We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

Yummy, crusty, cheesy goodness from America's Test Kitchen. Garlicky, but not overpowering. Using a small cheese grater or zester to grate the garlic cloves will give a better texture. Better than store-bought!

5 garlic cloves, grated
8 tablespoons unsalted butter, softened (1 stick)
1/2 teaspoon water
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 baguette, sliced in half horizontally (18- to 20-inch)
1 1/2 cups cheese (shredded Italian blend)

Steps:

  • Preheat oven to 400 degrees. Move rack to the 2nd from bottom space.
  • Saute garlic, 1 tablespoon butter, and water over low heat, 7 to 10 minutes. It forms a paste.
  • Combine hot garlic, 7 tablespoons butter, salt, and pepper in a bowl and spread on both halves of the bread. Put the halves back together and wrap in foil. Place on baking sheet and bake for 15 minutes.
  • Unwrap bread and place halves, buttered sides up, on baking sheet. Bake until it begins to color, about 10 minutes. Take out of oven and turn on the broiler.
  • Sprinkle bread with cheese. Place under the broiler until cheese has melted and bread is crispy, about 1 or 2 minutes. Put on cutting board, cheesy side down. Cut into pieces. Serve.

  • Halve a loaf of Italian bread lengthwise, then crosswise. Mix 3 tablespoons olive oil, 1 clove minced garlic and 1/4 teaspoon dried oregano; brush on the cut sides of the bread and toast 10 minutes at 400 degrees F. Mix 2 tablespoons grated parmesan and 1 cup each shredded asiago and mozzarella; sprinkle on the bread and bake until melted, about 15 more minutes.

CHEESY ROASTED GARLIC BREAD



Cheesy Roasted Garlic Bread image

1 head garlic
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme plus 1/2 teaspoon finely chopped leaves
1/2 large baguette (about a 12-inch piece), split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
  • Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
  • Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
  • Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.
