CHERRY ALMOND AMISH SUGAR COOKIES
Soft, puffy, melt-in-your-mouth sugar cookies, with touches of vanilla, cherry, and almond, and a thick cherry-almond icing! These Cherry Almond Amish Sugar Cookies are guaranteed to be a smash hit for the holidays. Cherry Almond Amish Sugar Cookies are simple to make, foolproof, and a batch goes a long way!

- As noted above, drain the maraschino cherries, reserving the juice (!), finely mince the cherries, and then pat/squeeze VERY dry. Set aside.
- In a large mixing bowl, beat the butter, oil, and sugars until combined.
- Beat in eggs, almond extract, cherry extract, and minced cherries.
- In a large bowl, whisk together flour, baking soda, and cream of tartar.
- Gradually add flour mixture to the butter mixture, beating until just combined after each addition. Do not overmix.
- Line baking sheets with parchment paper or silicone baking mats.
- Drop dough by teaspoonfuls onto baking sheets.
- Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
- Remove to wire racks to cool.
- Whisk together butter, maraschino cherry juice, and extracts.
- Stir in 4 cups powdered sugar, mixing until smooth.
- Add additional maraschino cherry juice or powdered sugar, as needed, to achieve a thick, but spreadable consistency. It should be thicker than a glaze, and it shouldn't run off the cookie, but should be easily spreadable.
- Frost cookies, sprinkle with slivered almonds, decorate with additional sprinkles, if desired, and allow to set.

- Sift together flour,baking powder,soda and salt.
- Combine the shortening and sugar then blend in the eggs.
- Add to this mixture the milk,almond extract and vanilla.
- Blend i the sifted dry ingredients and mix well.
- Add the pecans,cherries and dates,and mix it well again.
- Shape the dough into balls,using 1 level tablespoon per cookie.
- Crush the cornflakes and roll each ball of dough in them.
- Place the balls on greased cookie sheet and top ech one with 1/4 cherries.
- Bake at 375 until done,about 20 minutes.

BLACK FOREST CHERRY COOKIES
These Black Forest Cherry Cookies, are one of my favorite cookies.

Steps:
- 1. Preheat oven to 350°F.
- 2. In a medium size bowl whisk together thoroughly, the flour, unsweetened cocoa powder, baking powder and salt.
- 3. In a medium size saucepan over low heat, melt the butter and 1 cup of semi-sweet chocolate chips; stirring constantly until the chocolate chips have melted.
- 4. Remove the pan from the heat, and cool for 10 minutes.
- 5. Now whisk in the light brown sugar, eggs, and vanilla extract, until blended together.
- 6. Add the flour mixture, and stir until smooth.
- 7. Stir in the chopped cherries and the remaining 1/2 cup of chocolate chips.
- 8. Drop tablespoons of cookie dough, 2 inches apart onto ungreased baking sheets.
- 9. Bake in oven for 10 to 12 minutes, until toothpick inserted in one of the cookies, comes out clean.
- 10. Remove cookies to wire racks to cool completely
- 11. To make the frosting for the cookies: In a medium size bowl beat together, the frosting ingredients. Pipe or spread frosting over each cookie. (I did sprinkle a bit of red sugar over each cookie, to make them look more festive.) Allow cookies to sit for 2 hours, before placing them in a Tupperware like container. These cookies do freeze well.
