CHEF JOHN'S ANTIPASTO PASTA SALAD

Chef John's Antipasto Pasta Salad image

An antipasto is a cold platter of meat, cheese, and vegetables which is served at the start of a meal before the pasta and other courses, but to save some time, I thought we'd add the pasta right into the antipasto to turn into a complete meal all by itself. You could serve this as a side dish, but with a hunk of crusty bread and a glass of wine, I'm not sure what else you'd need. Top with more parsley before serving.

Categories     One Dish Meal

Time 5h

Yield 6 , 6 serving(s)

Number Of Ingredients 16

1 lb fresh tuna fillet
salt and pepper
6 garlic cloves, smashed
2 -3 sprigs fresh oregano
2 -3 sprigs fresh marjoram
1/2 lb green beans, stems removed
1 1/2 lbs ripe tomatoes, cut into wedges (6 small tomatoes)
5 eggs, hard-boiled, peeled and cut in half
1 bunch fresh Baby Spinach
1/4 lb olive, pitted
1/4 cup champagne vinegar
1 teaspoon Dijon mustard
2 lemons, juice and zest of
4 garlic cloves, minced
salt and pepper
1/2 cup olive oil, from the baked tuna

Steps:

  • Preheat the oven to 200 degrees F.
  • Place the tuna in a covered baking dish that is just large enough to hold it in one layer.
  • Sprinkle generously with salt, pepper and toss with the garlic, oregano and marjoram.
  • Add enough olive oil to completely cover the tuna.
  • Cover the baking dish and cook until the tuna is thoroughly cooked and flakes easily, about 3 to 4 hours. The time will depend on the thickness of your tuna. You will know that it is done when it flakes easily and the fillets feel firm from the edges all the way to the center.
  • Remove the tuna from the baking dish and place in the center of the platter you are going to serve it on. (Do not throw away the olive oil! Use it for home made salad dressings, pastas, white bean salads and/or casseroles. It is delicious. And you will need 1/2 cup of it to make this recipe).
  • For the Vinaigrette:.
  • Combine the champagne vinegar, Dijon mustard, lemon zest, lemon juice, minced garlic, salt and pepper. Whisk in the tuna flavored olive oil until emulsified.
  • For the Salad Ingredients:.
  • Blanch the green beans in a large pot of boiling salted water for 7 minutes. Drain and immerse in a bowl of ice water. Drain and set aside.
  • Surround the tuna with the spinach. Place the potatoes, green beans, tomatoes, eggs and olives in a pretty arrangement on top of the spinach. Drizzle some vinaigrette over the tuna and vegetables (except the potatoes)and serve the rest in a pitcher or gravy boat on the side.
  • Enjoy!

ANTIPASTO PASTA SALAD, FROM COOK'S COUNTRY RECIPE - (4.2/5)

Antipasto Pasta Salad, from Cook's Country Recipe - (4.2/5) image

Provided by Foodiewife

Number Of Ingredients 15

8 ounces sliced pepperoni , cut into 1/4-inch strips
8 ounces soppressata or salami, halved and cut into 1/4-inch strips
10 tablespoons red wine vinegar, divided
6 tablespoons extra virgin olive oil
3 tablespoons mayonnaise
1 jar pepperoncini (12-ounce), drained, (2 tablespoons juice reserved), stemmed, and chopped coarse
4 garlic cloves , minced
1/4 teaspoon red pepper flakes
Salt and pepper
1 pound fusilli or campanelle
1 pound white mushrooms , quartered
1 cup shredded provolone cheese , aged
12 ounces roasted red peppers , drained, patted dry, and chopped coarse
1 cup chopped fresh basil
Cook's Country also liked the addition of 1 cup chopped, pitted kalamata olives or 1 cup jarred artichokes, drained and quartered. Use any curly-shaped pasta for this recipe.

