I made up this recipe after a similar sandwich served at a diner. It's not the same, but just as good.

3 tablespoons mayonnaise
½ onion, finely diced
2 dill pickles, chopped

Steps:

  • Combine the chicken, celery, mayonnaise, onion and pickle; mix well.
  • Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

4 plum tomatoes, seeded and chopped
1 cup thinly sliced carrots
1 medium cucumber, chopped
6 green onions, thinly sliced
2 tablespoons olive oil
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the tomatoes, carrots, cucumber and onions. , In a small bowl, whisk together the oil, vinegar, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 4 hours.

1 cup cake flour
1 1/2 cups superfine sugar
1 1/4 cups egg whites, at room temperature (about 10 large egg whites)
1 1/4 teaspoons cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup mixed berry
1 mango, peeled, pitted and cubed
1 nectarine, pitted and sliced
2 tablespoons orange juice
3/4 cup fresh raspberry (or frozen)
1 tablespoon fresh lemon juice
2 -4 tablespoons sugar

Steps:

  • For the Angel Cake:
  • Preheat the oven to 350°F
  • Sift the flour twice with 1/2 cup of the sugar.
  • With an electric mixer on high speed, beat the egg whites, cream of tartar and salt until soft peaks form when the mixer is removed from the batter.
  • Add half of the remaining sugar and beat for 1 minute. Add the remaining sugar, 2 tablespoons at a time, beating after each addition.
  • Stir in the vanilla.
  • Fold the flour and sugar mixture into the egg whites, 1/4 cup at a time, just until incorporated.
  • Put the batter in an ungreased 10" tube pan and bake until the cake is light golden brown and springy to the touch, about 1 hour. Invert the pan and let the cake cool completely before removing from the pan.
  • For the Summer Fruit Salad:
  • Mix fruit in a bowl.
  • Sprinkle with the orange juice.
  • For the Finest Raspberry Dessert Sauce:
  • Puree the berries in a blender with the lemon juice. Blend in the sugar by the tablespoonful, tasting after each addition, until the desired degree of sweetness is reached.
  • Strain through a fine strainer, pressing with a rubber spatula to release the juices.
  • Put it all together:
  • Place a slice of angel cake on each plate. (Store the leftover cake in an airtight container or freeze for longer storage.)
  • With a slotted spoon, place a portion of the Summer Fruit Salad on a corner of the cake slice and let it spill over the side.
  • Drizzle the raspberry sauce around the fruit salad.

1 tablespoon Accent seasoning
4 tablespoons salad oil (vegetable oil)

1 cup chopped celery

1 cup black olives, chopped
2 tablespoons extra light vegetable oil

2 tablespoons cooking oil
3 tablespoons Asian sesame oil
1/2 cup sliced almonds
1 jalapeño pepper, seeds and ribs removed, minced
1 teaspoon minced fresh ginger
1 1/2 pounds ground beef
1 teaspoon salt
1/4 cup Asian fish sauce (nam pla or nuoc mam)
4 scallions including green tops, chopped
1 cup coarsely chopped fresh mint
1/4 cup lime juice (from about 2 limes), plus 1 lime, cut into wedges, for serving

Steps:

  • 1. In a large pot of boiling, salted water, cook the pasta until just done, about 5 minutes. Drain, rinse with cold water, and drain thoroughly. Toss the pasta with 1 tablespoon of the cooking oil and 2 tablespoons of the sesame oil. 2. In a large frying pan, toast the almonds over moderately low heat, stirring frequently, until golden brown, about 5 minutes. Or toast the nuts in a 350° oven for 5 to 10 minutes. Remove the nuts from the pan and chop them. 3. In a large frying pan, heat the remaining tablespoon of cooking oil over moderately high heat. Add half the jalapeño, the ginger, beef, and salt. Cook the meat, stirring frequently, until brown and cooked through, about 10 minutes. Remove the pan from the heat and stir in the remaining tablespoon sesame oil, the fish sauce, scallions, mint, and lime juice. 4. Put the pasta on plates and top with the beef salad. 1 sea bass (about 2 pounds) scaled and cleaned with head and tail on
Kosher salt and freshly ground pepper
6 sprigs fresh thyme
4 fresh bay leaves
8 sprigs parsley
1 large potato, peeled, thinly sliced
1/2 red onion, sliced paper thin
8 cherry tomatoes, sliced in half
3 tablespoons olive oil
1/2 cup dry white wine, plus 1 cup wine, for sauce
2 shallots, diced
2 cloves garlic, minced
2 cups clam broth
3/4 pound angel hair pasta, cooked al dente
Extra virgin olive oil
1/2 pound arugula leaves, washed and dried
1 lemon
3 tablespoons extra virgin olive oil
Salt and freshly ground pepper
2 ounces thinly shaved Parmigiano-Reggiano

