CHEF JOHN'S AMERICAN GOULASH

Chef John's American Goulash image

One of my all-time favorite comfort food meals growing up was the beef goulash they served in my school cafeteria alongside a slice of buttered white bread and a carton of milk. Little did I know that it wasn't really goulash, but an Americanized version, invented to stretch a small amount of beef into enough food for a not-so-small family. This is one of those very simple dishes that does not taste simple--perfect for your weeknight dinner rotation.

Time 1h15m

Yield 12

Number Of Ingredients 18

1 tablespoon olive oil
1 large onion, diced
2 pounds ground beef
4 cloves garlic, minced
2 teaspoons kosher salt
½ teaspoon ground black pepper
1 pinch cayenne pepper, or to taste
2 tablespoons paprika
2 teaspoons Italian seasoning
2 bay leaves
1 quart chicken broth
1 (15 ounce) can diced tomatoes
1 (24 ounce) jar marinara sauce
1 cup water
2 tablespoons soy sauce
2 cups elbow macaroni
¼ cup chopped Italian parsley
1 cup shredded white Cheddar cheese

Steps:

  • Heat oil in a pot over medium-high heat. Add onion and ground beef. Cook, breaking the meat into small pieces, until browned, about 5 minutes. Cook and stir until liquid is evaporated, 3 to 5 minutes more. Add garlic, salt, black pepper, cayenne, paprika, Italian seasoning, and bay leaves.
  • Cook and stir until flavors come together, about 3 minutes. Pour in chicken broth, diced tomatoes, and marinara sauce. Rinse out the jar with 1 cup water and pour into the pot. Add soy sauce, stir, and bring soup to a simmer. Reduce heat to medium and simmer to let flavors intensify, about 30 minutes.
  • Increase heat to medium-high and bring soup to a simmer. Add macaroni; simmer, stirring occasionally, until just barely tender, about 12 minutes. Check for doneness after 10 minutes.
  • Remove goulash from heat. Discard bay leaves; stir in parsley and Cheddar cheese. Cover and let rest for 5 minutes. Taste and season as desired.

AMERICAN GOULASH, AKA CALICO CASSEROLE

American Goulash, Aka Calico Casserole image

American goulash is usually referred to in the midwestern and southern United States as simply "goulash". In the Inland Northwest around Spokane, it is a common school and home dish simply called "macaroni hamburger and tomato". It has also been called American Chop Suey. Whatever you call it, it is a tasty and inexpensive one-dish meal that lends itself to variations.

CLASSIC AMERICAN GOULASH

Classic American Goulash image

American goulash (AKA slumgullion) is nothing like Hungarian goulash, it is a totally different recipe. A budget recipe, hard to mess up and open to many variations. If desired, leave out the meat and make it vegetarian or even vegan.

Yield 6 serving(s)

Number Of Ingredients 13

1 lb elbow macaroni
4 tablespoons olive oil
1 large diced onion
1 large bell pepper
3 minced garlic cloves
2 lbs ground meat
2 tablespoons soy sauce
2 teaspoons dried Italian herb seasoning
2 teaspoons salt
1 teaspoon black pepper
28 ounces crushed tomatoes
1 (14 ounce) can diced tomatoes
3 cups grated cheese

Steps:

  • Cook the elbow macaroni pasta (or other small pasta) in salted water until tender. Drain.
  • In a dutch oven or large soup pot, put the oil and diced onion. Cook the onion for about 4 minutes over medium heat.
  • Add the bell pepper and cook until just tender.
  • Add the garlic and cook one more minute.
  • Add the ground meat and cook until browned.
  • Drain off any fat.
  • Add the soy sauce (or use Worcestershire sauce), dried Italian herbs, salt and pepper. (Instead of salt I usually use bouillon.) Stir to combine.
  • Add the tomatoes. If you want a stronger tomato flavor, add some tomato paste also.
  • Add the drained pasta and mix well.
  • You will probably need to add more salt at this time. Serve hot with grated cheese for garnish. I also sometimes serve sour cream on the side. This dish is often better the next day.
  • Variations: Some people like to add corn or a can of condensed mushroom soup to their American goulash. You could also add taco seasoning mix and give it a Mexican twist.

American Goulash, also known as Calico Casserole is a comforting and filling meal that traces its roots to Eastern Europe. The dish has since been widely adopted in the United States and has become a staple in many American households. While there are variations in recipes, American Goulash generally includes ground beef, macaroni, tomatoes, and seasonings.

History

The origins of American Goulash can be traced back to Eastern and Central Europe. Goulash is a Hungarian dish made with beef, onions, and paprika. The dish eventually made its way to America, where it was transformed into a heartier meal by adding macaroni, tomato sauce, and other ingredients.

