RADICCHIO SALAD WITH ANCHOVY VINAIGRETTE

Radicchio Salad With Anchovy Vinaigrette image

Salt is the best way to tame a bitter flavor, and so a radicchio salad benefits from a dressing that tilts toward saltiness. It does not matter which type of radicchio you use - the common tight round head, clusters of white stems with burgundy leaves, or maroon-trimmed endives to name a few - they all deliver some bitterness. The vinaigrette here is bolstered with anchovies and capers.

Time 15m

Yield 4 servings

Number Of Ingredients 8

2 anchovies in oil, drained
2 tablespoons white wine vinegar or Champagne vinegar
6 tablespoons fragrant extra-virgin olive oil
1 tablespoon capers in brine or vinegar, drained (do not use salt-packed)
Ground black pepper
1/3 cup finely chopped red onion
1 ripe but firm chilled avocado, peeled and diced (optional)
12 to 14 ounces radicchio (5 red-leaf endives, 3 long Treviso or 1 large round radicchio di Chioggia, or a mixture), cored and cut in 1/2-inch-wide slivers

Steps:

  • Mash anchovies in a small bowl. Mix in vinegar until well blended. Whisk in oil, fold in capers and season with pepper.
  • Place onions in a salad bowl. Add dressing and mix. Fold in avocado, if using. Add radicchio. Gently toss salad. Divide among individual plates or serve at the table.

NIçOISE SALAD WITH BASIL AND ANCHOVY-LEMON VINAIGRETTE

Niçoise Salad With Basil and Anchovy-Lemon Vinaigrette image

Here, I've riffed on a classic French salade niçoise. I save the anchovy for the dressing, but anchovy admirers can add more for garnish - and anchovy avoiders can simply leave them out. The only cooking is boiling the potatoes and haricots verts, which can be done together in the same pot. You can add a boiled egg if you like. Dressing the vegetables while warm helps them absorb all the good flavors more deeply, making this a salad that manages to be intense and light at the same time. Which is just what you want in the steamiest time of the year.

Categories     salads and dressings

Time 30m

Yield 4 servings

Number Of Ingredients 18

1 large garlic clove, minced
2 anchovy fillets, chopped
1/4 teaspoon salt, more as needed
2 tablespoons lemon juice
3/4 teaspoon grated lemon zest
1/2 teaspoon Dijon mustard
1/3 cup olive oil, more as needed
1/4 pound baby red potatoes
1/2 pound haricots verts or green beans
1 tablespoon finely chopped basil
8 radishes, cut into wedges, or 1 slender cucumber, peeled and sliced
2 large, ripe tomatoes, cut into wedges, or 1 pint cherry tomatoes, halved
2 (6 or 7-ounce) cans tuna packed in olive oil, drained
4 hard-boiled eggs (optional)
1/2 cup pitted kalamata olives, sliced
Freshly cracked black pepper, for serving
Flaky sea salt, for serving
Torn basil leaves, for serving

Steps:

  • Make the vinaigrette: Using the flat side of a knife, smash garlic clove, anchovy fillets and salt into a paste. Transfer to a small bowl and stir in lemon juice, zest and mustard. Using a whisk, slowly pour in olive oil while stirring constantly. Adjust seasoning as needed.
  • Place potatoes in a medium pot and cover them with 2 or 3 inches of cold water. Salt the water and bring to a boil. When water comes to a boil, continue cooking potatoes until fork tender, 10 to 15 minutes more. Add haricots verts during the last 1 minute of cooking (if using regular green beans, add them during the last 2 to 3 minutes of cooking depending on how thin they are). Drain vegetables and let sit until cool enough to handle but still quite warm. Halve potatoes, transfer to a small bowl along with the haricots verts and dress everything to coat with some (but not all) of the vinaigrette. When completely cool, toss in chopped basil.
  • On a large platter or four individual plates, arrange potatoes and haricots verts, radishes or cucumbers, tomatoes and tuna, and hard-boiled eggs, if using. Scatter olives over the top and drizzle with remaining vinaigrette. Serve garnished with freshly ground black pepper, flaky sea salt and torn basil leaves.

