CRISPY ALMOND CHICKEN WITH APPLE-FENNEL SALAD

Crispy Almond Chicken with Apple-Fennel Salad image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 12

1 1/2 cups panko breadcrumbs
1/2 cup almond flour
Grated zest of 1 lemon, plus 1 tablespoon lemon juice, plus wedges for serving
Kosher salt and freshly ground pepper
2 large eggs
8 thin-cut skinless, boneless chicken breasts (about 1 1/2 pounds)
1/3 cup plus 1 tablespoon olive oil, plus more as needed
4 cups mixed baby greens
1/2 bulb fennel, cored and thinly sliced
1 small crisp red apple, thinly sliced
1/2 cup roughly chopped fresh basil
1/2 small red onion, thinly sliced

Steps:

  • Combine the panko, almond flour, lemon zest and 1/2 teaspoon each salt and pepper in a shallow dish, using your fingers to evenly blend the zest into the crumbs. Lightly beat the eggs in a separate shallow dish and season with salt and pepper. Season the chicken with salt and pepper.
  • Heat about 1/3 cup olive oil in a large nonstick skillet over medium-high heat (it?s hot enough when a pinch of panko sizzles when it hits the oil). Working with 2 or 3 chicken breasts at a time, dip each piece in the beaten egg, letting the excess drip off, then press the chicken into the crumb mixture to coat. Add to the hot oil and cook until browned and cooked through, 1 1/2 to 2 minutes per side. Transfer to paper towels to drain. Reduce the heat if the chicken is browning too quickly and add more olive oil as needed between batches.
  • Toss the greens, fennel, apple, basil and red onion with the lemon juice and the remaining 1 tablespoon olive oil in a bowl; season with salt and pepper. Divide the chicken among plates and serve with the salad and lemon wedges.

Salads are an important part of a healthy diet, and what could be better than a delicious apple almond salad? Not only is it delicious, but it is loaded with vitamins and minerals that are essential for good health. However, making a good apple almond salad takes a bit of skill and knowledge. Here are some valuable tips that can help you create the perfect apple almond salad recipe.

1. Choose the Right Apples

When making an apple almond salad, choosing the right type of apple is critical. You want to choose an apple that is crisp, juicy, and has a slightly tart taste. Granny Smith apples are a popular choice for salads because they are firm and tart, which gives the salad a nice crunch. However, if you prefer a sweeter taste, you can use Honeycrisp or Gala apples.

2. Add Some Crunch

One of the best things about an apple almond salad is the crunch factor. Adding some chopped almonds or walnuts to your salad not only adds a crunchy texture, but also adds healthy fats and protein to your meal. You can also add some chopped celery or carrots to increase the crunch factor even more.

3. Balance the Flavors

An apple almond salad should be a balance of sweet and savory flavors. To achieve this, you can add some sweet ingredients like dried cranberries or raisins, and some savory ingredients like blue cheese or feta cheese. The dressing also plays a crucial role in balancing the flavors. A honey mustard dressing or a balsamic vinaigrette dressing goes well with an apple almond salad.

4. Mix Up the Greens

While lettuce is the go-to green for salads, an apple almond salad can benefit from mixing up the greens. Arugula, spinach, or even kale can be used to add some variety and flavor to your salad. You can mix and match different greens to get the flavor and texture that you desire.

5. Cut the Apples Right

A well-made apple almond salad requires the apples to be cut into the right size and shape. You want the apples to be thin enough to be easily eaten but not too thin that they lose their crunch. You also want to make sure that the apples are cut into uniform slices or cubes for a consistent flavor throughout the salad.

6. Let It Marinate

To get the most flavor out of your apple almond salad, you can let it sit in the refrigerator for a while to marinate. This allows the flavors to blend together, and the dressing to soak into the ingredients. This can make a big difference in the taste of your salad, and make it even more delicious.

7. Add Some Protein

If you want to make your apple almond salad more filling, you can add some protein to it. Grilled chicken or salmon goes well with an apple almond salad, and adds some extra flavor and nutrition. You can also add some hard-boiled eggs or chickpeas for a vegetarian option.

Conclusion

Making a good apple almond salad takes some skill and knowledge, but with these valuable tips, you can make the perfect salad every time. By choosing the right ingredients, balancing the flavors, and adding some extra crunch and protein, you can create a delicious and healthy meal that you will enjoy again and again. So, get creative and have fun with your apple almond salad recipe!
