Steps:
- Cook and drain pasta as directed on package.
- While pasta is cooking, heat oil in 3-quart saucepan over medium heat. Cook garlic in oil about 5 minutes, stirring occasionally, until garlic is tender but not brown; remove from heat.
- Stir basil, avocado and tomatoes into garlic in saucepan. Toss vegetable mixture with pasta. Sprinkle with salt and pepper.

ANGEL HAIR PASTA RECIPE
Simple and tasty Angel Hair Pasta with juicy roasted cherry tomatoes, homemade basil pesto and creamy avocado.

Steps:
- Boil some water in the kettle and pour it into a pot and cook the angel hair pasta. It needs a minute to cook, remove it from the water and set aside. It will finish cooking in the pan. Don't over cook it! Please note that this can be done somewhere in between the tomatoes cooking so that your pasta is not standing in a pot waiting.
- Heat a skillet/non stick pan and add the oil
- Season the sliced cherry tomatoes with salt & pepper and paprika seasoning from our Smell and Taste Range.
- Cook till the tomato are bursting with flavor and juices, about 3 minutes
- Move the tomatoes to one side of the pan (so as not to press them down completely) and add the cut chicken pieces. Season the chicken pieces with the same spices and add a tiny drizzle of olive oil if necessary about 1/2 teaspoon.
- Combine and let it cook for about minute with the tomatoes. Add the homemade basil pesto.
- Add the cooked angel pasta and enjoy!
- Serve with a squeeze of fresh lemon, a dollop of yogurt, sour cream and fresh herbs.
ANGEL HAIR PASTA WITH PEPPERS AND TOMATOES
This simple pasta celebrates the end-of-summer harvest and is perfect for a light lunch or supper, or as part of a buffet. Bell peppers and other sweet peppers - like Corno di Toro and many other varieties of peppers of every hue - ripen in late summer, the same time as long-awaited flavorful (and multicolored) tomatoes, making their pairing seem almost preordained.

- Put a large pot of water over high heat and bring to a boil.
- In a low, wide salad bowl or pasta-serving bowl, combine garlic, red-wine vinegar and 3 tablespoons olive oil. Add a good pinch of salt, black pepper and red-pepper flakes.
- Add sweet peppers and cherry tomatoes, season well with salt and toss to coat with dressing. (You may do this up to an hour before cooking the pasta.)
- Salt the pasta water and cook the angel hair pasta until al dente, usually 4 to 5 minutes. Drain pasta in a colander.
- Add cooked pasta to the bowl and toss well to coat, spooning over juices from bottom of bowl and bringing plenty of tomatoes and peppers to the surface.
- Sprinkle with ricotta salata. If using bread crumbs, season with 1 teaspoon olive oil and a little salt, then sprinkle crumbs over surface.
- Garnish with whole or torn basil leaves. Serve warm or at room temperature.
ROASTED CHERRY TOMATOES WITH ANGEL HAIR
This is something I threw together one day when I was faced with an abundance of fresh cherry tomatoes and basil from my garden. Delish!

- Preheat oven to 375 degrees F (190 degrees C).
- Combine tomatoes, olive oil, garlic, salt, and pepper in a bowl until well mixed; spread on a shallow-sided baking sheet.
- Bake in the preheated oven until tomatoes are soft and wrinkled, 25 to 30 minutes.
- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain; reserving a small amount of cooking water.
- Spoon tomatoes with their juices into a small saucepan; add basil and red pepper flakes. Mix in reserved cooking water to thin tomato mixture to desired consistency. Cook and stir over low heat until warmed, about 5 minutes; stir in pasta. Top with Parmesan cheese before serving.

- Bring a large pot of salted water to a boil.
- Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
- Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

- Mince garlic and mash to a paste with a pinch of salt using a large heavy knife.
- Core and coarsely chop two thirds of tomatoes. ANGEL HAIR WITH BALSAMIC TOMATOES
This tastes like something I once had at Olive Garden, except I think they made it with fresh tomatoes. That limits it to a seasonal dish, since winter tomatoes, frankly, stink. Since this recipe uses canned tomatoes, you can feel gourmet at anytime. It goes together pretty quickly, especially after the first time you prepare it.

- Open the can of tomatoes.
- Do not drain, but dump the whole thing in a non-metallic bowl.
- Stir in the balsamic vinegar, black pepper, basil, and salt if you really think you need it.
- Most canned tomatoes have enough salt for this, and if you're using no-salt tomatoes, its probably because you're not SUPPOSED to have the salt.
- So drop the salt shaker, buddy.
- Let the tomatoes, et al, stand about 10 minutes.
- Sauté garlic in olive oil until translucent.
- Do not brown.
- Remove skillet from the burner, leaving garlic and oil in pan.
- Set aside.
- If you haven't already, put on a pot of water to boil for the pasta.
- A big pot, so it has lots of elbow room.
- People should stick together, not pasta.
- Hmmm, that should be a commercial.
- Drain the tomatoes, catching the juice in the skillet with the sauteed garlic.
- Bring this to a boil and then simmer until the liquid is reduced by about 1/3.
- It needs to do this in order to concentrate the flavors a bit.
- While the liquid is reducing, drop the pasta into the boiling water, and cook according to package directions, just until al dente.
- When the pasta is done, drain and keep hot if the sauce is not done yet.
- Once the liquid has reduced enough, add the tomatoes, and heat briefly.
- You want them to get HOT, not MUSHY.
- Pour all this over the hot pasta and toss.
- Serve immediately, nice and hot, passing parmesan to let everyone top their own.
- This goes nicely with my Green Bean Compromise and a tossed salad with my Extremely Bad Breath Garlic& Green Olive Dressing, but serve what you like.
- I won't mind.