SALAD WITH ANCHOVY-MUSTARD VINAIGRETTE

Salad With Anchovy-Mustard Vinaigrette image

Anchovies add a salty depth of flavor to this bright, garlicky salad dressing. Here it's tossed with radicchio and arugula, but it will work on any full-flavored salad greens. Try it on frisée, spinach or raw baby kale. If you want to make this in a blender, double the quantities so the dressing emulsifies properly. Leftovers will keep in the refrigerator for up to three days.

ESCAROLE SALAD WITH ANCHOVY VINAIGRETTE

Escarole Salad with Anchovy Vinaigrette image

Provided by Marc Murphy

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 11

2 cups cubed country bread (about 1-inch dice)
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large or 2 small heads escarole
5 tablespoons extra-virgin olive oil
1 large shallot, finely chopped
2 olive oil-packed anchovy fillets, chopped
Pinch red pepper flakes
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • For the croutons: Preheat the oven to 350 degrees F; position an oven rack in the middle of the oven.
  • In a large bowl, toss the bread cubes with the olive oil, salt and pepper. Spread the bread cubes on a rimmed baking sheet and bake until golden brown, 8 to 10 minutes. Let cool. (The croutons will keep in an airtight container for up to 3 days.)
  • For the escarole: Preheat a grill on medium heat.
  • Cut the escarole head in half, then wash and dry. Grill the escarole cut-side down to give it a little char, about 3 minutes. (Do not flip and cook the other side. We are looking for just some of the escarole to be charred.) Set aside and let cool.
  • For the warm anchovy vinaigrette: In a small saucepot, heat 1 tablespoon olive oil over low heat until shimmering. Add the shallots and anchovies and cook, stirring, until the shallots have softened and the anchovies fall apart and dissolve in the oil, 2 to 3 minutes. Stir in the red pepper flakes. Add the vinegar and cook, stirring, until it has reduced slightly, about 1 minute. Whisk in the remaining 4 tablespoons oil.
  • Cut the escarole into 1-inch pieces and put in a large bowl. Add the vinaigrette and croutons and toss to combine. Season with salt and pepper.

PAN-FRIED ZUCCHINI WITH ANCHOVY VINAIGRETTE

Pan-Fried Zucchini with Anchovy Vinaigrette image

Provided by Giada De Laurentiis

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 11

1/4 cup olive oil
3 zucchini, sliced into 1/3-inch-thick rounds
1/2 teaspoon kosher salt, divided
1/4 cup freshly grated Parmesan
2 teaspoons anchovy paste
2 tablespoons capers, drained
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1 vine-ripened tomato, seeded and diced
1 tablespoon lemon juice
2 tablespoons chopped fresh Italian parsley

Steps:

  • Heat a large skillet over medium-high heat. Add half of the olive oil and heat until it shimmers. Add half of the zucchini slices so they lay in one single layer. Cook until deep golden brown, about 4 minutes. Sprinkle with 1/4 teaspoon salt. Flip each slice and cook an additional 4 minutes to brown the other side. Remove to a paper towel-lined plate and continue with the remaining oil, zucchini and salt. Place drained zucchini on a platter and sprinkle with the Parmesan.
  • When all the zucchini has been removed, turn off the heat and pour off all but 1 tablespoon of oil from the skillet. Add the anchovy paste and break apart with a wooden spoon until it dissolves and smells toasted. Add the capers, oregano, red pepper flakes and tomato. Squeeze in the lemon juice and stir. Spoon the tomato mixture over the zucchini and sprinkle with the chopped parsley.

CEDAR SMOKED SALMON CAESAR WITH MEYER LEMON TRUFFLE ANCHOVY VINAIGRETTE

Cedar Smoked Salmon Caesar with Meyer Lemon Truffle Anchovy Vinaigrette image

Provided by Food Network

Time 55m

Yield 6 servings

Number Of Ingredients 22

1 baguette or small loaf bread
2 ounces melted butter
1 ounce virgin olive oil
Salt and freshly ground black pepper
2 cloves garlic
2 ounces Meyer lemon juice, regular lemon juice can be substituted
2 ounces red wine vinegar
1 anchovy fillet
1 tablespoon Dijon mustard
1 teaspoon Worcestershire
3 dashes hot sauce
Salt and pepper
1 egg yolk
1 ounce truffle olive oil
2 ounces fruity virgin olive oil
Grated Parmesan
4 (2 1/2-ounce) chunks salmon fillets
1 ounce light olive oil
Kosher salt
Freshly ground black pepper
8 romaine hearts or 4 heads regular romaine, small as possible, trimmed
1 to 2 ounces grated Parmesan

