SHREDDED CHICKEN AND CHEESE TAQUITOS
In an effort to avoid eating processed foods, I came up with this yummy shredded chicken taquito recipe. Serve with sour cream, salsa, guacamole, and green onions.

Steps:
- Place chicken in a single layer in the bottom of a large saucepan. Pour in cool water until chicken is covered by 1 inch. Bring to a boil over medium-high heat. Reduce heat to a simmer, cover, and cook until no longer pink in the center and the juices run clear, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a cutting board and shred meat with 2 forks when cool enough to handle. Discard poaching liquid.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Heat oil in a large skillet over medium heat; add onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add shredded chicken, olives, chiles, water, and taco seasoning; bring to a boil. Reduce heat to a simmer and cook for 10 minutes. Add Mexican cheese and stir until melted. Remove from heat.
- Warm tortillas on a griddle over medium-high heat until soft, about 10 seconds per side. Add chicken filling to each tortilla, roll up tightly, and place seam-side down on the prepared baking sheet.
- Bake in the preheated oven until edges are brown, about 30 minutes.

Rolled, corn tortillas with chicken, baked until crisp. Serve as an appetizer or side dish with salsa or serve as main course topping with lettuce, tomato, olives, sour cream, etc. I have also added chopped onion to the chicken mix.

- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
- Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.

I got this recipe from a home economics instructor when I was teaching in Oklahoma. I think it represents the Southwest because of its spicy flavor. It can be used as an appetizer before a Mexican meal or served as a snack.

- In large bowl, beat the cheese, butter, flour, salt and pepper on medium-low speed. Stir in cooked sausage. Form dough into 1-in. balls; place on ungreased baking sheet. , Bake at 400° for 15-20 minutes or until light golden brown. Serve warm or cold. Store in refrigerator or freezer.

BAKED SAUSAGE AND CHEESE BREAKFAST TAQUITOS
Steps:
- Gather the ingredients.
- Preheat the oven to 425 F.
- Line a baking sheet with aluminum foil or parchment paper .
- Add the olive oil and breakfast sausage to a skillet, brown the sausage until almost completely cooked. Add the red and green bell peppers and onion along with salt. Allow them peppers and onions cook for a few minutes, until they are slightly softened, stirring frequently.
- Beat the eggs in a bowl. Add the taco seasoning and hot sauce to the eggs.
- Gently pour the beaten eggs over the sausage and pepper mixture while the pan is on medium heat. Cook until eggs are soft, stirring occasionally to prevent sticking. Make sure not to overcook them!
- Microwave the corn tortillas for about 30 seconds or until they are soft and pliable. Make sure the tortillas are fresh so they will not crack when you roll them.
- Divide the filling between the tortillas. Sprinkle each with an equal amount of cheese. Roll each tortilla tightly and place seam side down on the baking sheet.
- Spray each tortilla lightly with cooking spray and add a sprinkle of salt.
- Bake for 10 to 15 minutes or until golden brown. Allow them to cool slightly.
- Serve with salsa and sour cream.

To make sausage cheese taquitos, you will need the following ingredients:- 1 pound of breakfast sausage
- 1 package of cream cheese, softened
- 1 cup of shredded cheddar cheese
- 1 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of paprika
- 1/2 teaspoon of cumin

- 12-14 corn tortillas

Preparation
To make sausage cheese taquitos, follow these simple steps:- In a skillet, cook the breakfast sausage until browned and cooked through. Drain any excess grease and set aside to cool.