Ingredients

The ingredients for American Goulash can vary depending on the recipe, but the basic ingredients include:
  • 1 pound ground beef
  • 2 cups elbow macaroni
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and pepper to taste

Preparation

The preparation for American Goulash is fairly straightforward.
  1. Begin by browning the ground beef in a large skillet over medium-high heat. Drain any excess fat from the beef and set aside.
  2. Cook the elbow macaroni according to the package instructions. Drain the macaroni and set aside.
  3. Add the chopped onion, green pepper, and garlic to the same skillet used to cook the beef. Sauté until the vegetables are tender.
  4. Add the can of diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper to the skillet.
  5. Add the cooked ground beef and elbow macaroni to the skillet and stir to combine.
  6. Let the mixture simmer for 15-20 minutes, until heated through and the flavors have melded together.
  7. Remove the skillet from heat, and let it cool for 5-10 minutes.
  8. Serve the American Goulash hot, garnished with fresh chopped parsley or shredded cheese if desired.

Variations

There are many variations of American Goulash. Here are a few:
Cheese Goulash
To add some extra creaminess to your American Goulash, consider adding shredded cheese. After the goulash is done cooking, sprinkle shredded cheese over the top of the mixture while it's still hot. Let the cheese melt and then serve.
Southern Goulash
For a Southern twist, swap out the Italian seasoning and paprika for Cajun or Creole seasoning. You can also add diced ham or sausage to the dish for extra flavor.
Mexican Goulash
For a Mexican-inspired dish, add a can of black beans, a can of corn, and some chili powder to the mixture. Serve with a dollop of sour cream and some freshly chopped cilantro on top.

Conclusion

American Goulash is a comforting, filling dish that has become a staple in American households. While the dish has its roots in Eastern and Central Europe, Americans have put their own twist on it by adding macaroni and other ingredients to make it a heartier meal. The dish is easy to prepare and can be customized to suit individual tastes.
American goulash, also known as calico casserole, is a classic comfort food that has been enjoyed by many Americans for generations. This dish is an easy-to-make one-pan meal that is perfect for those busy weeknights when you don't have much time to cook. The dish is made up of ground beef, elbow macaroni, tomato sauce, and a variety of spices and seasonings. However, there are a few tips and tricks that can help make your goulash even better.

Tip 1: Cook the Ground Beef Separately

One of the most common mistakes people make when making American goulash is cooking the ground beef and pasta together in the same pan. This can cause the pasta to become overcooked and mushy, while the ground beef becomes tough and dry. To avoid this problem, cook the ground beef separately in a skillet until fully browned and then drain off any excess fat. This will ensure that your meat is tender and juicy, and the pasta is perfectly cooked.

Tip 2: Choose the Right Pasta

Elbow macaroni is the traditional pasta used in American goulash, but you can also use other types of pasta, such as rotini or penne. The key is to choose a pasta that holds up well in the dish and won't become overcooked or mushy. It's also important to cook the pasta al dente so that it maintains its texture and doesn't turn to mush when mixed with the other ingredients.

Tip 3: Seasoning is Key

American goulash is a dish that is all about flavor, so it's important to use the right seasoning. The dish typically involves garlic, onion, paprika, and chili powder. However, you can also experiment with different seasonings to create your own unique flavor profile. Just be careful not to overdo it with the spices, as this can make the dish too overpowering.

Tip 4: Add Vegetables

To make your goulash even more flavorful and nutritious, consider adding some vegetables to the mix. Bell peppers, mushrooms, and zucchini are all great options that will add some color and texture to the dish. Just be sure to sauté the vegetables before adding them to the goulash, so they become tender and fully cooked.

Tip 5: Let it Simmer

American goulash is a dish that benefits from a long, slow cooking process. Once you've mixed all of the ingredients together in your pan, turn the heat down to low and let the dish simmer for at least 30 minutes. This will allow all of the flavors to meld together and will create a rich and delicious sauce that coats the pasta and meat.

Tip 6: Use High-Quality Ingredients

The key to making a truly delicious American goulash is to use high-quality ingredients. This means using fresh garlic and onions, high-quality ground beef, and good-quality canned tomato sauce. Using high-quality ingredients will ensure that your dish is flavorful, nutritious, and satisfying.

Tip 7: Experiment with Cheese

Adding cheese to your goulash is a great way to take the dish to the next level. Cheddar cheese is a popular choice, but you can also experiment with other types of cheese, such as mozzarella or Parmesan. Just be sure to sprinkle the cheese over the top of the dish once it's cooked, so it has a chance to melt and become gooey.

Conclusion

American goulash is a classic comfort food that is easy to make and perfect for busy weeknights. By following these tips, you can make a delicious and satisfying goulash that your entire family will love. Remember to cook the ground beef separately, choose the right pasta, season well, add vegetables, let it simmer, use high-quality ingredients, and experiment with cheese. With these tips, you'll be making the perfect American goulash in no time.
