CARAMELIZED APPLE STUFFED CHICKEN BREAST WITH FONTINA AND BING CHERRIES

Caramelized Apple Stuffed Chicken Breast with Fontina and Bing Cherries image

Provided by Food Network

Categories     main-dish

Time 9h

Yield 8 servings

Number Of Ingredients 12

2 ounces red wine vinegar
3 ounces apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon dry mustard
4 teaspoons honey
7 ounces olive oil
8 chicken breasts, boneless and skinless
Salt and freshly ground black pepper
3 medium Fuji apples
1 ounce unsalted butter
6 1/2 ounces fontina cheese, shredded
6 1/2 ounces dried bing cherries, roughly chopped

Steps:

  • For the marinade: Place the red wine vinegar, apple cider vinegar, the mustards, and honey in a food processor. Turn it on and drizzle in the olive oil until fully incorporated (emulsified). Marinate the chicken breasts overnight in this mixture.
  • Preheat grill or grill pan on high. Remove chicken breasts from the marinade and transfer to a plate. Season them with salt and pepper. Mark the chicken breasts by grilling them only long enough to make grill marks and then rotating them about 45 degrees to make crosshatch marks. Do this on 1 side only. The chicken breasts should still be completely raw inside. Hold breasts in refrigerator until ready to stuff.
  • For the stuffing: Peel, core, and very roughly chop the apples. Melt the butter in a saute pan over medium/high heat and add the apples. Cook the apples for roughly 5 to 10 minutes or until they are deeply browned. Remove from heat and transfer to a mixing bowl. Add the fontina and cherries and mix. Season, to taste, with salt and pepper.
  • For the chicken: Preheat your oven to 400 degrees F. Cut a slit in the side of each breast (in the thicker part) about 1-inch wide, creating a pocket almost as large as the breast itself. Stuff the breasts with the apple stuffing mix ¿ cramming in as much as possible without ripping the breast. At this point the breasts are ready to bake and can either be held in the refrigerator for up to 24 hours or baked right away. When ready to bake, place on a baking sheet and bake for about 12 to 15 minutes or until an instant-read thermometer registers 155 degrees F in the thickest part of the breast.

Apple and almond stuffed chicken breasts recipes are a popular dish among those who love the combination of savory and sweet flavors. The dish involves stuffing chicken breasts with a mix of sautéed apples, almonds, and spices, which not only enhances the taste of the chicken but also makes it more nutritious. Many different variations of the recipe exist, with each variation incorporating additional ingredients to create unique flavors.

Preparation

Preparing apple and almond stuffed chicken breasts involves several steps. Firstly, one needs to prepare the stuffing mix by sautéing diced apples and almonds in a pan with some oil until they turn golden brown. One can also add cinnamon, nutmeg, and other spices to the mix to enhance the flavor further. Once the stuffing mix is ready, it is time to prepare the chicken breasts. Using a sharp knife, one needs to carefully cut a pocket into the chicken breasts without cutting through to the other side. The pocket is then filled with the stuffing mix and sealed using toothpicks or kitchen twine.

Cooking

Once the chicken breasts are stuffed and sealed, they can be cooked in several ways. One popular method is baking, where the breasts are placed in a preheated oven and baked until they are fully cooked, which may take around 30 minutes. Another method is pan-frying, where the breasts are cooked in a pan with some oil until they are golden brown on both sides. A third method is grilling, where the breasts are grilled on a preheated grill until they are fully cooked. Each method has its unique benefits, such as baking being a healthier option as it requires less oil, while pan-frying and grilling enhance the flavor and texture of the chicken.

Nutritional value

Apple and almond stuffed chicken breasts are not only delicious but also highly nutritious. Chicken breasts are a good source of lean protein, which is essential for muscle growth and repair. Almonds are rich in healthy fats, fiber, protein, vitamins, and minerals, which provide numerous health benefits such as reducing inflammation, boosting heart health, and improving digestion. Apples, on the other hand, are rich in fiber, antioxidants, vitamins, and minerals, which help in maintaining good health and preventing chronic diseases. The combination of these ingredients in apple and almond stuffed chicken breasts makes it a highly nutritious dish that is perfect for anyone looking to eat healthily.

