THE BEST SHRIMP SCAMPI

The Best Shrimp Scampi image

A classic menu item from every great Italian-American restaurant, this shrimp scampi hits all the right notes - buttery, lemony, garlicky. We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

Categories     main-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 9

1 1/2 pounds jumbo shrimp, peeled, deveined and tails on (see Cook's Note)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1 tablespoon grated garlic (about 3 cloves)
1 teaspoon crushed red pepper flakes
1/3 cup dry white wine
2 tablespoons freshly squeezed lemon juice from about 1 lemon
1 tablespoon chopped flat-leaf parsley leaves, plus more for garnish
Crusty bread or pasta, for serving

Steps:

  • Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and sprinkle with salt and pepper.
  • Melt 2 tablespoons of the butter in the skillet. Add half the shrimp and cook until golden pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another tablespoon of the butter in the skillet and cook the remaining shrimp.
  • Return the skillet to medium heat. Add 1 tablespoon of the butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  • Stir in the wine and lemon juice. Increase the heat to high and boil the liquid until it thickens slightly, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons butter and the parsley. Add the shrimp back to the skillet and toss to coat with the sauce. Transfer to a serving dish and top with more chopped parsley. Serve with crusty bread or pasta.

Categories     main-dish

Time 25m

Yield 2 servings

Number Of Ingredients 12

1 cup breadcrumbs
4 tablespoons minced garlic
4 tablespoons extra-virgin olive oil
5 tablespoons unsalted butter
10 jumbo shrimp, cleaned and butterflied
Kosher salt and freshly cracked black pepper
3/4 cup white wine
2 teaspoons Worcestershire sauce
1 lemon, zested and juiced
Cooked pasta, for serving, optional
2 tablespoons minced fresh parsley
Garlic bread, for serving, optional

Steps:

  • Put the breadcrumbs in a skillet over medium heat with 2 tablespoons of the garlic and 2 tablespoons of the oil. Cook, stirring, until the crumbs are toasted and caramelized, 5 to 8 minutes. Set aside.
  • In a saute pan large enough to comfortably fit the shrimp in 1 layer, heat 1 tablespoon of the butter and the remaining 2 tablespoons oil over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the pan and cook, without moving the shrimp, until caramelized on one side, about 3 minutes. Flip the shrimp over and cook for another 2 minutes; remove from the pan.
  • Return the pan to medium-high heat, add the white wine and remaining 2 tablespoons garlic and cook for 1 minute. Return the shrimp to the pan. Add the Worcestershire, lemon zest and juice and remaining 4 tablespoons butter. Cook, simmering, until the liquid thickens.
  • Add the pasta to the pan if using and additional salt if necessary. Transfer to serving bowls and top with the toasted breadcrumbs and parsley. Serve with garlic bread if desired.

CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

This is one of those classic dishes that doesn't need anything more. It's always about allowing the subtle sweetness and brininess of the shrimp to coexist peacefully with the garlic and oil. You need some butter to balance the olive oil for the taste of the sauce. You also need canola oil for high-heat cooking of the shrimp. Once these ingredients come together, you will understand. Serve this dish with buttered pasta or loaves of seriously crusty bread. I have also been known to go overboard and make buttery garlic bread on the side.

Time 30m

Yield 3 to 4 servings

Number Of Ingredients 13

1 1/2 teaspoons plus 3 tablespoons unsalted butter, cut into small pieces
1/4 cup panko breadcrumbs
Sixteen 16/20 shrimp, shelled and deveined, tails on
Kosher salt
2 tablespoons canola oil
2 large cloves garlic, grated on a rasp
3/4 cup dry white wine
2 dashes Worcestershire sauce
2 dashes hot sauce, such as Tabasco
1 large lemon, zested and halved
1/2 cup chopped fresh parsley
1/2 teaspoon red pepper flakes
Crusty bread, optional

Steps:

  • Melt 1 1/2 teaspoons butter in a small skillet over medium-high heat, then add the panko and cook, stirring constantly, until the breadcrumbs are golden and toasty-scented, about 2 minutes. Set aside.
  • Sprinkle the shrimp on both sides with salt. Heat a large skillet over medium-high heat and add the canola oil. When the oil begins to smoke lightly, quickly arrange the shrimp in a single layer, with a little space between each. Brown the shrimp on their first sides, adding a couple of pieces of the butter around the shrimp to add flavor as they brown, 1 to 2 minutes. Turn the shrimp on their second sides and brown, 1 to 2 minutes. Quickly transfer the shrimp to a plate.
  • Return the skillet to medium heat. Add the remaining butter and the garlic to the skillet. Press the garlic into the melting butter to break up any clumps. Add the wine and stir up the brown bits in the bottom of the skillet. Add the Worcestershire, hot sauce and lemon zest. Simmer until the garlic softens and the wine reduces down to a lush sauce, 3 to 5 minutes. Add the parsley and squeeze the juice from half a lemon into the sauce.
  • Return the shrimp to the skillet and sprinkle with the red pepper flakes. Toss the shrimp in the sauce to coat well. Remove the skillet from the heat. Sprinkle the shrimp with some more lemon juice and the toasted panko and transfer to a platter.
  • Serve with crusty bread, if using.

