- Preheat oven to 400 degrees F (200 degrees C).
- Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
- Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.
- Toss potatoes again, turning potatoes so unbrowned sides contact the bottom of the dish. Continue baking until potatoes are browned and tender, about 15 more minutes.
- Turn oven off and leave potatoes in the oven for 15 more minutes. Toss once more and adjust levels of salt, black pepper, and cayenne pepper before transferring potatoes to a serving bowl.

- Preheat your oven to 400 degrees F. Scrub/wash your potatoes with a potato brush. Grease a baking sheet or line it with parchment paper.
- Cut your potatoes into small chunks that are all about the same size by cutting each potato in half and then cutting each half in half or fourths (depending on the size of your potatoes). Lay the potatoes on your prepared baking sheet.
- Mix together oil, garlic, onion powder, Italian seasoning, salt and pepper, and brush onto the potatoes. Bake for 30-35 minutes. Serve.

- 1. Preheat oven to 425 degrees F. Use 1/4 cup olive oil for 3 pounds potatoes or 1/3 cup for 4 pounds potatoes. Spray a jelly Roll pan with cooking spray and set aside till needed.
- 2. Wash quarter small potatoes and cut the larger ones into eights, for uniformity in size. Then place on paper towel and dry so potatoes will be crisp when roasted.
- 3. Add to a large bowl, the toss in the spices, olive oil and herbs and toss to coat evenly on all sides,
- 4. Spread into a single layer on prepared baking pan. Then place into PREHEATED OVEN and roast for about 45 to 50 minutes or until potatoes are tender when pierced with a sharp knife or fork. Turn potatoes about half way through cooking time then return to oven to continue cooking.
- 5. I just love vegetables and this was my vegetable dinner plate.

- Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian herbs, salt and pepper. Toss again until the potatoes are evenly coated.
- Remove potatoes from the bowl or ziplock bag onto the baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible. Place the potatoes on an even layer on the baking sheet.
- Add potatoes in a bowl and drizzle with avocado oil. (Or you can use a Ziplock bag) Toss potatoes until evenly coated. Add Garlic Powder, onion powder, Italian Herbs, salt and pepper, and toss again.
- Bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
