Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 25m

Number Of Ingredients 13

Coarse salt and ground pepper
1 medium zucchini, thinly sliced lengthwise
1 red bell pepper
1 loaf crusty bread (about 1 pound), sliced in half lengthwise
1 can (15.5 ounces) cannellini beans, rinsed and drained
1 garlic clove, roughly chopped
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1/2 pound mortadella, prosciutto, or thinly sliced deli ham
1/2 cup fresh parsley leaves
1 cup marinated artichoke hearts, drained and quartered or sliced
1/2 cup shaved Parmesan (1 ounce)
1/2 cup pepperoncini, drained and halved if large

Steps:

  • Sprinkle a double layer of paper towels with salt and place zucchini on top. Sprinkle with salt and roll up like a newspaper. Let sit 10 minutes to draw out excess liquid.
  • Over a low gas flame or under the broiler, roast bell pepper until skin is charred, 10 minutes, turning frequently. Place in a bowl and cover tightly with plastic wrap. Let sit 10 minutes. Rub bell pepper with a paper towel to remove skin, then core, discard seeds, and slice flesh into strips.
  • Pull out about 2 cups bread from inside loaf halves. In a food processor, combine beans, garlic, lemon juice, and oil and puree until smooth. Season with salt and pepper. Completely cover inside of both bread halves with an even layer of bean puree.
  • Arrange zucchini on bottom half of bread. Top with mortadella, parsley, roasted pepper, artichokes, Parmesan, and pepperoncini. Sandwich with top half of bread and wrap tightly in plastic. Place on a baking sheet in refrigerator. Place another baking sheet on top and weight with several heavy cans. Let sit at least 3 hours (or up to overnight). To serve, unwrap and cut into wedges with a serrated knife.

Time 20m

Yield 8 wedges

Number Of Ingredients 16

1 (12-inch) round or oval, crusty, chewy bread, such as Tuscan-style or a sesame semolina
1 (14 to 16-ounce) jar giardiniera*, drained
1/2 pound thinly sliced sharp provolone
1 (14 to 16-ounce) jar roasted red peppers, or 2 fresh roasted red bell peppers, see note
1 (14-ounce) can quartered artichoke hearts in water, drained
1 (12-ounce) bag mixed salad greens, any variety
1/2 cup (a couple of handfuls) fresh Italian flat leaf parsley leaves
15 to 20 leaves fresh basil, torn
1/3 pound sliced Genoa salami
1/3 pound sliced sweet soppressata
1/3 pound sliced cappacola (hot cured pork shoulder)
1/4 red onion, thinly sliced
1 vine-ripe tomato, thinly sliced
Extra-virgin olive oil, for drizzling
Coarse salt and pepper
8 hot or sweet pickled cherry peppers

Steps:

  • 8 (8,10 or 12-inch) bamboo party skewers
  • Serving suggestions: green and black olives, herb flavored potato chips
  • * Giardiniera is a Italian pickled salad of cauliflower, hot peppers and carrot found in International Foods aisle of market
  • Cut the top off of a large round or oval bread and hollow it out leaving a half inch rim and bottom to your bread. The loaf should resemble a bowl or deep pie shell.
  • Pulse the giardiniera in a food processor into a coarse relish. Spread and press relish into the bottom of your bread shell in an even layer. Top relish with a layer of provolone slices, red pepper pieces, and artichoke hearts. Press ingredients down as you work to make room in your shell for as much antipasto as possible.
  • Combine mixed greens, parsley, and basil in a bowl. Add a thin layer of greens on top of artichokes, and drizzle with oil. Layer in meats and remaining cheese. Top with a few more greens, onion and tomato slices, and another drizzle of oil. Season the top of filled shell with salt and pepper. Bag up remaining unused greens and herbs for tomorrow night's salad.
  • Replace top of bread and wrap your GIANT, drip-less antipasto stuffed pie for travel.
  • When you are ready to serve, spear hot or sweet cherry peppers on 10 or 12-inch bamboo skewers and space eight skewers equidistant around the bread. Cut bread into wedges, like a pie, and serve with olives and fancy potato chips.
  • Note: to roast peppers, split each red bell pepper down the center and gut them by scooping out seeds with a tug using your cupped hand. Place peppers skin-side-up under broiler preheated to high. Leave oven door ajar for steam to escape and blacken peppers entirely. Place charred peppers into a paper bag and roll the bag up tightly. Let stand 5 minutes until peppers are cool enough to handle and peel off charred skins.

Antipasti sandwich recipes are a popular dish that originated in Italy. Antipasto, meaning "before the meal," refers to a variety of appetizers typically served before the main course. Antipasti sandwiches are a twist on traditional antipasti, providing a hearty and filling meal that can be customized to suit personal tastes.

What are Antipasti Sandwiches?

