ANISE ALMOND LOAF (BREAD MACHINE)
I much prefer to use my machine to do the mixing and kneading and then remove the dough to finish in the oven. This is a very tasty loaf and makes lovely toast.

Steps:
- In bread machine pan, place first eight ingredients in order suggested by manufacturer.
- Select basic bread setting.
- Choose light crust color and loaf size if available.
- Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
- Just before the final kneading (your machine may audibly signal this), add almonds.

Dry Ingredients
- 3 cups all-purpose flour
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1 tablespoon anise seeds
- 1 1/2 teaspoon salt
- 2 1/4 teaspoons active dry yeast
Wet Ingredients
- 1 cup warm water
- 1/3 cup vegetable oil
- 1 egg
Instructions
- Add warm water, vegetable oil, egg, and salt in a bread machine pan.
- Add all-purpose flour, almond flour, sugar, anise seeds, and active dry yeast in the bread machine pan.
- Select the “dough” cycle on the bread machine and press start.
- Let the machine run through the complete cycle (usually about 1 1/2 hours).
- Once the cycle is complete, take the dough out of the bread machine pan and place it on the kitchen counter.
- Knead the dough for a few minutes and shape it into a loaf shape (or divide it into smaller shapes if you want to make smaller loaves or rolls).
- Place the shaped dough into a greased loaf pan (or baking sheet if you’re making rolls).
- Cover the loaf pan with a damp kitchen towel and let it rise for an hour in a warm and draft-free place (the oven is a great place to let it rise).
- Preheat the oven to 375°F (190°C).
- Bake the loaf for 30-40 minutes or until the top is golden brown and when tapped sounds hollow.
- Let the loaf cool down before slicing it for serving.
Tips
- If you don’t want to use vegetable oil, you can use melted butter or coconut oil.
- For a crustier loaf, brush the top with a mixture of one beaten egg and one tablespoon of milk before baking.
- If you prefer a sweeter bread, you can increase the sugar quantity by one-fourth cup.
- You can substitute almond flour with whole wheat flour if you prefer a healthier version of the bread.
- Make sure to use active dry yeast for the bread dough to rise well.
