8 ounces uncooked angel hair pasta
1 cup sliced fresh mushrooms
1 cup thinly sliced fresh carrots
1 cup fresh snow peas
1 cup chopped sweet yellow, red or green pepper
1/3 cup chopped fresh basil
2 garlic cloves, minced
2 tablespoons olive oil
2 teaspoons cornstarch
1 cup vegetable broth or chicken broth
1/4 teaspoon salt
3 medium tomatoes, peeled and chopped
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in large nonstick skillet, saute the mushrooms, carrots, snow peas, yellow pepper, basil and garlic in oil for 2-3 minutes or until crisp-tender. , In a small bowl, combine the cornstarch, broth and salt until smooth; gradually stir into the vegetable mixture. Bring to a boil. Cook and stir for 1-2 minutes or until vegetables are crisp-tender and sauce is thickened., Remove from the heat; stir in tomatoes. Drain pasta; divide among four plates. Top with vegetable mixture; sprinkle with cheese.

1/2 cup olive oil
1/3 cup balsamic vinegar
1/2 teaspoon basil
1/2 teaspoon oregano
1 teaspoon sea salt
1/2 teaspoon ground pepper
2 medium onions
2 red peppers
1 yellow pepper
2 cups mushrooms
1 small eggplants or 1 small zucchini
8 garlic cloves, peeled (Wrap in foil)
2 (28 ounce) cans diced tomatoes (Italian flavored works well, but omit oregano or basil)
1 tablespoon oregano
2 tablespoons basil
1 teaspoon salt
1/2 teaspoon ground pepper
1/4 cup cups red wine
roasted garlic
angel hair pasta (cook as directed)

Steps:

  • Mix veggies with marinade
  • place with the foil wrapped garlic in a jelly roll pan (or cookie sheet) at 400 for about 45 minutes, depending how small your veggies are cut (your garlic may need longer cooking time than the veggies).
  • After veggies are cooked, mash garlic with fork (or garlic press) and mix half in with the veggies and save half for the tomato sauce.
  • Mix sauce ingredients in large saucepan (including roasted garlic).
  • add red wine after tomatoes have cooked down a bit.
  • Simmer for about 30 minutes.
  • Ladle sauce over hot noodles.
  • top with veggies and grated Parmesan cheese.

1 tablespoon olive oil
1 teaspoon minced garlic
salt and ground black pepper to taste
4 ounces angel hair pasta
3 basil leaves, cut into thin strips, or more to taste
1 dash red pepper flakes
2 tablespoons fresh grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine tomatoes, olive oil, garlic, salt, and pepper in a bowl until well mixed; spread on a shallow-sided baking sheet.
  • Bake in the preheated oven until tomatoes are soft and wrinkled, 25 to 30 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain; reserving a small amount of cooking water.

2 lbs cherry tomatoes (cut in half)
1/2 cup olive oil, divided
2 garlic cloves, minced
1 tablespoon italian seasoning
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon sea salt
1/4 teaspoon coarse black pepper
8 ounces angel hair pasta

Steps:

  • In small bowl mix ¼ cup of the olive oil, garlic, Italian seasoning, crushed red pepper, sea salt and pepper. Wash tomatoes and slice in half. Add tomatoes to bowl with olive oil and seasonings. Mix gently and pour onto shallow, foil-lined pan, sprayed lightly with Pam cooking spray. Spread in single layer. Drizzle with 2 tbls. of the olive oil.
  • ROAST in preheated 400 degree oven for 45 to 60 minutes until tomatoes are soft and dark brown on top.
  • PREPARE pasta as directed on package. Drain well. Place ½ of the roasted tomatoes and remaining 2 tbls. olive oil in large bowl. Coarsely mash tomatoes. Add pasta and remaining ½ of tomatoes; toss to mix well. Sprinkle with shredded Parmesan cheese and additional red pepper, if desired.

  • 1. Chop all vegetables into big chunks. In a large skillet heat about 4 tablespoons of olive oil. Add the chopped vegetables. Sprinkle with garlic powder, onion powder, garlic salt with parsley, pepper, and paprika. Stir and fry until liquid cooks off and the vegetables are tender. Set aside.
  • 2. While vegetables are cooking, heat your favorite spaghetti sauce or marinara. Cook angel hair according to package directions. Drain.

3 large heads of garlic, unpeeled
cooking spray
1/4 cup Dijon mustard
2 tablespoons lemon juice
1/8 teaspoon ground black pepper
1 cup zucchini, julienned
1 cup fresh mushrooms, sliced
1 tablespoon olive oil
1/2 cup water
1 medium tomatoes, chopped
8 ounces angel hair pasta, cooked and drained

Steps:

  • Lightly spray each head of garlic with cooking spray. Wrap each garlic head separately in foil. Place garlic in a small baking pan. Bake at 400° for 45 minutes. Cool 10 minutes.
  • Separate garlic cloves. Squeeze cloves to extract the pulp; discard peels.
  • Place garlic pulp, mustard, lemon juice and pepper in food processor or blender container; cover. Process until pureed; set aside. (I have also done this by hand once while we were in the process of moving and I couldn't find my food processor, and it worked just fine. It's tedious, but it does work out OK.).
