- Let cool; peel and seed.

- Dip can be refrigerated in airtight container for up to 5 days; let stand at room temperature for 30 minutes.

- Blend well to form a nice smooth paste.
- If too thick, thin with a little more oil.

- Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel and seed peppers.
- Puree all ingredients including peppers in processor. Season with salt and pepper. Chill at least 3 hours or overnight.