Steps:

  • Preheat the oven to 375 degrees F.
  • To make the croutons: Cut the bread into squares. Combine melted butter and olive oil. Toss bread squares in the oil and melted butter combination and season with salt and pepper. Place on a baking sheet in 1 layer. Bake, tossing several times in the cooking process, until they are golden brown, crispy on the outside and a little soft inside, 10 to 15 minutes. Cool at room temperature and reserve. Do not refrigerate.
  • To make the vinaigrette: In a food processor, add garlic, lemon juice, vinegar, anchovy fillet, Dijon, Worcestershire, hot sauce, salt, pepper, and egg yolk and process for 15 seconds. With the processor running, slowly drizzle in the truffle oil and the olive oil. This recipe will make twice the amount that you need for a salad for 6 people.
  • It is difficult to make a smaller quantity in a food processor. The vinaigrette will keep up to 1 week, well covered, in the refrigerator. The salad is good enough to serve twice in 1 week.
  • Preheat a grill to high.
  • To make the Salad: In a mixing bowl, drizzle the chunks of salmon with enough oil just to coat. Season with salt and pepper. Remove the plank from the water and brush with some oil. Place the plank either on the grill or next to an open fire in a wood oven. Allow it to just catch fire. Put it out, and do the same to the other side of the plank. Place the fish pieces directly onto the plank, about 1-inch apart. Return it to the grill. The plank should be arranged near the fire so that it smolders on the edges, creating smoke that surrounds the fish. Allow this to continue, placing it near the fire in such a way that it smolders but does not catch fire.
  • Cook the fish to medium rare, about 6 minutes.
  • While the salmon is cooking, place the whole, but separated romaine leaves in a large mixing bowl with the croutons. Ladle about 1/2 of the vinaigrette over the whole leaves, season with salt and pepper and toss just to coat the leaves. Sprinkle the grated Parmesan over the salad and give the salad a final gentle toss. Arrange the leaves and the croutons on 6 chilled plates. Flake the salmon on its natural separations and divide evenly over the salads.

ROASTED CAULIFLOWER, RAISINS AND ANCHOVY VINAIGRETTE

Roasted Cauliflower, Raisins and Anchovy Vinaigrette image

Roasting toughens cauliflower and dries it out a bit. With many foods, this description may not sound that appealing, but because cauliflower is often mushy and watery, roasting is beneficial. Here, a (rather strong) vinaigrette is tossed with the cauliflower immediately after roasting, along with the raisins, whose sweetness counters the anchovies beautifully.

Provided by Mark Bittman

Categories     dinner, easy, lunch, side dish

Time 45m

Yield 8 servings

Number Of Ingredients 7

1 large cauliflower, cored, trimmed and separated into florets
1/2 cup extra virgin olive oil
Salt and freshly ground black pepper
2 tablespoons sherry or balsamic vinegar, or to taste
4 minced anchovy fillets, with a little of their oil, or to taste
1/2 cup raisins, preferably golden
1/2 cup chopped fresh parsley leaves

Steps:

  • Heat oven to 400 degrees. Put cauliflower in roasting pan, drizzle with 3 tablespoons oil and some salt and pepper; toss. Roast, turning once or twice, for 15 minutes or so, until cauliflower just starts to soften.
  • Meanwhile, make vinaigrette by combining remaining oil with vinegar, anchovies and a little salt and pepper; taste and adjust seasoning. Remove pan, drizzle cauliflower with 2 tablespoons of vinaigrette, and toss. Roast, turning once, until a thin-bladed knife pierces a piece with little resistance, for 15 minutes. (Recipe may be cooled at this point, covered tightly and refrigerated for 2 days.)
  • At the last minute, put cauliflower in a salad bowl and add raisins, parsley and remaining vinaigrette and toss. Taste and sprinkle with salt, if needed, and lots of pepper, then serve.