Antipasti sandwiches typically consist of various cured meats, cheeses, vegetables and other toppings, all placed between two slices of bread. The bread can be any type of bread, but popular options include crusty Italian bread, ciabatta, or baguette. The key to a great antipasti sandwich is combining a variety of flavors and textures, ranging from salty to sweet, and soft to crunchy.

Ingredients

To make an antipasti sandwich, you'll need a few key ingredients:
Meats:
The most popular meats used in antipasti sandwiches are salami, prosciutto, and sliced ham. Other options can include mortadella, capicola, and pepperoni.
Cheese:
Cheese is a crucial component of any antipasti sandwich. Popular options include mozzarella, provolone, feta, and gorgonzola. You can also add other Italian cheeses like fontina, asiago, or pecorino.
Vegetables:
You can use any combination of vegetables for your antipasti sandwich. Tomatoes, roasted red peppers, artichokes, olives, and arugula are popular choices. Other options include mushrooms, grilled onions, or pickled vegetables.
Sauces and Spreads:
A variety of sauces and spreads can be used to add flavor to your antipasti sandwich. Pesto, olive tapenade, sun-dried tomato spread, and balsamic glaze are all great options.

Variations

Antipasti sandwiches are versatile enough to be customized to suit your preferences. Add or subtract ingredients as desired, but remember that balance is key. For example:
Vegetarian:
If you want to make a vegetarian antipasti sandwich, simply omit the meat and add more vegetables. You can use grilled portobello mushrooms, roasted eggplant, or marinated artichokes as the centerpiece of your sandwich.
Grilled:
Try grilling your antipasti sandwich for a warm and gooey twist. Brush olive oil on the bread and grill with the ingredients inside for a panini-style sandwich.
Open-Faced:
If you're watching your calorie intake, try making an open-faced antipasti sandwich. Simply place the ingredients on top of one slice of bread, then skip the second slice.

Antipasti sandwich recipes are a delicious and versatile way to enjoy a variety of different flavors and textures all in one bite. Whether you're making them for a party or just for a quick lunch, there are a few valuable tips that you should keep in mind in order to make the perfect antipasti sandwich. 1. Choose your bread wisely The first step to making a great antipasti sandwich is to choose the right bread. You want something that is sturdy enough to hold all of your ingredients without getting soggy, but also has a nice flavor and texture that will complement the other flavors in the sandwich. Some good options include sourdough, ciabatta, or whole grain bread with a nice crust on the outside. 2. Use a variety of ingredients The beauty of an antipasti sandwich is that it can include just about anything you want. You should aim to include a variety of different ingredients with different textures and flavors, such as cured meats, cheeses, marinated vegetables, and spreads. Aim for a balance of sweet, salty, tangy, and savory flavors to keep things interesting. 3. Don't skimp on the condiments While the ingredients are the star of the show in an antipasti sandwich, the condiments can really take things to the next level. You can use a variety of different spreads and sauces to add flavor and moisture to the sandwich. Some good options include pesto, aioli, tapenade, and hummus. 4. Cut your ingredients into bite-sized pieces One mistake that many people make when preparing an antipasti sandwich is to include ingredients that are too large or awkwardly shaped. This can make the sandwich difficult to eat and cause some of the ingredients to fall out. To avoid this, it's best to cut all of your ingredients into bite-sized pieces that will be easy to eat and stay in place. 5. Layer your ingredients strategically When assembling your sandwich, you want to make sure that each layer is evenly distributed and that each bite includes a variety of different flavors and textures. Start with a layer of bread, then add your condiment, followed by your meats, cheeses, and vegetables. Repeat this process until you've used all of your ingredients. 6. Use fresh herbs to add flavor Fresh herbs can be a great way to add some extra flavor to your antipasti sandwich. You can use herbs like basil, parsley, or thyme to add a bright, fresh flavor to your sandwich. Just be sure to chop the herbs finely and sprinkle them over the top of your sandwich before serving. 7. Let your sandwich sit before serving After you've assembled your sandwich, it's a good idea to let it sit for a few minutes before serving. This will allow the flavors to meld together and make the sandwich even more delicious. You can wrap the sandwich in plastic wrap or aluminum foil and let it sit for up to an hour before serving. 8. Experiment with different combinations One of the best things about antipasti sandwiches is that the possibilities are truly endless. You can experiment with different combinations of meats, cheeses, and vegetables to create your own unique and delicious sandwich. Don't be afraid to try new things and see what works best for you. 9. Serve with a side salad Antipasti sandwiches can be quite filling, so it's a good idea to serve them with a light side salad to balance things out. A simple salad of mixed greens with a light vinaigrette can be the perfect accompaniment to a hearty sandwich. 10. Enjoy with a glass of wine Finally, no antipasti sandwich is complete without a glass of wine to wash it down. You can choose a red or white wine that complements the flavors in your sandwich, such as a crisp Pinot Grigio or a full-bodied Chianti. Just be sure to enjoy responsibly!
