2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.

2 tablespoons olive oil
2 shallots, chopped
2 pounds green beans, trimmed, cut into 1 1/2-inch pieces
Kosher salt and ground black pepper
1 cup heavy cream
6 sprigs fresh thyme, leaves only
1/2 lemon, zested and juiced
1 cup chicken broth
2 tablespoons sour cream

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the shallots and cook, stirring, until softened, about 1 minute. Add the green beans and salt and pepper to taste. Saute, stirring occasionally, until crisp tender, about 5 minutes. Transfer to a serving dish and set aside.
  • Return the skillet to medium-high heat and add the cream, thyme, lemon juice and zest, and chicken broth. Bring to a simmer and let reduce by half, until thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste.
  • Pour the dressing over the green beans to serve.

1 small onion
1 stick butter
fresh green beans
1 c sour cream
1/4 c flour
1 1/2 tsp salt
1/2 tsp pepper
1 c grated cheddar cheese
1 c bread crumbs

Steps:

  • 1. Cut very tips off of fresh green beans. (**You can cut beans in half at this point if you wish; i prefer to leave them whole.) Cook in large pot of boiling, salted water until tender, about 15 minutes. Drain beans and return to pot.
  • 2. Cut onion into thin slices. Saute onion in 1/2 stick butter (or margarine). Add onion and butter to pot with green beans. In same pot, combine sour cream, flour and seasonings; mix lightly.
  • 3. Pour into greased casserole. Sprinkle with grated cheese. Melt remaining 1/2 stick butter, toss with crumbs. Pour over casserole.
  • 4. Bake at 350, uncovered, for 25 minutes.

  • 1. NOTE: If using fresh green beans cook in a small amount of boiling water long enough to bring them to the tender-crisp stage. Drain and use as other beans in the following recipe.

8 ounces sliced mushrooms
1/4 cup butter
2 (10 ounce) packages green beans
1 cup sour cream
1 (5 ounce) package dry onion soup mix
salt and pepper, to taste
1 cup shredded cheese (any kind you like)
1 cup breadcrumbs

Steps:

  • Pre heat oven to 350.
  • Saute' onions and mushrooms in butter.
  • In a bowl combine beans, sour cream, onion soup mix, salt& pepper.

  • Pour into a greased 2 quart casserole.

2 tablespoons onions, finely chopped
1/2 cup sour cream or 1/2 cup plain yogurt, at room temperature
1 1/2 teaspoons paprika

  • Bring about 2 cm of lightly salted water to the boil in a medium-size saucepan. Add the trimmed beans and cook, covered, for 8 minutes or until crisp-tender. Drain in a colander.
