Categories     Cookies     Chocolate     Christmas

Yield 14 cookies

Number Of Ingredients 13

3/4 cup unsalted butter, softened (1 1/2 sticks)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 packet instant chocolate pudding mix, about 3.7 to 3.9 ounces (not sugar-free and not 'cook & serve')
1/4 cup unsweetened natural cocoa powder
1 teaspoon instant espresso granules (optional, but recommended; brings out the chocolate flavor and does not make cookies taste like coffee)
2 cups all-purpose flour
1 teaspoon baking soda
pinch salt, optional and to taste
one 10-ounce bag Andes Creme de Menthe Baking Chips (try Walmart, Target, Amazon, regular grocery stores; mint baking chips may be substituted)
2.5 to 3 ounces dark chocolate, chopped (I used Trader Joe's 72% Pound Plus Bar)

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, eggs, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes. Stop, scrape down the sides of the bowl, and add the pudding mix, cocoa, espresso granules, and beat on low speed until just combined, about 1 minute. Stop, scrape down the sides of the bowl, and add the flour, baking soda, optional salt, and beat on low speed until just combined, about 1 minute. Stop, scrape down the sides of the bowl, and add the Andes chips, chopped chocolate, and beat on low speed until just combined, about 30 seconds. Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 14 equal-sized mounds of dough. Roll into balls, and flatten slightly. Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading. Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet) and bake for about 10 minutes, or until edges have set and tops are just set, even if slightly undercooked and glossy in the center. Don't overbake which is easy to do with dark cookies. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack. Cookies are best warm and fresh, but will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Alternatively, unbaked cookie dough can be stored airtight in the refrigerator for up to 5 days or in the freezer for up to 6 months, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Valuable Tips to Make Andes Chocolate Mint Cookies

Here are some valuable tips to consider when making Andes Chocolate Mint Cookies.

1. Follow the Recipe

The basic premise of making a good batch of cookies is following the recipe. Skipping steps, swapping ingredients, or altering the salt to sugar ratio could produce disastrous results. If this is your first time making Andes Chocolate Mint Cookies, you need to read the recipe thoroughly and follow each step carefully. Understand the basic proportions of wet to dry ingredients to ensure you make the perfect cookie dough.

2. Chill the Dough

Chilling the dough is one of the essential steps in making Andes Chocolate Mint Cookies. This recipe contains butter, which is solid at room temperature. When baking cookies, you should keep the butter cold to make the dough recipe work accurately. Therefore, it is advisable to chill the dough for at least two hours before rolling it into balls and baking. This will prevent the cookies from spreading too much during baking and limit further flattening.

3. Select Proper Flour

Flour is another crucial ingredient when making Andes Chocolate Mint Cookies. You should always select the right type of flour for the recipe. Flour plays a role in determining the texture of the cookie, and using the wrong flour could result in tough or crumbly cookies. All-purpose flour is ideal for this recipe, but you can mix it up with other types of flour such as whole-wheat, almond, and coconut flour to create texture variation or gluten-free cookies.

4. Use Quality Chocolate

Andes Chocolate Mint Cookies are all about the chocolate. Therefore, you should use high-quality chocolate when making these cookies. The chocolate you use will determine the overall taste and texture of the cookies. Cheap or poor-quality chocolate will affect the taste and texture of the dough. You can select any chocolate you like, dark, milk, or semisweet, for your cookies, but ensure it is good quality.

5. Be Careful When Adding Mint Flavoring

It would be best if you were careful when adding mint flavoring to Andes Chocolate Mint Cookies. The mint flavor should be subtle and not overpowering. Start by adding a few drops of mint extract to gauge the intensity of the flavor. If the flavor is too faint or nonexistent, add more. However, caution against overdoing it or making the flavor too strong, which would ruin the taste of your cookies.

6. Keep Equipment Clean

Cookies are delicate and pick up flavors from the equipment used in making them. Therefore, ensure your utensils are scrubbed clean before and after use. You should also avoid using oil, grease, or butter to prevent the cookies from sticking to the utensils or baking sheet. Use parchment paper to keep the cookies from sticking and to give them a more uniform shape.

7. Practice Proper Baking Techniques

Baking is more than just putting dough in the oven and hoping for the best. Proper baking techniques will ensure your Andes Chocolate Mint Cookies turn out perfect. Avoid overbaking or underbaking them by keeping an eye on the oven temperature and baking time. Follow the recipe's instructions and set the timer to prevent overcooked or burnt cookies. If you are unsure how long to bake the cookies, start with the 15-minute baking time, then test the cookie's texture and adjust the baking time until perfect.

Conclusion

Andes Chocolate Mint Cookies are a delicious treat that you can make at home. Perfecting the art of making these cookies requires following the recipe's instructions, using quality ingredients, and practicing proper baking techniques. By following the tips outlined above, you can create delicious cookies that will impress everyone. If you follow the instructions, you can enjoy delicious Andes Chocolate Mint Cookies at home without sacrificing taste or quality.
