CHAI-SPICED APPLES
6 large granny smith apples
4 tablespoon(s) butter
1/3 cup(s) sugar
2 tablespoon(s) vanilla sugar (included in the gingerbread mix kit)
1 package(s) dove chocolate spiced chai tea
WHITE CHOCOLATE MOUSSE
3/4 cup(s) heavy cream
1/3 cup(s) milk
1 package(s) dove chocolate frosty white chocolate smoothie mix
DARK CHOCOLATE MOUSSE
3/4 cup(s) heavy cream
1 package(s) dove chocolate chocolate mousse mix
4 ounce(s) dove chocolate chef-series dark chocolate (2 bars)

Steps:

  • Preparing the cake 1. Preheat oven to 350°F. Grease a 9x11" pan or line with parchment paper for easy release. In a large bowl, use an electric mixer to beat together molasses, butter, egg and water. 2. Pour in the Gingerbread Mix, and continue mixing until batter is smooth. 3. Pour batter into prepared pan and bake for 28-30 minutes or until a skewer inserted in the center comes out almost clean. Cool and cut into small cubes. Set aside.
  • Preparing the apples 4. Peel, quarter and core apples. Cut into ¼" slices. In a saucepan over medium heat, simmer apples, butter, sugars, and Chai Tea until cooked and juicy, about 20 minutes. Set aside.
  • Preparing the mousses 5. White Chocolate Mousse: pour cream and milk into a mixing bowl. Begin to whip with an electric mixer while pouring in the Smoothie Mix. Whip until soft peaks form. Refrigerate until ready to use. 6. Dark Chocolate Mousse: prepare 1 batch according to instructions on the packet (using the heavy cream and Dark Chocolate).
  • Preparing the trifle 7. In the bottom of a trifle bowl, spoon a layer of Dark Chocolate Mousse, followed by a layer of the gingerbread cubes. Top with a layer of White Chocolate Mousse. Arrange half of the chai-spiced apples on the White Chocolate Mousse. Then repeat all layers again. For a professional finish, use your DCD Pastry Bag to pipe a decorative twist of White Chocolate Mousse on top.

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set., In a 2-qt. serving bowl, layer half of the cake cubes and pudding. Steps:

  • In a large skillet, melt butter over medium heat. Stir in the apples, walnuts, brown sugar and 1/2 teaspoon apple pie spice. Cook and stir for 8-10 minutes or until apples are tender. , In a large bowl, beat cream cheese until smooth. Beat in 1/2 cup caramel topping and remaining apple pie spice. Fold in 2 cups whipped topping. , In a 3-1/2-qt. trifle bowl or glass serving bowl, layer a third of the cake cubes, cream cheese mixture and apple mixture. Repeat layers twice. Garnish with remaining whipped topping and drizzle with remaining caramel topping. Sprinkle with additional apple pie spice if desired. Cover and refrigerate for at least 1 hour before serving.

1 pkg. (14.5 oz.) gingerbread mix
2 pkg. (3.4 oz. each) JELL-O Butterscotch Flavor Instant Pudding
1 tsp. each ground cinnamon and ground ginger
1/4 tsp. ground nutmeg
3 cups cold milk
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (4 oz.) BAKER'S White Chocolate
6 gingerbread men cookies (3 inch)
1/2 cup JET-PUFFED GINGERBREAD MALLOWS Marshmallows

Steps:

  • Heat oven to 350°F.
  • Prepare gingerbread batter as directed on package; spoon into 12 muffin pan cups sprayed with cooking spray.
  • Bake 25 min. or until toothpick inserted in centers comes out clean. Cool in pan 10 min. Remove to wire rack; cool completely.
  • Meanwhile, beat pudding mixes, spices and milk in medium bowl with whisk 2 min. Stir in 1 cup COOL WHIP. Refrigerate until ready to use.
  • Melt chocolate as directed on package. Cut cupcakes horizontally in half. Reserve bottom halves of cupcakes for next step. Spoon melted chocolate into piping bag; use to pipe some of the chocolate into swirl pattern on cupcake tops as shown in photo. Decorate gingerbread cookies and marshmallows with remaining melted chocolate as desired. Refrigerate decorated cupcake tops, cookies and marshmallows until chocolate is firm.
  • Cut reserved cupcake bottoms into quarters; place half in trifle bowl. Stand single layer of cupcake tops, decorated sides out, along side of trifle bowl. (Depending on size of trifle bowl, some cupcake tops might not fit. Cut into quarters and reserve them for next step.)
  • Spoon pudding mixture into trifle bowl; top with remaining cupcake bottoms and any unused cupcake tops. Top with remaining COOL WHIP, gingerbread cookies and marshmallows.

