CHRISTMAS GLAZED APPLE CAKE (WEIHNACHTEN GEDECKTER APFELKUCHEN)

Christmas Glazed Apple Cake (Weihnachten Gedeckter Apfelkuchen) image

Covered Apple Cake (Gedeckter Apfelkuchen) is one of the cakes you're sure to find in almost every single bakery across Germany. To make it, you line a springform pan with a sweet short pastry, fill the crust with a chunky cooked apple filling studded with raisins and flavored with cinnamon and lemon, and then use the same crust dough to make a lid for the cake. I sometimes wonder if it isn't the precursor to America's apple pie, though in this cake, even after baking, the pastry remains soft and cakey thanks to the moist, cooked apple filling and a lemon glaze that is brushed on the top crust after baking.

Yield Makes 1 (9-inch/23cm) cake

Number Of Ingredients 12

2 1/3 cups, scooped and leveled, plus 1 tablespoon/300g all-purpose flour
3/4 cup/150g plus 1 tablespoon granulated sugar, divided
1 teaspoon baking powder
Pinch of salt
10 1/2 tablespoons/150g unsalted high-fat, European-style butter, softened
1 egg, at room temperature
6 large apples (2 pounds 10 ounces/1.2kg)
Juice of 1 lemon plus 2 teaspoons freshly squeezed lemon juice
1 1/4 teaspoon Lebkuchen Spice Mix
1 cup fresh cranberries
1/4 cup/60ml plus 2 teaspoons water
3/4 cup/75g confectioners' sugar

Steps:

  • Mix the flour, 3/4 cup granulated sugar, baking powder, and salt together in a large bowl. Cut the butter into cubes and add to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until it's no longer visible. Add the egg and knead until the dough is smooth. Wrap tightly in plastic wrap and refrigerate for at least 1 hour and up to 24 hours.
  • Peel, core, and quarter the apples. Cut them into slices 1/8 to 1/4 inch/3 to 6mm thick and put the slices in a large pot. Add the juice of 1 lemon along with the Lebkuchen Spice and the 1/4 cup/60ml of water. Cover the pot and bring to a simmer over medium heat, stirring occasionally. Cook the apples for 15 to 20 minutes, or until silky and relatively broken down. The apples should not turn completely to mush but still retain some shape. Take the pot off the heat and stir in the cranberries and the remaining 1 Tbsp granulated sugar.
  • Preheat the oven to 350°F/180°C. Line the bottom of a 9-inch/23cm springform pan with parchment paper. Take two-thirds of the dough and pat it evenly into the springform pan, forming a 1-inch-/2.5cm-high rim at the edges. Refrigerate the remaining dough. Prick the dough in the pan evenly all over with a fork. Line the dough with a sheet of aluminum foil and fill the pan with pie weights or dried beans. Bake for 20 to 30 minutes, or until the crust is starting to firm up but is not yet browning. Remove from the oven and carefully remove the aluminum foil and pie weights; maintain the oven temperature.
  • Scrape the apple mixture evenly into the par-baked shell and smooth the top. The apple filling should precisely fill the crust. Roll out the remaining one-third of the dough between two pieces of plastic wrap until just slightly larger than the circumference of the pan. Trim the edges of the circle and then gently transfer the circle to the top of the cake, laying it over the apple filling. Tuck in the top crust and cut off any excess. Cut 3 small slits in the top of the dough. Put the pan back in the oven and bake for 35 to 45 minutes, or until the top is golden brown and slightly puffed.
  • Remove the pan from the oven and let cool for 10 minutes while you prepare the glaze. Sieve the confectioners' sugar into a small bowl and whisk in the 2 teaspoons of lemon juice and the 2 teaspoons of water until smooth. Brush the glaze over the still-hot cake and then let the cake cool completely before serving. The cake will keep at room temperature, covered lightly with plastic wrap, for 2 to 3 days.

Apfelkuchen is a traditional German apple cake that originated in the 16th century. This beloved dessert is made with fresh apples, sugar, cinnamon, nutmeg, and other ingredients to create a deliciously moist and flavorful treat. While there are many variations of the recipe, the core elements remain the same, resulting in a dish that is both simple and satisfying. In this article, we will explore the history of Apfelkuchen, the different types of apple that can be used, and the various ways in which this cake can be prepared.

The History of Apfelkuchen

Originally, Apfelkuchen was a seasonal dessert served during German apple harvest season in the fall. The recipe was handed down through generations of German families, with each adding their special touch to the recipe. Over time, Apfelkuchen became a staple dessert for both everyday and special occasions, such as weddings, birthdays, and holidays like Christmas.

The Different Types of Apples Used

The choice of apple used is essential when making Apfelkuchen. Some of the commonly used varieties include Granny Smith, Honeycrisp, Gala, Braeburn, and Jonathan apples. Each of these types of apples has its unique flavor, texture, and sweetness level that can affect the taste of the cake. For example, Granny Smith apples have a tart taste that contrasts well with the sweet, sugary cake batter, while Honeycrisp apples give a crisp, juicy texture to the cake.

