CARAMELIZED ONION, APPLE AND GOAT CHEESE MELTS

Caramelized Onion, Apple and Goat Cheese Melts image

Caramelizing onions can be a lesson in patience, but you need to cook these onions for only half the usual time, just enough to break them down and turn them a light golden brown. Once cooked, they make up the bulk of the filling for these sandwiches. Folding the warm onions into the goat cheese softens the cheese, helping it glide easily over the bread. The cheese helps bind everything together, so nothing slips out while the sandwich is toasting in the pan. You can use apples or pears here; either adds some fresh crunch. Seasoned with woody thyme and zippy kalamata olives, this sandwich makes a hearty lunch, or a light supper paired with soup or salad.

Time 30m

Yield 4 sandwiches

Number Of Ingredients 9

2 tablespoons olive oil, plus more as needed for frying
1 1/2 pounds Vidalia onions, peeled, halved and thinly sliced
1/2 teaspoon kosher salt
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon red-pepper flakes
1/2 cup soft goat cheese (about 4 ounces)
2 tablespoons chopped pitted kalamata olives (about 10 olives)
8 (1/2-inch-thick) slices sourdough bread
1/2 pound apples or pears, halved, cored and thinly sliced

Steps:

  • Heat 2 tablespoons oil in a large nonstick skillet over medium. Add the onions and salt and cook, tossing frequently, until the onions turn creamy and golden, 15 to 18 minutes.
  • Add thyme and red-pepper flakes and stir for another 30 to 45 seconds until fragrant. Transfer the onions to a small bowl and stir in the goat cheese and olives.
  • Place 4 slices of bread on the counter and divide the onion mixture among them, spreading to the edges. Top with the apple or pear slices, then the remaining bread, pressing down gently to adhere.
  • Wipe the same skillet down with a paper towel, then add 1 to 2 teaspoons olive oil (or more as needed to coat the bottom of the pan) and heat over medium. Working in batches, if needed, add the sandwiches and cook 1 to 2 minutes per side, pressing them gently to compress them as they cook, until the bread is toasted and deeply golden brown. If working in batches, add more olive oil as needed and cook remaining sandwiches. Slice and serve.

If you are looking for a new and exciting recipe to try, then you might want to consider making a delightful apple and goats cheese brulee. This recipe is a lovely combination of sweet and savory flavors, and the crunchy caramelized top adds a unique and delicious texture to the dish. However, there are several tips that you should keep in mind when making this recipe to ensure that it turns out perfectly. In this article, we will share some valuable tips that you can use when making apple and goats cheese brulee recipes.

The Importance of Choosing the Right Apples

The first and perhaps most critical tip you should keep in mind when making apple and goats cheese brulee is to choose the right apples. Apples are a significant ingredient in this recipe, and the type of apple you choose can make or break the dish. In general, you should look for apples that are firm, moderately sweet, and crisp. Some of the best varieties of apples that work well for this recipe are Honeycrisp, Pink Lady, Fuji, and Granny Smith.

Preparing the Apples

Once you have chosen the right apples for your recipe, you need to prepare them to ensure that they cook evenly and taste delicious. The best way to prepare apples for apple and goats cheese brulee is to cut them into thin slices. You can use a mandoline slicer to achieve uniformly thin slices, or you can do it by hand using a sharp knife. Once you have sliced the apples, you will also need to remove the core and seeds.

Selecting the Right Goats Cheese

Another crucial ingredient in apple and goats cheese brulee recipe is goats cheese. Goats cheese has a distinctive tangy and slightly sour flavor that pairs beautifully with the sweetness of the apples. However, not all goats cheese is created equal, and you should choose the right variety of goats cheese to ensure that it complements the other ingredients in the dish well. In general, you should look for creamy, soft goats cheese that has a mild flavor. Some great options include Chèvre, Bucheron, or Sainte-Maure.

Choosing the Right herbs and Spices

In addition to apples and goats cheese, the recipe typically includes several herbs and spices to enhance the flavor of the dish. Some of the most commonly used herbs for apple and goats cheese brulee are thyme, rosemary, and sage. These herbs add a rich and savory aroma to the dish that pairs well with the sweetness of the apples. Additionally, you can also add a touch of ground cinnamon, nutmeg, or black pepper to add depth and complexity to the dish.

Adding Other Ingredients

While the basic recipe for apple and goats cheese brulee involves only apples, goats cheese, and a few herbs and spices, you can also add other ingredients to customize the dish to your liking. For example, you can add chopped walnuts or pecans to add a crunchy texture to the dish, or you can add caramelized onions or garlic to add depth and sweetness to the dish.

Caramelizing the Top

The final and perhaps most crucial step of making apple and goats cheese brulee is caramelizing the top. Caramelizing the top of the dish creates a crisp and crunchy texture that contrasts nicely with the creamy and smooth texture of the goats cheese and the apples. To achieve the perfect caramelized top, you should sprinkle a layer of sugar over the goat cheese and apples and then use a kitchen torch to melt and caramelize the sugar. You can also use the broiler setting on your oven to achieve a similar effect, but the torch method is more precise and allows you to control the degree of caramelization better.

Conclusion

Making apple and goats cheese brulee can seem daunting, but with these valuable tips, you can be confident in creating the perfect dish. Remember to choose the right apples, prepare them well, select the right goats cheese, use the right herbs and spices, and be creative with additional ingredients. Finally, make sure to take the time to caramelizing the top of the dish to create the perfect balance of flavors and textures. With these tips in mind, you're sure to impress your friends and family with this delicious and unique dish.
