I will be honest, my family has never been a big fan of meatloaf. Sometimes you have to be creative and use different spices and ingredients to make something plain stand out. So this is my spin on meatloaf and although my family isn't a big fan of meatloaf, this recipe is one they actually like!

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Mix all the ingredients except the bbq sauce, cheese and 1/2 cup of the salsa.
- 3. Shape into an oval loaf and place in a 9 x 13 baking dish. Top with bbq sauce and remaining salsa.
- 4. Bake 1 hour. Top with the cheese and bake for 5 more minutes until cheese is melted.

- Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. - Grate potato and onion using a box grater. Heat a large frying pan with 2 tablespoons olive oil.
