12 ounces whole-grain penne
1 tablespoon olive oil
3 ounces soppressata or salami, cut into 1/2-inch chunks
One 14-ounce can artichoke hearts, strained and quartered
6 stuffed Spanish queen olives, halved, plus 2 tablespoons brine
One 14-ounce can no-salt-added diced tomatoes
4 to 5 fresh basil leaves, plus more for garnish
1/2 cup of 1/2-inch chunks fresh mozzarella

Steps:

  • Bring a medium pot of water to a boil, add the pasta and cook according to package instructions; drain, reserving 1/2 cup of the pasta water. Return the pasta to the pot.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the soppressata and cook, stirring, until blistered and the oil turns reddish, about 3 minutes. Add the artichoke hearts and olives and stir to coat. Add the tomatoes, the reserved pasta water, basil leaves and 2 tablespoons of olive brine. Bring to a simmer and cook until most of the water evaporates and the sauce thickens slightly, 8 to 10 minutes.
  • Add the sauce and mozzarella to the pasta in the pot and stir to combine. Divide among 4 bowls and garnish with more basil.

1/4 lemon
1/4 cup panko (Japanese breadcrumbs)

Steps:

  • Preheat oven to 425°F. Drain anchovies and finely chop. Smash, alternating between chopping and mashing with the side of the chef's knife, until a thick smooth paste forms. Mix with 4 Tbsp. oil in a large bowl. Toss in cauliflower; season very lightly with salt and pepper. Spread out on a rimmed baking sheet. Toss carrots, oregano, and 2 Tbsp. oil on another rimmed baking sheet; season with salt and pepper. Place carrots on upper rack and cauliflower below and roast, tossing halfway through, until carrots are browned and crisp-tender, 14-18 minutes. Remove carrots from oven and grate lemon zest over. Move cauliflower to upper rack and continue to roast, tossing occasionally, until browned all over and tender, 15-20 minutes longer.
  • Meanwhile, heat 1 Tbsp. oil in a small skillet over medium. Cook panko, stirring, until golden brown. Season lightly with salt and transfer to paper towels to drain.Just before serving, drizzle carrots with oil and toss cauliflower with breadcrumbs.

  • Cauliflower and carrots can be roasted 3 days ahead. Let cool; cover and chill. Bring to room temperature before serving.

2 garlic cloves
1 small shallot, halved
1 cup pitted olives in brine, drained
1 cup fresh Italian parsley
6 tablespoons fresh oregano leaves
1 lb ziti pasta
4 ounces spicy salami, 1/8 in-thick-slices, cut into matchstick, size strips
1 cup coarsely grated parmesan cheese

Steps:

  • Char broil peppers over pen flame on gas stove or broil in oven.
  • Put peppers in a paper bag and cool completely, then peel, stem, and seed the peppers.
  • Cut peppers into 1/4 in wide strips.
  • Chop garlic and shallot coarsely.
  • Add olives, parsley, olive oil, and oregano and chop coarsely. Season to taste with salt and pepper.
  • Cook pasta in large pot of boiling salted water until al dente'. Drain.
  • Return pasta to pot and mix in all ingredients (toss to combine.).