Steps:

  • 1. Place one paper towel on microwave-safe plate. Arrange pepperoni in single layer on paper towel. Cover with another paper towel and layer sopresatta on towel. Top with another paper towel and microwave on highest power until meat begins to render fat, about 1 minute. Set meat aside. 2. Whisk 5 tablespoons vinegar (1/2 of the 10 tablespoons in the ingredient listing), olive oil, mayonnaise, pepperoncini juice, garlic, red pepper flakes, 1/2 teaspoon salt, and 1/2 teaspoon pepper in medium bowl. 3. Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and pasta and cook until al dente. Drain pasta, return to pot, and toss with 1/2 cup dressing and remaining vinegar. Adjust seasonings, spread dressed pasta on rimmed baking sheet, and refrigerate until chilled, about 30 minutes. 4. Meanwhile, bring remaining dressing to simmer in large skillet over medium-high heat. Add mushrooms and cook until they release their juices and are lightly browned, about 8 minutes. Transfer to large bowl and cool. 5. Add meat, provolone, roasted red peppers, chopped pepperoncini, basil, and cooled pasta to mushrooms and toss well. Season with salt and pepper. Serve at room temperature. Salad can be refrigerated for up to 3 days. NOTE: We loved this salad, but thought it tasted best eaten the same day it was made. The mushrooms are amazing, and I would double them, or even make just the mushrooms as a great appetizer/snack.

Antipasto salad is a traditional Italian appetizer that is popularly served before the main course of a meal. The word antipasto means "before the meal" in Italian, and the salad is made up of a variety of cured meats, cheeses, vegetables, olives, and other ingredients. The combination of these ingredients results in a flavorful and satisfying salad that can be served as a light meal or as a refreshing side dish.

Ingredients

The ingredients used in an antipasto salad can vary widely depending on personal preference, regional influences, and the occasion for which it is being prepared. However, most antipasto salads typically include some combination of the following:
Cured Meats:
Antipasto salad is traditionally made with a variety of cured meats, such as salami, prosciutto, pepperoni, and ham. These meats are thinly sliced and added to the salad to provide a rich and savory flavor.
Cheeses:
Another important component of antipasto salad is cheese. Common options include mozzarella, provolone, and Parmesan. The cheese can be sliced, diced, or shredded and added to the salad to provide a creamy texture and a tangy taste.
Vegetables:
Antipasto salads also contain a variety of vegetables, such as tomatoes, roasted peppers, artichoke hearts, and marinated mushrooms. These vegetables add a fresh and crunchy texture to the salad and are layered on top of the meats and cheeses.
Olives:
Olives are a staple ingredient in antipasto salad recipes. Common types include black olives, green olives, and kalamata olives. They add a salty and briny flavor to the salad and are a perfect compliment to the other ingredients.
Dressing:
The dressing used in an antipasto salad can vary depending on the recipe. Many traditional recipes call for a simple vinaigrette made with olive oil, red wine vinegar, and Italian herbs. Other recipes may call for a creamy dressing made with mayonnaise, sour cream, or yogurt.

Preparation Methods

Antipasto salad can be prepared using a variety of methods. Some recipes call for the ingredients to be arranged in a decorative pattern on a platter, while others call for the ingredients to be mixed together in a bowl. Some of the most common preparation methods include the following:
Layered:
One of the most popular preparation methods is to create a layered antipasto salad. This involves arranging the ingredients in a glass bowl or trifle dish in a decorative pattern. The meats and cheeses are layered on the bottom, followed by the vegetables and olives. The dressing is then poured over the top and the salad is chilled for several hours before serving.
Mixed:
Another common preparation method is to mix all of the ingredients together in a large bowl. This method is less decorative but still results in a delicious and satisfying salad. The ingredients are tossed together with the dressing and then chilled before serving.
Skewered:
For a fun and unique presentation, some antipasto salads are prepared on skewers. The meats, cheeses, vegetables, and olives are threaded onto small skewers and then arranged on a platter. The dressing is served on the side for dipping.

