2 pounds lean ground beef
2 large eggs, lightly beaten
1 cup shredded part-skim mozzarella cheese
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons grated Parmesan cheese
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
SAUCE:
1 bottle (14 ounces) hot or regular ketchup
2 tablespoons cornstarch
1 jar (12 ounces) apple jelly
1 jar (12 ounces) currant jelly

Steps:

  • In a bowl, combine the first 12 ingredients. Shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. , Bake at 350° for 10-15 minutes; drain. Combine ketchup and cornstarch in roasting pan. Stir in jellies; add the meatballs. Cover and bake for 30 minutes.

This is easy and always a big hit at my get togethers, it's great with mini meatballs or Lil Smokies, to make it ever more easier purchase ready made frozen cooked small meatballs or you can make your own and cook them first, I use recipe#69173 see bottom of recipe for baking times --- this is great to take to a potluck :)

3 -5 lbs frozen cooked small meatballs or 3 -5 lbs Little Smokies sausages
1 (32 ounce) jar grape jelly
2 (12 ounce) jars chili sauce (I use Heinz Chili Sauce)
1 pinch cayenne pepper (optional)

Steps:

  • In a pot combine the grape jelly with the chili sauce; add in the meatballs and simmer for about 45 minutes uncovered or until the sauce has thickened.
  • If you are making my Parmesan meatball recipe use 2-1/2 to 3 pounds lean ground beef or use half beef and ground pork shape.
  • Shape into about 1-inch balls.
  • Place on a baking sheet.
  • Bake in a 350 degree F oven for 20-25 minutes or until cooked through.
  • Place in the prepared sauce.

1/4 cup packed brown sugar
1/4 cup ketchup
1/4 cup white vinegar
1/4 cup water
2 tablespoons Dijon-mayonnaise blend

Steps:

  • Drain pineapple, reserving juice. Place pineapple and 2 tablespoons juice in a large bowl (set the remaining juice aside for glaze). Add the egg, bread crumbs and pepper to pineapple. Crumble sausage and beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 450° for 12-15 minutes or until a thermometer reads 160°., Meanwhile, in a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs. Bring to a boil over medium heat. Reduce heat; cook and stir for 5-10 minutes or until heated through.

1/3 sec extra virgin olive oil cooking Spray
1/4 cup hoisin sauce

  • Spray pineapple slices with cooking spray and grill or pan brown, lightly brush both sides with hoisin sauce. Cut rings into bite size pieces about 1 " wide (just big enough for the meatballs to sit on top of).

Steps:

  • Preheat oven to 500 degrees.

1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cloves or 1/2 teaspoon allspice
2 lbs uncooked ground turkey
1 (16 ounce) can jellied cranberry sauce
1 cup bottled barbecue sauce

Steps:

  • Lightly coat a 15x10x1-inch baking pan with nonstick cooking spray; set aside. For meatballs, in a very large bowl, beat egg with a fork.
