Ham, leek & potato pie image

Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

Provided by Jane Hornby

Time 1h5m

Number Of Ingredients 12

2 tbsp butter
1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tbsp plain flour, plus extra for dusting
300ml chicken or ham stock
100ml pot crème fraîche (or use leftover double cream)
2 tsp wholegrain mustard
200g cooked ham, shredded
4 bay leaves, optional
375g pack puff pastry
1 egg, beaten, to glaze (or use milk)

Steps:

  • Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
  • Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
  • Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
  • Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

Amish cheesy ham potato pie recipes are a delicious yet simple dish to prepare. It can be served for breakfast, brunch or lunch, and can be a perfect option for a family gathering or a potluck. The dish is creamy, cheesy, with a perfect balance of savory and salty flavor. Here are some valuable tips to keep in mind when making Amish cheesy ham potato pie recipes. 1. Choose the Right Ingredients: The first and foremost tip for making Amish cheesy ham potato pie recipes is selecting the right ingredients. The quality and freshness of the ingredients will determine the overall taste of the dish. When selecting the potatoes, look for the ones that are firm, with smooth skin and no bruises. The ham should be boneless and chopped into small pieces. The cheese should be fresh and shredded at home, rather than buying pre-shredded cheese, which contains fillers and anti-caking agents that can affect the texture of the dish. 2. Prepare the Potatoes: The success of making an Amish cheesy ham potato pie starts with preparing the potatoes correctly. You can either slice the potatoes into thin rounds, or you can grate them. Slicing provides a chunkier texture, while grating produces a creamier consistency. Ensure that the potato slices or gratings are uniformly sized, so there is an even cooking throughout. If you've chosen to slice the potatoes, parboil them briefly before they are incorporated into the recipe. This will help to ensure that they cook through evenly in the oven. 3. Use the Right Cheese: To get the perfect cheesy, gooey texture, it is important to use the right type of cheese in the recipe. The popular cheese choices for Amish Cheesy Ham Potato Pie are sharp cheddar or Colby Jack. These types of cheese have a strong flavor that can stand up to the saltiness of the ham and the starchiness of the potatoes. It is also important to grate the cheese at home, rather than buying pre-shredded cheese, which contains fillers and preservatives that can affect the texture of the dish. 4. Add the Right Spices: Amish Cheesy Ham Potato Pie recipes typically involve the use of a variety of spices and seasonings. Common seasonings and spices include black pepper, garlic, paprika, and cayenne pepper. These spices provide a depth of flavor and add a pleasant zing to the recipe. Always measure the spices accurately, as an imbalance in seasoning can affect the overall taste of the dish. 5. Cover the Pie: Once you have put all the layers of potatoes, ham, and cheese in your baking dish, make sure to cover it with foil. This will lock in the moisture and prevent the cheese from browning too quickly. Remove the foil during the last 15-20 minutes of cooking to allow the top layer of cheese to brown and become crispy. 6. Be Patient: One of the most important tips when making Amish Cheesy Ham Potato Pie is to be patient. This dish takes time, as it needs to bake at a low temperature for an extended period to ensure it cooks through and creates a crisp top layer. Do not rush the baking process, even if you're pressed for time, as it can affect the overall texture and flavor of the dish. 7. Customize: Amish Cheesy Ham Potato Pie recipes are incredibly versatile, and you can customize them to suit your tastes. If you like a spicier dish, add some jalapeno peppers or red pepper flakes. You can also add in other ingredients, such as sautéed onions, mushrooms, or bell peppers for added flavor and texture. Additionally, if you want to make the recipe a bit healthier, you can substitute regular cheese with low-fat cheese or reduce the amount of cheese used. Conclusion: In conclusion, making Amish Cheesy Ham Potato Pie is simple and easy with these valuable tips. Always use high-quality ingredients, prepare the potatoes correctly, choose the right cheese and spices, cover the pie, be patient, and customize the recipe to your taste. This classic Amish dish is suitable for any occasion, and it's sure to be a crowd-pleaser.