ROMAINE SPEARS WITH ANCHOVY VINAIGRETTE

Romaine Spears with Anchovy Vinaigrette image

Provided by Food Network

Time 45m

Yield 4 servings

Number Of Ingredients 10

3 cloves garlic, sliced plus 1 whole garlic clove
3/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
3 anchovies, rinsed and chopped coarse
Salt and freshly ground black pepper
8 slices French bread, cut 1/4-inch thick on the diagonal
2 hard boiled eggs
1 head Romaine lettuce, rinsed and dried
1/4 pound Parmesan cheese, shaved very thin with a potato peeler

Steps:

  • Preheat the oven to 400 degrees. Cut 3 cloves of garlic into 1/8-inch thick slices and reserve the 4th clove. In a small saucepan or skillet set over moderately low heat, combine the sliced garlic with 1/2-cup of the oil and cook for 10 minutes. Strain the oil into a bowl and reserve the cooked garlic.
  • In a small bowl, whisk together the vinegar and mustard, add 1 teaspoon of the anchovy, and mash with the whisk until smooth. Whisk in the garlic-flavored oil, the cooked garlic, and remaining anchovy. Season with salt and pepper.
  • Brush both sides of the bread with the remaining 1/4 cup oil and season with salt and pepper. Arrange the bread in a single layer on a baking sheet and bake until lightly toasted -- about 5 minutes. When cool enough to handle, rub one side of each slice with the remaining raw garlic clove.
  • Peel the eggs and separate the yolks from the whites. With the back of a spoon or a rubber spatula, push the yolks through a fine sieve into a bowl. Wash and dry the strainer and repeat with the whites.
  • Choose 6 large Romaine spears and slice them crosswise into 1/4-inch thick ribbons. In a large bowl, toss the remaining whole leaves with the dressing. Arrange the leaves on salad plates. Toss the lettuce ribbons in the residual dressing and set the ribbons on top of the spears. Sprinkle with the whites and yolks and arrange the toast on the plate. Top the toast with the Parmesan shavings.

Yield Makes 6 first-course servings

Number Of Ingredients 19

Preserved lemon:
1 lemon, thinly sliced
1/2 cup fresh lemon juice
4 teaspoons coarse sea salt
Vinaigrette:
3 tablespoons finely grated Grana Padano or Parmesan cheese
2 tablespoons fresh lemon juice
1 garlic clove, pressed
1/2 2-ounce tin anchovies, drained, minced, 1 1/2 teaspoons oil from tin reserved
Pinch of sugar
5 tablespoons olive oil
Breadcrumbs and radicchio:
4 tablespoons olive oil, divided
1 garlic clove, pressed
2 cups 1/2-inch cubes crustless country white bread
1/4 teaspoon dried oregano
1/8 teaspoon dried crushed red pepper
2 heads of radicchio (about 1 pound total), each cut into 6 wedges with some core attached to each wedge
Shavings of Grana Padano or Parmesan cheese (for garnish)

Steps:

  • For preserved lemon:
  • Mix lemon slices, lemon juice, and coarse sea salt in small skillet. Bring to boil; reduce heat to medium-low, cover, and simmer until almost tender, about 10 minutes. Uncover and cool. Drain lemon slices. Using sharp knife, cut slices in half, then cut pulp away from peel; discard pulp. DO AHEAD: Can be made 1 week ahead. Cover and chill.
  • For vinaigrette:
  • Mix cheese, lemon juice, garlic, minced anchovies, and pinch of sugar in medium bowl. Whisk in olive oil and 1 1/2 teaspoons oil from anchovy tin. Season vinaigrette to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature and rewhisk before using.
  • For breadcrumbs and radicchio:
  • Preheat oven to 350°F. Line rimmed baking sheet with foil. Mix 1 tablespoon olive oil and garlic in medium bowl. Add bread cubes, oregano, and crushed red pepper; sprinkle with salt and pepper. Transfer bread cubes to prepared baking sheet.
  • Bake bread cubes until golden brown, tossing occasionally, about 20 minutes. Cool. Transfer to work surface. Cover with paper towels. Using mallet or rolling pin, crush bread cubes into breadcrumbs.
  • Preheat broiler. Line same baking sheet with fresh sheet of foil. Place radicchio wedges in large bowl. Drizzle remaining 3 tablespoons oil over; sprinkle with salt and pepper and toss to coat. Arrange wedges on prepared sheet. Broil until beginning to brown, about 3 minutes. Using tongs, turn radicchio over, fanning leaves out slightly. Broil until radicchio is soft and beginning to brown with some edges beginning to char, watching carefully to prevent burning, about 2 minutes longer.
  • Return radicchio to same large bowl. Drizzle enough dressing over to coat; toss. Arrange wedges on plates. Sprinkle breadcrumbs over. Top with cheese shavings, arrange a few preserved lemon peel strips over, and serve.