  • 2. Scampi butter directions: In a bowl, mix together all ingredients with a wire whisk, until well blended.
  • 3. Spaghetti Squash: Slice squash in half lengthwise. Scoop out the seeds with a spoon as you would a pumpkin. Then completely submerge both halves in boiling water and cook for about 25 minutes, or until the inside is fork tender and pulls apart in strands (it is better to undercook if you are not sure). Remove, drain, and cool with cold water or an ice bath to stop the cooking. Then use a fork to scrape the cooked squash out of its skin; at the same time, fluff and separate the squash into spaghetti-like strands. Discard the skin. Note: You can reheat the squash strands by dipping them in boiling water with a strainer just before serving. Cook's note: Spaghetti squash may be used in any recipe that calls for pasta. It is great plain, with butter or with marinara sauce, scampi or even alfredo.

Making Anaheim shrimp scampi requires a bit of culinary skill and an appetite for adventure in the kitchen. While initially intimidating, learning how to perfect this dish is a great way to impress your dinner guests and create a gourmet meal that caters to seafood lovers. The following are valuable tips to help you create a delicious Anaheim shrimp scampi.

Tip 1: Ensuring Fresh Shrimp

Fresh shrimp is crucial for creating a delicious Anaheim shrimp scampi dish. When purchasing shrimp, ensure that they are fresh and of high quality. This means that they shouldn't have a fishy odor, and their flesh should be firm and translucent.

Tip 2: Using Anaheim Peppers vs. Regular Peppers

Anaheim peppers have a mild and slightly sweet flavor compared to regular peppers. This makes them the perfect choice for shrimp scampi since they won't overpower the shrimp’s taste. They’re also great for adding color to the dish.

Tip 3: Garlic

While garlic is a staple in most shrimp scampi recipes, understanding how to use it and when to add it to the dish is crucial. To yield a more intense garlic flavor, add the chopped garlic to the hot oil before sautéing the shrimp.

Tip 4: Wine

Wine is commonly used to deglaze the pan, adding depth of flavor to the dish. For scampi, white wine is the best choice as it contributes acidity, balances the flavors, and enhances the quality of the sauce. For the best taste, add wine once the shrimp is cooked, but turn the heat off.

Tip 5: Butter

Butter is a key component in shrimp scampi, giving it a silky and rich taste. The key to adding butter is to do it slowly and in stages, allowing it to melt and emulsify with the liquids in the dish. This technique also adds a creamy texture to the dish.

Tip 6: Lemon Juice

Adding a small amount of lemon juice to the dish helps to cut through the richness of the butter and wine, resulting in a perfectly balanced dish. Lemon juice also enhances the sweetness of the shrimp, making it taste fresher.

Tip 7: Pasta

While some variations of shrimp scampi are served over rice or vegetables, it’s most commonly served over pasta. To cook your pasta correctly, ensure you use enough water to prevent sticking, salt your water to enhance the taste of your pasta, and follow the recommended cooking time.

Tip 8: Plating Techniques

When plating your shrimp scampi, presentation is key. Start with a generous scoop of pasta and place the shrimp on top. Spoon the sauce over the shrimp and garnish with a lemon wedge and parsley to add a pop of color to the dish.

Tip 9: Wine Pairing

When serving Anaheim shrimp scampi, complement the flavors by pairing the dish with a white wine that has a crisp and light taste. Some popular options include Sauvignon Blanc, Pinot Grigio, or Chardonnay.

Tip 10: Practice Makes Perfect

As with anything, mastering the art of Anaheim shrimp scampi takes practice, patience, and creativity. Don’t be afraid to experiment with different ingredients, seasonings, and techniques to discover the one that works best for you.
Conclusion:
Creating a delicious Anaheim shrimp scampi is easy, provided you use fresh shrimp, Anaheim peppers, garlic, white wine, butter, lemon juice, and pasta. Pair the dish with a crisp and light white wine for a delightful and sophisticated dining experience. Finally, remember that the key to mastering this dish is practice, so don’t be afraid to experiment with different ingredients and techniques until you achieve the perfect taste.
