ORIGINAL ANN LANDERS MEAT LOAF

Meat loaf has stood the test of time and so has this recipe. Topped with bacon strips and tomato sauce this version is classic and foolproof. Plus, it makes great leftover sandwiches.

Number Of Ingredients 9

2 pounds ground beef
1 egg
1 1/2 cup soft bread crumbs
3/4 cup ketchup
1 teaspoon Accent seasoning mix
1/2 cup warm water
1 envelope dry onion soup mix
2 slices uncooked bacon
1 can (8 ounce size) tomato sauce

Steps:

  • Preheat the oven to 350 degrees F. Combine the ground beef, egg, bread crumbs, ketchup, Accent, water, and onion soup mix in a bowl. Mix well. Form the mixture into a loaf and place in a loaf pan or meatloaf pan. Place the strips of bacon over the top of the meatloaf. Drizzle the tomato sauce over the top. Place the pan in the oven and bake at 350 degrees F for one hour. Remove the pan from the oven and let stand for 5 minutes before slicing and serving.

This is the original version my mom handed down to me and has been one of my family staples since the 70s. I occasionally add other ingredients such as bell pepper or fresh onions, or top with bacon or cheese slice triangles. Sometimes I substitute saltine cracker crumbs to give it a different texture. My favorite part is meatloaf sandwiches from the leftovers.

2 lbs ground beef
2 eggs, slightly beaten
1 1/2 cups breadcrumbs
3/4 cup catsup
1 teaspoon maggi seasoning or 1 teaspoon msg
1/2 cup warm water
1 (1 ounce) package onion soup mix
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except tomato sauce.
  • Shape into loaf and place in ungreased pan.
  • Pour tomato sauce over loaf.
  • Bake for one hour.

Adapted over the years for my family's taste. Original recipe calls for 8 oz. tomato sauce instead of chili sauce over the top. If you don't like sauce on top of your meatloaf, then leave it off. This is an old recipe, written long before MSG (Accent) was determined to be evil. Use at your own risk.

1 teaspoon Accent seasoning
1 (1 1/4 ounce) package Lipton Onion Soup Mix
3 slices bacon
2 eggs
3/4 cup catsup
chili sauce (or 8 oz. tomato sauce) (optional)

Steps:

  • Mix all ingredients together except bacon and chili sauce.
  • Put in loaf pan.
  • Cover with bacon strips.
  • Pour chili sauce over top.
  • Bake at 350 degrees for 1 hour.

Number Of Ingredients 8

3 lbs ground beef (her measure is 2 - 3 lbs)
1/2 large onion, minced
3 cups oatmeal (Any "sawdust" will do, could be oatmeal, bread crumbs or whatever, her measure was actually 1.5-3 cu)
2 eggs
salt
pepper
1 1/2 cups catsup
2 teaspoons oregano (1-2 tsp. Crush in your palm, Edith's style....yet Edith says that it's Anne's move)

Steps:

  • In a large bowl place meat, eggs, onion, salt, pepper and sawdust with 2/3ls of the catsup and oregano.
  • Remove rings and wrist watch as the next step is messy!
  • Thoroughly combine the mixture with your hands.
  • Add additional "sawdust" until the meat feels like it will pack into a nice solid loaf.
  • lace in a pan of your choice.
  • Cover the top of the loaf with the remaining catsup.
  • Bake at 325 for about 1 hour.
  • Servings? - depends on how you slice it!

This is supposedly Ann Landers' sister's meatloaf recipe.

2 pounds lean ground beef
2 eggs
1 ½ cups dry bread crumbs
¼ cup ketchup
1 teaspoon monosodium glutamate (MSG)
½ cup warm water
1 (1 ounce) package dry onion soup mix
2 slices bacon
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, eggs, crumbs, ketchup, MSG, water and soup mix. Mix well and spoon mixture into loaf pan. Cover with 2 strips of bacon, then cover with tomato sauce.
  • Bake in preheated oven for 1 hour.

2 teaspoons vegetable oil
1 large onion, chopped
1 carrot, peeled and finely chopped
3 -4 garlic cloves, minced
2 lbs 80% lean ground beef (20% fat)
1 1/2 cups fresh breadcrumbs
2 eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon dried thyme leaves, crushed
1/4 cup finely chopped fresh parsley
1 teaspoon Worcestershire sauce
2/3 cup catsup
1/2 cup tomato sauce, plus
tomato sauce, for serving (optional)

Steps:

  • Saute vegetables in oil until carrots are soft.
  • Add garlic and saute about 1-2 minutes longer.
  • Remove from heat and set aside to cool.
  • In a large bowl, combine beef, bread crumbs, and cooled vegetables.
  • In another bowl, whisk together the eggs, salt, pepper, thyme, parsley, Worcestershire sauce and catsup until combined.
  • Pour egg mixture over beef and mix with hands, handling just enough to combine evenly.
  • Do not overmix, or it will be too dry.
  • Pat mixture gently into greased loaf pan, but do not press down too firmly.
  • Pour 1/2 cup tomato sauce evenly over the top and bake at 350 degrees for approximately 1-1/4 hours.
  • Place on a wire rack and cool for 10 minutes before serving.
  • Cut into thick slices and serve warm or cold with extra tomato sauce, if desired.
  • I use crushed, canned tomatoes sometimes and that is very good too.
