Time 3h

Yield 6 to 8 servings

Number Of Ingredients 19

1 1/4 cups all-purpose flour, plus more for dusting
2 teaspoons granulated sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into 1/2-inch cubes
1 tablespoon apple cider vinegar
1/4 cup ice water, plus more if needed
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

Combine fruit pie with apple crumble to get the best of both - a warming dessert that slices neatly and delivers two textures of pastry

Provided by Barney Desmazery

Categories     Dessert

Time 1h30m

Number Of Ingredients 12

8 eating apples (Granny Smith or Braeburn work well)
50g golden caster sugar
½ tsp mixed spice
2 tbsp plain flour, plus extra for dusting
500g block shortcrust pastry
1 egg, beaten (optional)
clotted cream, custard or ice cream, to serve
50g plain flour
50g ground almonds
70g golden caster sugar
70g cold butter, cut into cubes
30g flaked almonds

Steps:

  • First, make the crumble. Tip the flour, ground almonds, sugar and a pinch of salt into a bowl, then rub in the butter with your fingers until the mix resembles breadcrumbs. Stir in the flaked almonds and chill until needed. Can be prepared up to two days ahead and chilled.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Peel, core quarter and slice the apples, then tip into a bowl with the sugar, mixed spice and flour. Toss well and set aside. Roll the pastry out on a lightly floured surface until it's large enough to line a 20-22cm pie dish. Line the dish with the pastry, then trim and crimp the edge. Alternatively, re-roll the pastry trimmings into an 80cm-long strip, then cut into three thin, long strips, and arrange into a 1cm-wide plait. Arrange the plait around the edge of the dish, and brush with some beaten egg.
  • Spoon the apples into the base, then scatter over the crumble. Bake on the hot tray for 35-40 mins until the topping is toasted and the pastry is deep golden. Leave to stand for 10 mins, then serve warm with cream, custard or ice cream.

PEACH PIE WITH ALMOND CRUMBLE TOPPING

Peach Pie with Almond Crumble Topping image

Provided by Food Network

Categories     dessert

Number Of Ingredients 12

Sweet dough for 1 crust pie
1 cup all-purpose bleached flour
3 tablespoons sugar
1/4 teaspoon freshly grated nutmeg
1/2 cup sliced almonds
6 tablespoons unsalted butter, melted
3 pounds firm, ripe, yellow fleshed free stone peaches, about 8 or 9 medium peaches
1/2 cup sugar
2 tablespoons all-purpose bleached flour
1/2 teaspoon almond extract
1/8 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter

Steps:

  • To make topping: Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds. Stir in butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2-inch crumbs. Set aside again while you prepare the filling.
  • Preheat oven to 400 degrees and set racks at middle level. Roll out bottom crust and arrange in 9-inch Pyrex plate.
  • To make filling: Peel the peaches by cutting a cross in the blossom end of each and dropping them three at a time into a pan of boiling water. Remove after 20 or 30 seconds with a slotted spoon or skimmer and drop them into a bowl of ice water. If the peaches are ripe, the skin will slip off easily. If it does not, remove the skin with a sharp stainless steel paring knife. (If you peel it with a knife, include an extra peach for what you have peeled away.) Hold each peeled peach gently in your left hand over a mixing bowl (if you are left handed reverse.) With a stainless steel paring knife make a cut through to the pit, from stem to blossom end. Make another cut about 3/4-inch to the right of the first one along the outside of the peach. Angle the knife blade back so the cuts meet at the pit. Twist the knife blade upward slightly as a wedge of peach will fall into the bowl. Continue in the same manner around the peach, cutting it into 8 to 10 wedges. Discard the pit and repeat with remaining peaches. Add remaining ingredients, except the butter, to the peaches and stir gently with a rubber spatula to combine. Pour filling into the prepared pastry shell and smooth. Dot with the butter.
  • Scatter the crumb topping evenly over the filling. Place pie on the bottom rack of the oven and bake for 15 minutes. Lower the temperature to 350 degrees and move pie to the middle rack. Bake another 30 minutes, or until the crust and crumble are a deep golden and the juices are just beginning to bubble up. Cool the pie on a rack and serve warm or room temperature.

Apple almond crumble pie recipe is a sweet and delicious dessert that is best served in autumn when apples are in season. The recipe is straightforward and easy to follow, making it an ideal dessert for anyone from beginner to advanced bakers. In this article, we will share valuable tips on how to make the perfect apple almond crumble pie recipe.

The Perfect Apple Pie Filling

The key to having a perfectly delicious apple almond crumble pie is to have the right apple filling. When choosing apples for your pie filling, it is best to select firm apples that will not turn to mush when baked. Some of the best apples to use for apple pie fillings include honeycrisp, Granny Smith, and Pink Lady. After selecting your apples, you need to prepare them properly. Peel, core, and slice the apples into thin wedges. To make sure the apples cook evenly, it is crucial to slice them thinly and uniformly. Moreover, make sure to toss the apple slices into lemon juice or apple cider vinegar to prevent them from oxidizing and turning brown. In addition, you should season the apples with cinnamon, nutmeg, and brown sugar to enhance the flavor. Mix the seasoning with the apples, and let it sit for about 20 minutes to allow the flavors to meld.

The Almond Crumble Topping

The almond crumble topping is a delicious contrast to the soft and tender apples. It is important to have a properly baked crumble topping that is neither too hard nor too soft. To make the perfect crumble topping, you need to use room temperature butter. It is best to take the butter out of the fridge a few hours before baking to ensure that it is at room temperature. To create the perfect crumble topping, you need to mix flour, sugar, cinnamon, and almond flour with the room temperature butter. Mix it all together until the mixture resembles coarse breadcrumbs. Sprinkle the crumble mixture over the top of the apple filling and bake.

The Pie Crust

The pie crust is an essential part of any pie recipe, and the apple almond crumble pie is no exception. The key to having a perfect pie crust is to use cold butter and water. Cut the butter into small pieces and place them in the freezer for about 15 minutes before making the crust. This will ensure that the butter is very cold, which is essential in creating a flaky crust. Moreover, you should add enough water to the flour mixture to form a ball of dough. The dough should not be too dry, or it will be difficult to work with. On the other hand, it should not be too wet, or the crust will be tough. Add water as needed, but be careful not to overwork the dough.

Baking

The baking process is another factor that determines the success of an apple almond crumble pie recipe. It is important to preheat the oven to 375°F (190°C) before baking the pie. It is also essential to bake the pie in the center of the oven to ensure even cooking. To prevent the crumble topping from browning too quickly, cover the top of the pie loosely with foil paper after about 30 minutes of baking. Leave the pie in the oven for about an hour or until the crust and the topping turn golden brown.

Serving

After baking the apple almond crumble pie, let it cool for about 30 minutes before serving. This will allow the pie to set and make it easier to slice. You can serve the pie with whipped cream or vanilla ice cream on top to make it even more delicious.

Conclusion

Apple almond crumble pie recipe is an all-time favorite dessert that is perfect for any occasion. By following the valuable tips provided in this article, you will be able to create a delicious and perfect apple almond crumble pie that everyone will love. Remember to choose the right apples, use a perfect crumble topping, make a flaky pie crust, bake at the right temperature, and serve with your favorite toppings.
