comforting flavor that’s perfect for fall. - Vanilla and maple syrup: This combo adds a touch of sweetness and a warm, cozy flavor to your recipe. - Lemon zest and honey: The fresh and tangy flavor of lemon cuts through the sweetness of the applesauce and yogurt, while honey adds a touch of sweetness.

Tip 3: Use a High-Powered Blender

Using a high-powered blender is key to achieving a smooth and creamy texture for your apple applesauce yogurt recipe. A blender like a Vitamix or Blendtec does an excellent job of blending the ingredients together and breaking down any chunks or bits of apple or yogurt. This will give you a smooth and creamy texture that’s perfect for dipping, spreading, or spooning.

Tip 4: Use Fresh Apples

Using fresh apples in your recipe is far better than using canned applesauce. Fresh apples have a natural sweetness and a crisp texture that canned applesauce lacks. When making applesauce from scratch, try using different types of apples to achieve different flavors and textures. Honeycrisp, McIntosh, and Granny Smith are all great options, as they each have a distinct flavor and texture.

Tip 5: Add Varieties of Texture to Your Recipe

Adding different textures to your apple applesauce yogurt recipe can make it more interesting and enjoyable to eat. Some great texture-adding ingredients include: - Toasted nuts: Walnuts, almonds, and pecans add a nice crunch and nuttiness to your recipe. - Dried fruits: Dried cranberries, apricots, or raisins add sweetness and chewiness to your recipe. - Granola: Adding granola on top of your recipe will give it an added crunch and texture.

Tip 6: Adjust Sweetness to Your Preference

One of the great things about making your own apple applesauce yogurt recipe is that you can control the level of sweetness. If you prefer a sweeter recipe, add more honey or maple syrup to the recipe. If you prefer a less sweet recipe, reduce the amount of sweetener or skip it altogether. Taste the recipe as you go and adjust the sweetness to your liking.

Tip 7: Serve It in Creative Ways

Adding the final touches to your recipe can enhance your overall eating experience. Some creative ways to serve your apple applesauce yogurt recipe include: - Use it as a dip: Slice up some fresh fruit or whole-grain crackers and use your recipe as a dip. - Spread it on toast: Toast a slice of whole-grain bread and spread your recipe on top for a healthy breakfast option. - Top it with fresh fruit: Add some fresh berries or sliced bananas on top of your recipe for extra sweetness and texture.

Conclusion

In conclusion, creating the perfect apple applesauce yogurt recipe requires some experimenting and attention to detail. Use high-quality ingredients, experiment with different flavor combinations, and adjust the sweetness to your liking. Use fresh apples, add texture to your recipe, and serve it in creative ways. By following these tips, you’ll create a delicious and nutritious snack or dessert that everyone will love.