Variations

While the traditional apple and almond stuffed chicken breasts recipe is delicious on its own, many variations of the recipe exist that incorporate additional ingredients to create unique flavors. For instance, some variations use cream cheese, cheddar cheese, or feta cheese in the stuffing mix to add a creamy texture and rich flavor. Others use bacon, ham, or prosciutto to wrap the chicken breasts, which not only holds the stuffing in place but also adds a smoky flavor to the dish. Some variations also add vegetables such as spinach, kale, or mushrooms to the stuffing mix, which not only enhance the nutritional value of the dish but also add different textures and flavors.

Serving suggestions

Apple and almond stuffed chicken breasts can be served with a variety of side dishes, depending on one's preferences. Some popular side dishes include roasted vegetables such as potatoes, carrots, or broccoli, which add a savory flavor and texture to the meal. Other options include green salads, quinoa, or brown rice, which provide additional nutrition and complement the flavors in the dish. A glass of white wine or a citrus-based cocktail such as a margarita or a mojito can also be served alongside the meal, which adds a refreshing flavor and is perfect for summer months.

Cooking can be an enjoyable and activity, especially when trying out new recipes that are both delicious and healthy. One such recipe is the apple and almond stuffed chicken breasts recipe. The recipe involves stuffing chicken breasts with a mixture of chopped almonds and apples, spices, and herbs, then baking until the chicken is cooked through. Here are some valuable tips to help you achieve the best results when making this recipe.

1. Choose the Right Chicken Breast

When making stuffed chicken breasts, it is essential to use the right type of chicken breast. Choose skinless, boneless chicken breasts that are uniform in size and thickness. Avoid using chicken breasts that are too thin, as they will overcook quickly or too thick because they will take longer to cook, and the filling may not cook through evenly. If your chicken breasts are too thick, you can butterfly them to create a pocket for your stuffing.

2. Make the Filling ahead of Time to Allow for Flavors to Marinate

To achieve the best-tasting stuffed chicken breasts, it is advisable to make the filling ahead of time, preferably the day before. This will allow the flavors to marinate and blend together, resulting in a delicious and well-seasoned stuffing.

3. Experiment with Different Types of Apples

The type of apple you use in your stuffing can have a significant impact on the final taste of your dish. Consider experimenting with different types of apple like Granny Smith, Braeburn or Honeycrisp, to find the one that best suits your taste buds. Certain apples like granny smith have a tart taste, which pairs well with sweet almond filling to create an excellent flavor combination.

4. Toast your Almonds Before Adding to your Filling

Before adding almonds to your filling, consider toasting them in a skillet over medium heat with a bit of oil for about 5 minutes or until they are golden brown. Toasting brings out the natural flavor of the almonds, giving your stuffing a delicious nutty taste.

5. Don't Overfill the Chicken Breast

Overfilling the chicken breasts can cause the stuffing to burst out of the chicken breasts. When stuffing the chicken, take care not to overstuff it. Start by making a small slit at the thickest part of the chicken breast and make the pocket from there. Once the filling is in, use toothpicks to secure the chicken breast.

6. Brush your Chicken Breasts with Olive Oil and Season

To make sure the chicken breasts turn out juicy and flavorful, it is important to brush them with olive oil and season them before baking. Brushing the chicken breasts with olive oil helps to keep the chicken moist while baking, and the seasoning adds flavor to the dish.

7. Use a Meat Thermometer to Check Doneness

Use a meat thermometer to check the internal temperature of your stuffed chicken breasts. The chicken is fully cooked if the internal temperature reaches 165°F. It is important to ensure that the stuffing also reads 165°F to make sure it is fully cooked through.

8. Rest the Chicken Before Serving

Once the chicken is cooked, it is essential to let it rest for about 5 minutes before serving. This resting period allows the juices to redistribute throughout the chicken, resulting in a tasty and moist chicken breast.
Conclusion
Apple and almond stuffed chicken breasts are a delicious and healthy meal option that can be enjoyed at any time. Follow the above valuable tips to achieve the best results when making this recipe. Remember to choose the right chicken breast, make the filling ahead of time, experiment with different types of apples, toast your almonds before adding to the filling, be cautious not to over-fill the chicken, brush with olive oil and seasoning, use a meat thermometer to check doneness, and rest your chicken before serving. With these tips, you are guaranteed a tasty and satisfying meal.
