2 pounds ground beef
2 ½ cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
¾ cup ketchup
¼ cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
¾ teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
½ cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
  • Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

After traveling in eastern Ohio and eating many different "Amish-style" meatloaves, I finally asked for this wonderful meatloaf recipe. This one is not as sweet as the typical Amish recipe and has some garlic flavoring in it. We love it!!

2 lbs extra lean ground beef
1 3/4 cups Ritz crackers, crushed
1 small onion, chopped finely
2 eggs, slightly beaten
3/4 cup ketchup
2 teaspoons garlic salt
1/4-1/2 teaspoon pepper (to taste)
2 slices of regular-sliced bacon
1/2 cup ketchup
1/4 teaspoon salt
1/2 teaspoon dry mustard
2 tablespoons dark brown sugar
1/8-1/4 teaspoon pepper (to taste)

Steps:

  • Mix first 7 ingredients throughly together and pack into a loaf pan.
  • Next put the strips of bacon on top and bake for an hour at 350F degrees.
  • While waiting, mix the sauce ingredients together.
  • After the hour is up, pour and smooth the sauce onto the meatloaf and cook another 15 to 20 minutes. I have sometimes added 1/2 teaspoon of garlic salt instead of the salt to the sauce mixture and that is also delicious!

  • 1. Mix well and pack in wide mouth qt canning jars. Boil 3 hours in a boiling water bath or at 10 lbs pressure for 90 minutes

3/4 c ketchup
1/4 c brown sugar, light
2 slice bacon
1 c ketchup for glaze
2 Tbsp vinegar
3/4 tsp salt or to taste
2 Tbsp prepared yellow mustard
1/2 c brown sugar, light

Steps:

  • 1. Pre-heat oven to 350 degrees F (175 degrees C).
  • 2. In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchp and 1/4 cup brown sugar until well blended. Press into a greased 9X5 loaf pan. Lay two slices of bacon over top.
  • 3. Bake for one hour or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over top the the meat loaf for the last 15 mintues of baking.

2 well-beaten eggs
1/4 cup onion, chopped
3/4 cup tomato juice
2 teaspoons salt
1 1/2 teaspoons pepper
SAUCE:
2 tablespoons ketchup
2 tablespoons mustard
2 tablespoons brown sugar
Mix together and spread over meatloaf before baking.

Steps:

  • SAUCE: Mix sauce ingredients together and spread over meatloaf before baking. MEATLOAF: Combine all ingredients thoroughly. Pack firmly in loaf pan. Spread sauce over and bake at 350°F for one hour. Let cool 5 minutes before serving.

I'm not sure what's supposed to be Amish about this recipe, but it is very good. Recipe from a freezer cooking email group. As a note - I generally do not use the bacon at all and I use a brown sugar/ketchup topping rather than the cheese. If you are doing this for the freezer, this can be frozen after assembly, then thawed and baked as directed. Or, cook completely, freeze, thaw and reheat. It's so fast to put together that I generally just make it and serve it the same day.

1/2 cup evaporated milk
1/2 teaspoon rubbed sage
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1 cup Ritz cracker crumbs (about 3/4 of a sleeve)
3/4 cup grated swiss cheese, divided
1/4 cup finely chopped onion
1 1/2 lbs lean ground beef
2 -3 slices bacon, cut in 1 inch pieces

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine evaporated milk, sage, egg, salt, pepper, crumbs, 1/2 cup of the Swiss cheese, onion, and ground beef.
  • Mix until just combined, do not overmix.
  • Pack into loaf pan and arrange bacon strips on top (again, I do not use these).
  • Bake for 45 minutes.
  • Remove, sprinkle with remaining 1/4 cup of Swiss cheese, and return to oven for 10 minutes.
  • Let stand 5-10 minutes (I remove from pan with slotted spatula so it drains a bit).
  • Slice and serve.