Preparation Techniques

The preparation of Apfelkuchen varies depending on the type of cake that one wants to make. Some bakers choose to dice the apples and mix them into the cake batter, while others layer the sliced apples on top of the cake batter before baking. Some recipes call for a crumbly topping made from butter, flour, and sugar that is sprinkled on top of the sliced apples before baking. Other variations of the recipe include adding raisins, a layer of custard, or even a scoop of vanilla ice cream on top of the cake after baking.
Using Seasonal Spices and Ingredients
The use of seasonal spices and ingredients is an essential part of making Apfelkuchen. During the fall harvest, bakers often use cinnamon, nutmeg, and cloves, which perfectly complement the sweetness of the apples. This gives the cake a warm, seasonal flavor that is perfect for cozy nights in. Other popular ingredients include vanilla extract, lemon zest, and brown sugar, which add depth and complexity to the cake's flavor.
Vegan and Gluten-Free Versions of the Recipe
For those who follow a vegan or gluten-free diet, there are many options for making a delicious Apfelkuchen. Plant-based milk, such as almond or soy milk, can be substituted for dairy milk, while vegan butter or coconut oil can replace traditional butter. For a gluten-free version of the cake, bakers use a blend of gluten-free flours, such as almond flour, coconut flour, and cornstarch, which gives the cake a light, fluffy texture.

Conclusion

In conclusion, Apfelkuchen is a traditional German apple cake that has been enjoyed for centuries. It is a versatile dessert that can be customized to suit different tastes and preferences. The choice of apples used, preparation techniques, and seasonal spices are all essential parts of making a delicious Apfelkuchen. Whether vegan or gluten-free, this cake is a delightful treat that can be enjoyed on any occasion.

Tips for Making the Perfect Apfelkuchen Apple Cake Recipe

Apple cake, or Apfelkuchen in German, is a delicious dessert that is enjoyed all over the world. The cake is made with fresh apples and a blend of spices, resulting in a moist and flavorful dessert that everyone loves. There are several tips that one can follow to make a perfect apfelkuchen apple cake recipe, including:
1. Choose the Right Apples
The first and most critical tip for making a perfect apfelkuchen is choosing the right apples. Not all apples are suitable for baking because some tend to become mushy or fall apart during the baking process. Therefore, it is essential to choose firm, crisp, and tart apples like Granny Smith, Honeycrisp, or Braeburn. These types of apples hold up well during baking and infuse the cake with a tangy flavor.
2. Use Freshly Squeezed Lemon Juice
Lemon juice is an essential ingredient in apple cake baking because it helps prevent the apples from browning and brings out their natural flavor. Therefore, it is crucial to use freshly squeezed lemon juice instead of bottled lemon juice, which may contain preservatives or artificial flavors. Freshly squeezed lemon juice also adds a tangy flavor to the cake, which complements the sweetness of the apples.
3. Don’t Overmix the Batter
Overmixing the batter may result in a dense and tough cake, which is not desirable for an apfelkuchen. Therefore, it is essential to mix the batter just enough to combine the ingredients. It is also advisable to mix the wet and dry ingredients separately and then combine them only when ready. Furthermore, folding the grated apples gently into the batter ensures that they are evenly distributed without breaking or becoming mushy.
4. Add a Crunchy Top
Adding a crunchy top to your apfelkuchen cake by sprinkling some nuts or streusel on top not only enhances the texture of the cake but also adds flavor. Some good options for crunchy toppings include sliced almonds, chopped pecans, or streusel made of butter, flour, brown sugar, and cinnamon. A crunchy top provides a nice contrast to the moist and tender cake and makes it more visually appealing.
5. Season with Warm Spices
Adding warm spices to your apfelkuchen cake enhances the flavor profile and makes it more delicious. Some of the commonly used spices for apple cake include cinnamon, nutmeg, allspice, and ginger. These spices add warmth and depth to the cake, making it more flavorful and aromatic. When using spices, it is important to use them in moderation to avoid overpowering the natural flavor of the apples.
6. Use High-Quality Ingredients
The quality of the ingredients used in baking has a significant impact on the final outcome of the cake. Therefore, it is important to use high-quality ingredients, especially butter, sugar, and flour. Unsalted butter adds richness to the cake and allows the other flavors to come through. On the other hand, using white granulated sugar or brown sugar adds the right sweetness and texture to the cake. Using high-quality flour, such as all-purpose flour, ensures that the cake has the right texture and structure.
7. Let the Cake Cool Completely Before Serving
The final tip for making a perfect apfelkuchen apple cake recipe is to let the cake cool completely before serving. After taking the cake out of the oven, it is essential to let it cool in the pan for some time before removing it from the pan. Then, let the cake cool on a wire rack for at least 30 minutes before slicing and serving. Allowing the cake to cool down enhances its flavors and texture, making it easier to slice and serve. In conclusion, the above tips will help you make a perfect apfelkuchen apple cake recipe that is moist, flavorful, and visually appealing. Remember to choose the right apples, use fresh lemon juice, fold in the grated apples gently, add a crunchy top, season with warm spices, use high-quality ingredients, and let the cake cool completely before serving. By following these tips, you can bake a delicious apple cake that will be a hit with your family and friends.