Variations

While traditional antipasto salad recipes contain specific ingredients such as cured meats, cheeses, and olives, there are many variations of the salad that incorporate different ingredients and flavors. Some popular antipasto salad variations include:
Vegetarian:
For those who do not eat meat, a vegetarian antipasto salad can be made using a variety of vegetables and cheeses. Grilled eggplant, zucchini, and portobello mushrooms can be used in place of the meat, and tofu or feta cheese can be substituted for the traditional cheeses.
Seafood:
Another popular variation is the seafood antipasto salad, which incorporates shrimp, crab, calamari, and other seafood into the salad. This version of the salad is perfect for summer gatherings and is often served cold with a lemon vinaigrette dressing.
Mediterranean:
Adding flavors and ingredients from Mediterranean cuisine can give an antipasto salad a delicious and unique twist. Adding hummus, falafel, and tzatziki sauce can bring a fresh spin to the traditional Italian ingredients.

Overall, antipasto salad is a delicious and versatile dish that can be enjoyed by anyone. Antipasto salad is a delicious, colorful and nutritious dish with Mediterranean origins. It is a combination of various ingredients including cured meats, cheeses, olives, vegetables, and herbs. While there are many antipasto salad recipes available, there are some valuable tips that you should keep in mind when making this popular Italian appetizer. Below are some tips to help you make the perfect antipasto salad.

Tip #1: Choose high-quality ingredients

The key to making an excellent antipasto salad is to use high-quality ingredients. You should choose cured meats, such as prosciutto, salami, and capicola, that are flavorful and not too salty. The cheeses you use should also be of good quality and should complement the meats. Some good options include fresh mozzarella, parmesan, and gorgonzola. For the vegetables, you should choose fresh and colorful options such as cherry tomatoes, bell peppers, artichokes, and sun-dried tomatoes. Olives are also an essential part of antipasto salad, so choose a variety of pitted olives, such as Kalamata or green olives, to add some extra flavor.

Tip #2: Cut ingredients into small pieces

When making antipasto salad, it is essential to cut all the ingredients into small, bite-sized pieces. This will not only make it easier to eat, but it will also help to distribute the flavors evenly throughout the salad. No one wants a giant chunk of prosciutto in their first bite! So, take your time and chop all the ingredients into small pieces. For example, you should dice the salami, cube the cheese, and slice the peppers into thin strips. This will also help make the salad visually appealing.

Tip #3: Use a variety of textures

When making antipasto salad, it is also important to consider the textures of the ingredients. You don't want everything to be soft and mushy; you need some crunch and resistance to balance the textures. One way to achieve this is to add some pickled vegetables, like peppers, onions, or giardiniera. They add a tangy flavor and a nice crunch. You can also add some nuts, like pine nuts or almonds, to add a different kind of texture.

Tip #4: Season the salad properly

The dressing is a crucial part of an antipasto salad. It should be light and refreshing and not overpower the flavors of the ingredients. You can use a simple dressing of extra-virgin olive oil, balsamic vinegar, salt, and pepper. Some recipes also call for lemon juice, honey, or Dijon mustard. You should also add some fresh herbs, like basil, parsley, or oregano, to boost the flavors. Mix everything together and taste it before adding it to the salad. Remember that the cured meats and cheeses are already salty, so you should be careful with the seasoning.

Tip #5: Let the salad marinate

An antipasto salad should be made a few hours before serving, to give the flavors a chance to marinate. Once you have mixed all the ingredients together, cover the bowl with plastic wrap and put it in the refrigerator. This will allow the flavors to meld together, and the dressing will soak into the veggies and meats, making them even more flavorful. You can also make the salad a day in advance, but keep in mind that the longer it sits, the softer the vegetables will become.

Tip #6: Serve with bread or crackers

A great way to enjoy antipasto salad is with some toasted bread or crackers. You can serve the salad on a platter with some sliced crusty bread, or you can serve it in individual bowls with some crackers on the side. The bread or crackers will provide some additional texture and will make the salad more filling. You can also add some hummus or a creamy dip on the side to add even more flavor to the dish.

Conclusion

In conclusion, antipasto salad is a delicious and healthy dish that can be enjoyed with family and friends. By using high-quality ingredients, cutting them into small pieces, using a variety of textures, seasoning the salad properly, letting it marinate, and serving it with bread or crackers, you can make the perfect antipasto salad. Remember that you can customize the dish to your liking by adding or subtracting ingredients based on your preferences. So, try out some of these tips and make your own unique antipasto salad!
