2 lb lean ground beef
1 6 ounce package of stove top chicken stuffing mix
1 c water
2 eggs beaten
2 tsp chili powder
1 c thick and chunky salsa ( divided )
1 c shredded cheddar jack cheese
1/2 c corn
1 c barbecue sauce ( any flavor )

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Mix all the ingredients except the bbq sauce, cheese and 1/2 cup of the salsa.
  • 3. Shape into an oval loaf and place in a 9 x 13 baking dish. Top with bbq sauce and remaining salsa.
  • 4. Bake 1 hour. Top with the cheese and bake for 5 more minutes until cheese is melted.

Steps:

  • In a large bowl, combine first six ingredients. Crumble beef over mixture and mix well (mixture will be moist).
  • Shape into a round loaf and place in a greased loaf pan. Combine remaining ingredients and spread over top of meatloaf.
  • Bake in 350F oven for 1 hour.

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker.
