5 large garlic cloves (thinly sliced)
2 pounds cherry or grape tomatoes
1 cup loosely packed basil (roughly chopped)
3/4 teaspoon salt (plus more for seasoning)
1/2 cup grated parmesan (plus more for garnish)

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced

Angel hair pasta with crushed tomato and basil is a classic Italian dish that is loved and relished throughout the world. It is a simple and easy recipe that can be prepared quickly, making it ideal for busy weeknights. As the name suggests, the dish is made with thin, delicate strands of angel hair pasta, tossed in a flavourful sauce made with fresh tomatoes, garlic, and basil. However, like any other recipe, preparing angel hair with crushed tomatoes and basil requires some tips and tricks to make it perfect. In this article, we will share some valuable tips that will help you make the most delicious and authentic angel hair with crushed tomatoes and basil recipe.

Tip 1: Choose the right pasta:

The first and most crucial tip to make perfect angel hair with crushed tomatoes and basil recipe is to choose the right type of pasta. Angel hair pasta is the thinnest among all the types of pasta available in the market, and it cooks very quickly. Therefore, ensure that the pasta you choose is of good quality, and make sure to cook it al dente, which means that it should be cooked so that it is still firm when bitten into. Overcooking the pasta will result in a mushy texture and will not hold the sauce well.

Tip 2: Use ripe and fresh tomatoes:

The sauce plays a crucial role in making the perfect angel hair with crushed tomatoes and basil recipe. Therefore, it is essential to use fresh, ripe, and juicy tomatoes to make the sauce. Ripe tomatoes will have a sweet and tangy taste, which will balance the flavours of the dish. You can use any type of tomato, such as cherry tomatoes, roma tomatoes, or vine-ripe tomatoes, but make sure to remove the seeds and chop them fine before using them in the recipe.

Tip 3: Use fresh herbs:

Another indispensable tip is to use fresh herbs to make the sauce. Fresh herbs, such as basil, parsley, and oregano, add a burst of flavour and aroma to the dish. You can use dried herbs as a substitute, but they will not have the same flavour and aroma as fresh ones. Always chop the herbs fresh, just before adding them to the sauce, as they tend to lose their flavour quickly when exposed to air.

Tip 4: Use good quality olive oil:

Using good quality olive oil is a critical factor that enhances the flavour and texture of the dish. Olive oil adds richness and depth to the sauce and compliments the tanginess of the tomatoes. It also helps to coat the pasta well, giving it a decidedly rich and silky texture. Therefore, choose a good quality extra-virgin olive oil to make the sauce.

Tip 5: Mince the garlic:

Garlic is a critical ingredient in the sauce that gives it a distinctive flavour and aroma. However, chopping the garlic roughly or using garlic powder can result in overpowering the flavours of the sauce. Therefore, always mince the garlic finely, using a garlic press or chop it by hand to ensure that it is well-distributed and does not overpower the other flavours in the sauce.

Tip 6: Cook the sauce properly:

Cooking the sauce properly is another crucial factor that determines the overall taste and texture of the dish. The sauce should be cooked on low-medium heat, allowing the flavours to blend and the tomatoes to soften. Cook the sauce until it thickens to a saucy consistency, without becoming too watery. This will ensure that the sauce adheres well to the pasta and gives a rich and flavourful taste.

Tip 7: Season the dish:

Seasoning the dish well is a vital step that is often overlooked in the preparation of angel hair with crushed tomatoes and basil recipe. The sauce should be seasoned with salt and pepper, according to taste. You can also add some red pepper flakes or chilli flakes for a bit of heat. However, be careful not to overdo it, as it can overpower the other flavours in the dish.

Tip 8: Serve immediately:

Angel hair pasta with crushed tomatoes and basil is best served immediately after preparation. The pasta tends to absorb the sauce quickly, resulting in a dry and tough texture when left standing for too long. Therefore, serve the pasta hot, garnished with freshly chopped basil and grated parmesan cheese, if desired.

Conclusion:

In conclusion, angel hair pasta with crushed tomatoes and basil is a classic Italian dish that is easy to prepare and loved by everyone. By following the above tips, you can ensure that your angel hair with crushed tomatoes and basil recipe turns out to be perfect every time. Remember to use the right type of pasta, fresh and ripe tomatoes, and herbs, good quality olive oil, and season the dish well. Cook the sauce correctly, always mince the garlic finely, and serve the pasta hot. With these tips, you will be able to prepare the most delicious and authentic angel hair with crushed tomatoes and basil recipe.