440 g plain flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1 teaspoon allspice
8 tablespoons unsalted butter (Softened)
12 tablespoons sugar
1 egg
5 ounces molasses
160 ml milk
3 lbs dessert apples (I use Granny Smiths)
1/2 cup water
2 cups cream
1 teaspoon vanilla extract
1 lb toasted nuts (Slivered Almonds or Finely Crushed Walnuts or Hazelnuts are nice!)

Steps:

  • Mix Flour, Baking Powder, Baking Soda, Ginger, and Allspice in bowl.
  • In separate bowl, beat butter and 4 Tablspoons Sugar until smooth.
  • In third bowl, Mix milk and Molasses together.
  • Mix third bowl into the Butter Mixture and then FOLD combined mixture into the Flour Mixture.
  • Pour into a pan (I use an 8" x 8" x 2") that is lined with Wax Paper.
  • Bake in oven at 350 F for about 35- 40 minutes.
  • Let stand for 5 minutes and remove the Gingerbread to a rack to cool.
  • Peel, core and dice apples in small pieces.
  • Put them into a pot with 4 Tablespoons of Sugar and 1/2 cup Water.
  • COVER and cook for about 5 minutes.
  • Remove lid and continue to stir continuously until mixture STARTS to thicken.
  • WHIP Cream and 4 Tablespoons of Sugar until it forms Peaks.
  • PLACE slices of Gingerbread, Applesauce on top and Whipped Cream on top of that in bowl and repeat in layers until bowl is full.
  • NOTE: ROUNDED Glass Bowl makes lovely presentation!
  • TOP with toasted nuts and CHILL for about an hour!
  • ENJOY!

3 Granny Smith apples - peeled, cored and chopped
¾ cup butter at room temperature
1 tablespoon honey
½ cup white sugar
½ cup packed brown sugar

2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon ground cloves
½ teaspoon ground ginger

½ cup milk

1 egg white

1 tablespoon brown sugar
½ cup butter, softened

Steps:

  • Melt 1/4 cup of butter in a large skillet over medium heat. Add the apples; cook and stir until tender. Set aside and allow to cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • In a large bowl, mix 3/4 cup of butter, honey, brown sugar and white sugar until light and fluffy using an electric mixer. Beat in the eggs one at a time, mixing each one until blended. Combine the flour, baking soda, cinnamon, pumpkin pie spice, cloves, ginger and salt; stir into the batter, alternating with the milk. Stir in the walnuts and cooked apples just until evenly distributed. Divide evenly between the prepared pans and spread evenly.
  • Bake the cake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool the cakes on a wire rack. Keep the oven on for the walnuts.
  • To make the candied walnuts for the top of the cake, whip the egg whites in a clean bowl until foamy. Stir in the brown sugar, cinnamon and walnuts. Spread the nuts out on a baking sheet.

85g coarse oatmeal
1 tsp ground ginger
100g golden caster sugar
3 Bramley apples (about 800g/1lb 12oz in total), peeled, cored and sliced into 2cm wedges)
2 balls ginger in syrup, 1 chopped, 1 slivered
700g pink rhubarb , trimmed and cut into thumb-length pieces
284ml and 142ml pots double cream
600ml pot ready-made vanilla custard
approx 300g/11oz ginger cake (shop bought), thickly sliced
1 tbsp ginger wine

Steps:

  • Heat the oatmeal, ground ginger and half the sugar in a non-stick frying pan until the sugar starts to caramelise and the oatmeal toasts, stirring often. Tip onto non-stick baking paper to cool, then break into crumbly nuggets. Make up to 2 days ahead and keep in an airtight container.
  • Put the apples in a large saucepan, then add the chopped ginger, 50ml water and remaining caster sugar. Bring to a simmer, then gently cook for about 7 mins, adding the rhubarb halfway through, until both are softened, but not mushy. Add more sugar to taste, if you like, then leave to cool. Make up to 1 day ahead and keep in the fridge.
  • Lightly whip the cream and fold half of it into the custard. Line the base of a large serving bowl with cake, sprinkle over the wine, then spoon over the fruit, draining off any excess juice. Add a layer of the oatmeal, cover with the custard, then finish with the rest of the cream, slivered ginger and oatmeal. Best assembled shortly before serving. Each element can be made the day before, then layered up when ready to eat.
