Time 40m

Yield 4 servings

Number Of Ingredients 12

3 slices bacon, diced
1 small onion, diced
2 to 3 large sprigs thyme, plus 1 tablespoon chopped leaves
1 15-ounce can cannellini beans, drained and rinsed
1 1/4 cups low-sodium chicken broth
1/2 head Napa cabbage, roughly chopped
Kosher salt and freshly ground pepper
2 pinches of red pepper flakes
4 boneless pork chops (1/2 inch thick; 1 to 1 1/2 pounds total)
2 tablespoons all-purpose flour
1 12-ounce bottle medium-dark beer
1 tablespoon unsalted butter

Steps:

  • Cook the bacon in a large skillet over medium heat until the fat renders and the bacon is crisp, about 6 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Pour off all but 1 tablespoon of the bacon fat into a small bowl and reserve. Add the onion and thyme sprigs to the skillet and cook until the onion is softened, about 5 minutes. Add the beans and 3/4 cup chicken broth and cook until the beans are tender and most of the broth evaporates, about 5 minutes. Add the cabbage and cook until wilted. Season with salt, pepper and a pinch of red pepper flakes.
  • Rub the pork chops with salt, pepper and the chopped thyme, then coat with the flour. Heat 1 tablespoon of the reserved bacon fat in a separate skillet over medium-high heat. Add the pork chops and cook until golden brown, 2 to 3 minutes per side. Remove to a plate. Add the beer and remaining 1/2 cup chicken broth to the skillet and scrape up any browned bits from the bottom of the pan; bring to a simmer. Return the pork to the skillet, reduce the heat to medium low and loosely cover. Cook until the pork is cooked through, 5 to 7 minutes. Remove the pork to a plate and let rest.
  • Continue cooking the braising liquid until reduced and thickened, about 6 minutes; swirl in the butter. Divide the bean-cabbage mixture among plates. Slice the pork and add to the plates. Top with the pan sauce, bacon and another pinch of red pepper flakes.

PORK CHOPS WITH BEER SAUERKRAUT

Pork Chops with Beer Sauerkraut image

This is the smell of Cleveland in late fall. Show up at the Municipal Parking Lot to tailgate before any home football game and you'll see a million variations on the theme of pork, kraut, and beer. The hoppy beer-I like Commodore Perry IPA from Great Lakes Brewing- deglazes the pan and makes a great sauce for the chops. Go Browns!

Provided by Michael Symon : Food Network

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 11

1 teaspoon paprika
1/2 teaspoon coriander seeds, toasted and ground
Kosher salt and freshly ground black pepper
Four 4-ounce boneless pork chops, each 1/4-inch thick
3 tablespoons olive oil
2 cups thinly sliced red onions
1 cup sauerkraut
1 cup IPA-style beer
1/3 cup fresh flat-leaf parsley leaves, chopped
Put a large skillet over high heat.
Whole grain mustard, for serving

Steps:

  • Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
  • Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
  • Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. Add the beer and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan. Cook until the sauce reduces slightly, about 30 seconds.
  • Remove from the heat and stir in the parsley. Serve the pork chops topped with the sauerkraut mixture, any accumulated juices and mustard.

Pork chops and beer are a perfect combination that makes for an ideal meal any time of the year. There are so many different recipes out there, and you can be sure you'll never run out of ways to cook your pork chops with beer. However, to make your next pork chops and beer recipe extra special, here are some tips you can follow:

1. Let the chops reach room temperature before cooking

Before cooking your pork chops, it's essential to let them sit out for a while and reach room temperature. This is especially important if you're grilling or pan-searing. When the meat is at room temperature, it will cook more evenly and will be tender and juicy.

2. Use a marinade

Marinating your pork chops in beer will add flavor and tenderness. You can use any beer you prefer, whether it's light beer or a more robust ale. When making your marinade, add some spices, garlic, and herbs to make the flavors more interesting. Leave your pork chops to marinate for at least four hours or even overnight to make sure they absorb all the flavors.

3. Choose the right cut of pork

The type of pork chops you choose will have an impact on the final result of your recipe. Different cuts of pork require different cooking methods. For example, bone-in pork chops that are thicker require longer cooking times than boneless chops that are thinner. It's always best to ask your butcher to recommend the best type of pork chops for your recipe.

4. Don't overcook the chops

Overcooking pork chops can make them tough and dry. When cooking, it's best to use a meat thermometer to ensure the internal temperature reaches 145°F. If you notice your pork chops are a little pink inside, it's okay as long as they have reached the recommended temperature.

5. Don't be afraid to experiment with different flavors

You don't have to stick to traditional flavors when making pork chops and beer recipes. You can experiment with different spices and herbs, such as rosemary, thyme, or even cinnamon. You can also add sauces, such as BBQ or honey mustard, to give your pork chops a unique twist. Don't be afraid to try new things and see what works best for you.

6. Use the right beer

The type of beer you use can make a significant difference in the flavor of your pork chops. Lighter beers like pilsners or lagers work best with grilled or pan-seared pork chops, as the flavors won't overpower the meat. Darker beers, on the other hand, can add a rich and bold flavor to your recipe.

7. Let the chops rest after cooking

Once your pork chops are cooked, it's essential to let them rest for a few minutes before slicing into them. When the meat rests, the juices redistribute, making the meat more tender and flavorful. Cover your pork chops with foil and let them rest for at least five minutes before serving.

8. Consider using a slow cooker

If you're short on time, a slow cooker can be a great option for making pork chops and beer recipes. This cooking method not only infuses the meat with even more flavor, but it also makes the meat fall-off-the-bone tender. Slow cooking also leaves you with more time to focus on other things while the pork chops cook.

Conclusion

There are many ways to make pork chops and beer recipes extra special. Whether you choose to marinate your pork chops, use the right cut of pork, or experiment with different flavors, you can be sure your next recipe will be a hit. Remember always to let your meat reach room temperature before cooking, choose the right type of beer, and avoid overcooking your pork chops.
