This recipe used to be on the box of American Beauty Lasagna noodles about 25 years ago. They have since changed their recipe but in my opinion this is the best version!

9 -11 cooked lasagna noodles
1 lb hamburger, browned
1 (1 1/4 ounce) package spaghetti sauce mix
2 (6 ounce) cans tomato paste
4 (6 ounce) cans water
24 ounces cottage cheese
1 lb shredded mozzarella cheese
1 tablespoon dried parsley

Steps:

  • Cook lasagna noodles as directed.
  • Brown hamburger.
  • Add spaghetti mix, tomato paste and water to the browned hamburger.
  • Mix well and simmer for 15 minutes.
  • While sauce is cooking, mix cottage cheese, mozzarella cheese and parsley together.
  • Layer sauce, noodles and cheese mixture in this order in a 9 x 13 baking dish. End with sauce on the top.
  • Sprinkle with parmesan cheese and place in a 350 oven.
  • Bake for 30 minutes.
  • Remove from oven and let stand for 10 minutes before serving.

1 1/2 lbs lean ground beef
1 onion, chopped
2 garlic cloves, minced
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
2 tablespoons brown sugar, not packed down
1 1/2 teaspoons salt
28 ounces diced tomatoes
2 (6 ounce) cans tomato paste
9 -12 dry lasagna noodles
2 eggs, lightly beaten
1 pint part-skim ricotta cheese
1/2 cup grated parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
1 lb mozzarella cheese, shredded
2 tablespoons grated parmesan cheese

Steps:

  • In a skillet, brown ground beef, onions and garlic; drain fat.
  • Stir in basil, oregano, brown sugar, 1 1/2 teaspoons salt, diced tomatoes and tomatoes paste. Simmer for 30-40 minutes.
  • Preheat oven to 375°F (190°C). Bring large pot of salted water to a boil. Add lasagna noodles and cook for 5-8 minutes, or until al dente; drain.
  • In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley, and 1 teaspoon salt.
  • Layer 1/3 of noodles (3-4) in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 of ricotta mixture, 1/2 of mozzarella and 1/3 of sauce. Repeat. Top with remaining noodles and sauce. Sprinkle with 2 tablespoons Parmesan.
  • Bake for 30 minutes. Let stand 10 minutes before serving.

1 tablespoon parsley
1 tablespoon basil
2 1/2 cups canned tomatoes, diced
8 ounces tomato paste
8 ounces lasagna noodles
1 pint cottage cheese
2 eggs, beaten
2 tablespoons parsley
1/2 cup parmesan cheese, grated
1/2 teaspoon pepper
1 lb mozzarella cheese, sliced

Steps:

  • Cook beef until lightly browned.
  • Add garlic powder, 1 T parsley, basil, tomatoes, tomato paste and salt to taste; simmer, uncovered, until thick, about 45 minutes.
  • Combine cottage cheese, eggs, 2 T parsley, parmesan and pepper.
  • In 13 X 9 pan layer noodles (no need to cook the noodles first), meat sauce, cottage cheese mixture and mozzarella; repeat layers.
  • Bake at 375 degrees for 30 minutes.

2 - small cans tomato paste
12 - cooked lasagna noodles
2 - eggs, beaten
1 pint(s) ricotta cheese, part-skim

2 pound(s) shredded mozzarella cheese
1 cup(s) fresh grated parmesan cheese

Steps:

  • Preheat to 375*. spray 9x13 baking dish with non-stick cooking spray.
  • Sauce: Brown Ground beef, onion and garlic. Mix in basil, oregano, brown sugar, salt, diced tomatoes and tomato paste. Simmer for 30 minutes
  • Mix together: eggs, ricotta, ½ cup parmesan cheese, parsley and teaspoon salt.
  • Lay four noodles in bottom of baking dish. Cover with sauce, ricotta mixture and mozzarella cheese. Repeat until out of noodles. Bake uncovered for 30 minutes.
  • Remove from oven and sprinkle with remaining grated parmesan cheese. Serve with Italian salad and crusty garlic bread or bread sticks.