Vinaigrette recipes have been around for centuries, and they are an excellent way to add flavor and depth to any dish. Anchovy vinaigrette recipes are a unique take on this classic recipe because they add the rich and salty flavor of anchovies to the mix. Anchovy vinaigrette recipes are versatile, and they can be used to add flavor to a variety of dishes, including salads, roasted vegetables, and grilled meats.

The Components of Anchovy Vinaigrette Recipes

The key components of this recipe are anchovies, oil, vinegar, and seasonings. Anchovy vinaigrette recipes typically call for olive oil, although other oils can be used as well. The vinegar used in this recipe can also vary, but traditionally it is red wine vinegar. Other types of vinegar, such as balsamic or white wine vinegar, can be used as well, depending on personal preference.
Anchovies
Anchovies are tiny, saltwater fish that are packed with flavor. They are typically sold in tins or jars, and they are an essential ingredient in many traditional dishes, including Caesar salad dressing and puttanesca sauce. Anchovies are known for their strong, salty flavor, which can be off-putting to some people. However, when used in moderation, they can add depth and complexity to a dish.
Oil
Olive oil is the most common oil used in anchovy vinaigrette recipes. Olive oil has a fruity flavor that pairs well with the saltiness of the anchovies. Other oils, such as avocado oil or sunflower oil, can be used as well, but they will alter the flavor of the finished vinaigrette.
Vinegar
Red wine vinegar is the most traditional vinegar used in anchovy vinaigrette recipes. It has a tangy flavor that balances out the richness of the olive oil and the saltiness of the anchovies. Other types of vinegar can be used, such as balsamic vinegar or white wine vinegar, but they will give the vinaigrette a different flavor profile.
Seasonings
In addition to anchovies, oil, and vinegar, anchovy vinaigrette recipes typically call for a variety of seasonings. These can include garlic, Dijon mustard, lemon juice, and herbs such as parsley, thyme, or oregano. These ingredients help to balance out the flavors in the vinaigrette and add complexity to the finished dish.

Uses for Anchovy Vinaigrette Recipes

Anchovy vinaigrette can be used as a dressing for salads, as a marinade for grilled meats, or as a sauce for roasted vegetables. It is a versatile recipe that can be used to add flavor to a variety of dishes.
Salads
When using anchovy vinaigrette as a salad dressing, it is important to remember that a little goes a long way. The strong flavor of the anchovies can easily overpower the other ingredients in the salad. Use it sparingly, and taste the salad as you go. Anchovy vinaigrette pairs well with bitter greens, such as arugula or radicchio, as well as with heartier vegetables like roasted beets or carrots.
Marinades
Anchovy vinaigrette makes an excellent marinade for grilled meats, such as chicken or steak. The saltiness of the anchovy helps to tenderize the meat, while the other ingredients in the vinaigrette add flavor. To use anchovy vinaigrette as a marinade, simply coat the meat in the vinaigrette and let it sit for at least an hour before grilling.
Sauces
Anchovy vinaigrette can also be used as a sauce for roasted vegetables. Simply drizzle it over the vegetables before roasting, or toss the vegetables in the vinaigrette after they come out of the oven. This will add a salty depth of flavor to the vegetables and help to elevate the dish.

Conclusion

Anchovy vinaigrette recipes are a unique take on classic vinaigrettes. They add a salty depth of flavor to any dish and are versatile enough to be used in a variety of ways. Whether you're using it as a dressing for salads, a marinade for grilled meats, or a sauce for roasted vegetables, anchovy vinaigrette is a recipe that every home cook should have in their arsenal.
