Number Of Ingredients 10

- 6 to 8 pieces chicken or 4 large boneless skinless chicken breasts
- 5 tbsp. lemon juice
- 1/3 cup flour
- 1 1/2 tsp. salt
- 1/2 tsp. paprika
- 3 tbsp. extra virgin olive oil
- 2 tbsp. butter, softened to room temperature
- 2 lemons, sliced 1/8 to 1/4 inch thick
- 3 tbsp. firmly packed brown sugar
- 1 cup low sodium chicken stock

Steps:

  • Coat bottom and sides of 9 x 13 inch ovenproof glass baking dish with vegetable spray. if using metal baking pan, line it with foil, shiny side up, and coat with vegetable spray. Rinse chicken under cold running water and pay dry with paper towels. Put lemon juice in shallow bowl. Dip chicken in lemon juice, put on platter and set aside. Pour leftover lemon juice into prepared pan.
  • Put flour, salt and paprika in plastic bag. Add chicken, seal and shake to coat with flour. Put chicken in strainer and tap over sink to remove excess flour. Set aside.
  • Set oven rack in middle position. Preheat oven to 375.
  • Melt olive oil and butter in large skillet over medium heat. Add chicken and cook til both sides are golden brown. Remove chicken to prepared baking pan and scatter lemon slices over. Sprinkle with brown sugar.
  • Pour chicken stock into skillet set over medium heat and simmer, scraping with wooden spoon to retrieve all of the browned bits clinging to bottom of pan. Cook til slightly thickened. Pour sauce into a corner of the baking pan, being careful not to disrupt the lemon slices and brown sugar topping. Gently shake pan to distribute sauce over bottom. Cover pan with foil and bake til chicken is cooked through, about 30 minutes for boneless skinless chicken breasts, 40 to 45 minutes for bone in pieces or chicken. Baste with pan juices at least once during cooking. Serve lemon chicken on a bed of saffron rice with pine nuts and golden raisins if desired.

1 pound boneless skinless chicken breasts, cut into 1-inch strips
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 large egg
3 tablespoons lemon juice, divided
1/4 cup butter, cubed
1 cup chicken broth
1/2 teaspoon grated lemon zest
4 cups fresh broccoli florets
Lemon wedges
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with salt and pepper. In a shallow bowl, mix flour, garlic powder and paprika. In another shallow bowl, whisk egg and 1 tablespoon lemon juice. Dip chicken in egg mixture, then in flour mixture; shake off excess., In a large skillet, heat butter over medium heat. Add chicken; cook 4-6 minutes on each side or until no longer pink. Remove and keep warm. Add broth, lemon zest and remaining lemon juice to skillet; bring to a boil. Stir in broccoli. Reduce heat; simmer, covered, 8-10 minutes or until broccoli is tender. Serve with chicken, lemon wedges and, if desired, rice.

In this recipe, which Pierre Franey brought to The Times in 1992 in one of his 60-Minute Gourmet columns, two teaspoons of lemon zest are added to a simple sauce of lemon juice, thyme, garlic and shallots. It is, at once, lively and elegant. To round it out, it needs a sturdy accompaniment. Mr. Franey suggested mashed potatoes with garlic and basil, with just a little olive oil swirled in.

1/2 cup flour for dredging
Salt and freshly ground pepper to taste
4 skinless boneless chicken breasts, about 6 ounces each
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 cup chicken broth, fresh or canned
2 tablespoons butter

Steps:

  • Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
  • Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
  • Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
  • Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
  • Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer. Serve immediately.

This lemon chicken is stuffed with quartered lemons, then roasted; gremolata (a lemon-zest mixture) rubbed under its skin gives the chicken tender, perfectly perfumed flesh.

1/3 cup coarse salt
3 tablespoons freshly squeezed lemon juice
1 five-pound roasting chicken
Gremolata
6 tablespoons unsalted butter, softened
8 fresh or dried bay leaves
4 lemons, quartered lengthwise
3 lemons, halved (optional)

Steps:

  • In a small bowl, combine salt and lemon juice. Loosen the skin of the chicken from the flesh. Rub mixture under the skin and in the cavity of the chicken. Place chicken in a large resealable plastic bag; chill at least 4 hours and up to 48 hours, turning occasionally.
  • Preheat oven to 425 degrees. Rinse all of the salt off the chicken with cold water; pat dry with a paper towel. Set aside.
  • In a small bowl, combine gremolata and softened butter. Rub two-thirds of the gremolata mixture under the chicken's skin; rub the rest on the outside. Stuff the cavity with the bay leaves and the quartered lemons.
  • Place chicken in a large roasting pan, breast-side up. Tuck the tips of the wings under the bottom of the bird. Transfer pan to oven. After 40 minutes, baste. If using lemon halves, place in pan, cut side down. Cover chicken with a 14-by-18-inch piece of aluminum foil. Reduce heat to 375 degrees.
  • Cook, basting occasionally, until the skin is crisp and golden, 40 to 45 minutes more. The juices should run clear when the chicken is pierced; an instant-read thermometer should register 170 degrees in the deepest part of the thigh when done. Serve warm or at room temperature.

