Steps:
- Place eggs into a large bowl or the bowl of your stand mixer and mash with a fork or using the paddle attachment of your stand mixer. Add mayonnaise and mix together until well-combined and eggs are light and fluffy. Add salt and ground black pepper to taste.
- Stir in sliced olives and pimentos and onion into egg salad.

KITTENCAL'S DELI-STYLE EGG AND OLIVE SALAD
This is a deli-quality egg salad and one I have made many times in the past to serve a luncheons and buffets and always receive rave reviews! --- for a change of pace this is great stuffed between pita bread with a leaf of lettuce, plan ahead the egg mixture *must* be chilled for several hours or even overnight to blend the flavors, the amounts listed should give you 4 to 5 sandwiches, please add in the olives they are what really makes this recipe! :)

Steps:
- In a bowl, combine first 4 ingredients until smooth and well combined.
- Add eggs, celery, green onion and olives; mix well and season with salt, pepper and Tabasco sauce if using.
- Cover, and chill for at least 2 hours (or more, the more time chilled the better!).
- If desired serve on pita bread, using 1/3 to 1/2 cup for each sandwich.

AMISH CREAMY COLESLAW WITH BOILED DRESSING
Like the title says, this is an awesome Amish recipe..We had this at a salad bar in Ohio and begged for the recipe.

Steps:
- In small saucepan, beat the eggs thoroughly; add the sugar, flour, salt and mustard.
- Combine the vinegar and the water and beat into the egg mixture, then add the butter or oil.
- Cook over low heat, stirring constantly until thick, about 5-8 minutes. The mixture will be very lumpy looking (not to worry) beat it to smoothness.
- When very thick, remove from heat and beat in cream or milk. Cool.
- this can be made a day ahead and refrigerated.
- In a large bowl, combine all of the coleslaw ingredients.
- Add the cooled dressing and toss lightly to coat with the dressing.
EGG SALAD WITH GREEN OLIVES FOR SANDWICHES
My husband asked for an Egg Salad sandwich for lunch today. This is the way that my mother and her mother made egg salad. I have often seen people add "ripe" or black olives to egg salad, but my family likes the saltiness and a hint of sour that the green olives add.

Steps:
- 1. Place eggs in a pot and add enough water to cover eggs by at least one inch.
- 2. Quickly bring the water to a boil, then remove from heat and let the eggs sit in the hot water for 15 minutes. Remove eggs from hot water and immediately place them in a bowl filled with ice and water until they're cooled completely.
- 3. Peel the cooled eggs and grate them on the large side of a box grater.
- 4. Mix together mayonnaise and mustard; combine with the eggs. Add salt and pepper to taste.
- 5. Refrigerate for at least an hour to allow the flavors to combine.