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the fish on one half of a sheet of parchment paper large enough to wrap the entire fish. Season the fish inside and out with salt and pepper. Tuck the herbs inside of the fish. Spread the potatoes, onion and tomatoes over and around the fish. Drizzle with the 3 tablespoons olive oil and the 1/2 cup wine and season again with salt and pepper. Fold the other half of the paper over the fish, double fold the edges and crimp. Place the package on a baking sheet and place in the center of the oven and bake for 25 minutes.
  • In a saute pan, sweat shallots and garlic. Add the remaining 1 cup of wine and clam broth. Reduce by half. Toss pasta with reduction. Remove the package from the oven and cut it open with scissors. Let sit a few minutes.
  • Divide the pasta among 4 plates, then fillet the fish and divide it among the plates. Arrange several spoonfuls of the vegetables around the fish and ladle some of the juices over the fish and pasta. Drizzle with some of the cooking juices and extra virgin olive oil.
  • Arugula Salad: Place arugula on a large platter. Squeeze lemon juice over and drizzle with olive oil. Season with salt and pepper and toss to coat. Place slices of cheese on top.

1 bunch broccoli florets, fresh

1 red onion, chopped in large bites
1 red bell pepper, chopped in large bites
1 can(s) small can of sliced ripe olives
1 bunch green onions, chopped
1 pkg crumbled feta cheese
1/2 c monterrey jack pepper cheese cut in cubes
3/4 bottle mccormick salad supreme seasoning (do not substitute)
1 bottle garlic expressions classic vinaigrette dressing*
salt and coarse black pepper to taste
1/2 c freshly grated parmesan cheese

Steps:

  • 1. Prepare the angel hair pasta according to directions (al dente). Cool and set aside. While the pasta is cooking, steam each kind of vegetable separately 1 to 2 minutes. Rinse in cold water to stop the cooking process. Set aside.
  • 2. In a large bowl, combine chopped onions, black olives, red pepper, monterrey jack cheese. Chop the snow peas in half, as well as the broccoli florets. Combine all steamed vegetables into the bowl with the other ingredients. Add feta cheese. Add cooked pasta. Season with salt and black pepper. Note: Add some garlic powder if you do not use the garlic dressing.
  • 3. Sprinkle in the McCormicks Supreme Salad seasoning, using approximaly 3/4 of the bottle. Add the parmesan cheese and toss all ingredients. Pour in enough garlic dressing to moisten the salad good (which requires most of the dressing) but do not oversaturate the salad. You can always add more later after it has chilled. The pasta will soak up some of the dressing. Chill at least 4 hours or longer. It is even better the next day. Enjoy! *You can buy this dressing online (garlic-expressions.com) or substitute another good vinaigrette or italian dressing.

1 lb angel hair pasta, cooked and drained
1 red bell pepper, sliced
1 can(s) black olives
1 pkg feta or gorganzola, (plain, garlic basil or tomato flavor)
1 pkg fresh baby spinach
1 medium red onion, sliced thin
1 pkg mushrooms, sliced
4 large boneless skinless chicken breasts
A LOT garlic, minced
butter
1 bottle bernstein's cheesy garlic dressing (if you can't find this, any italian dressing with cheese and garlic should work.)

Steps:

  • 1. Cook pasta. Do not over cook. It should still be al dente. Drain.
  • 2. Chop chicken into bite size chunks. Add salt and pepper. Saute in butter and A LOT of garlic.
  • 3. Toss everything together. Add an additional tbsp. of minced garlic, or to taste.
  • 4. Note: I prefer feta cheese, plain or flavored.

  • Prepare angel hair pasta as it tells you on the box. Rinse with cold water.
  • Peel green skin off cucumber. Cut cucumber in half and half again and take out seeds from cucumber. Cut in small pieces. Chop onion in small pieces.
  • Put all ingredients in one bowl. Pour Kraft Ranch Dressing over and stir.