GARLICKY CHICKEN WITH LEMON-ANCHOVY SAUCE



Garlicky Chicken With Lemon-Anchovy Sauce image

There's nothing wrong with a dinner of pan-seared chicken seasoned with salt and pepper. But there's everything right about the same chicken when you add anchovies, capers, garlic and plenty of lemon to the pan. What was once timid and a little dull turns vibrant, tangy and impossible to stop eating. And the only real extra work is chopping the garlic and a little parsley for garnish. In this dish, the cut of chicken is less important than the pungent pan sauce. Most people will probably want to use the workhorse of all poultry dinners, the boneless, skinless breasts. But the thighs cook nearly as quickly, and have a greater margin of error in terms of doneness. Overcook your breasts by even a minute, and you'll get dry, tough meat. Thighs are more forgiving. However, if your family insists on white meat, you can substitute breasts and subtract about 3 minutes from the cooking time. There is no need to mention the anchovies until after people have complimented you on the meal.

1 1/4 pounds boneless, skinless chicken thighs (4 to 5 thighs)
1 teaspoon coarse kosher salt
Freshly ground black pepper
6 garlic cloves, smashed and peeled
1/4 cup extra-virgin olive oil
5 anchovy fillets
2 tablespoons drained capers, patted dry
1 large pinch chile flakes
1 lemon, halved
Fresh chopped parsley, for serving

Steps:

  • Heat oven to 350 degrees. Season the chicken thighs with salt and pepper and let rest while you prepare the anchovy-garlic oil. Mince one of the garlic cloves and set it aside for later. In a large, ovenproof skillet over medium-high heat, add the oil. When the oil is hot, add the 5 smashed whole garlic cloves, the anchovies, capers and chile. Let cook, stirring with a wooden spoon to break up the anchovies, until the garlic browns around the edges and the anchovies dissolve, 3 to 5 minutes.
  • Add the chicken thighs and cook until nicely browned on one side, 5 to 7 minutes. Flip the thighs, place the pan in the oven and cook another 5 to 10 minutes, until the chicken is cooked through.
  • When chicken is done, transfer thighs to a plate (be careful, as the pan handle will be hot). Place skillet back on the heat and add minced garlic and the juice of one lemon half. Cook for about 30 seconds, scraping up the browned bits on the bottom of the pan. Return chicken to the pan and cook it in the sauce for another 15 to 30 seconds.
  • Transfer everything to a serving platter. Squeeze the remaining lemon half over the chicken and garnish with chopped parsley. Serve.

1 onion, cut into wedges
1 lemon, sliced
8 cloves garlic
4 sprigs fresh rosemary

4 shallots (about 1/4 pound)
2 large cloves garlic
1 teaspoon canola oil
12 ounces skinless,boneless chicken breasts
9 ounces whole assorted mushrooms or 8 ounces sliced assorted mushrooms
24 ounces whole broccoli or 14 ounces broccoli florettes (5 to 6 cups)
2 stalks lemongrass
Fresh or frozen ginger to yield 2 tablespoons coarsely grated
1 jalapeno or serrano chili
2 tablespoons fish sauce (nuoc mam)
1 teaspoon lime juice
2 teaspoons curry powder
3/4 cup no-salt-added chicken stock or broth
12 ounces Vietnamese rice noodles, Japanese udon noodles or fettuccine
3 tablespoons coconut milk
1 teaspoon sugar
A few sprigs cilantro to yield 3 tablespoons chopped

Steps:

  • Bring water to boil in covered pot for the pasta.
  • Chop the shallots and garlic in the food processor.
  • Heat to very hot a nonstick pan large enough to hold all the ingredients,reduce heat to medium-high and pour in the oil.Saute the shallots and garlic until they begin to brown.
  • Wash and dry the chicken,and slice into strips 1/4 inch wide. Add to the pan, and saute quickly on both sides to brown.
  • Meanwhile, wash,trim and slice the whole mushrooms;wash and trim the stems from the broccoli.When the chicken is browned,push to the side, add the mushrooms and broccoli and reduce heat to medium.
  • Remove the tough outer leaves from the lemongrass. Trim the bottoms,and thinly slice the bulbous parts. Grate the ginger; trim, seed and mince the chili. Add the lemongrass and ginger along with the chili, fish sauce, lime juice, curry powder and chicken stock to the chicken mixture, and cook, covered, over medium-low heat.
  • Cook the noodles according to package instructions.
  • Stir the coconut milk and sugar into the chicken.
  • Wash and chop the cilantro. When the broccoli is cooked, remove from heat. When noodles are cooked, drain, and top with chicken-mixture; sprinkle with cilantro.
