Savory Cheddar Apple Hand Pies image

The classic American combo of apples and Cheddar cheese comes together in a flaky crusted hand pie that's great as a Thanksgiving side or even breakfast that morning. We went a little crazy and stuffed the inside with an extra dollop of cheese spread to ensure plenty of gooey filling. These really are as delicious as they are pretty.

Time 1h55m

Yield 16 hand pies

Number Of Ingredients 12

2 tablespoons unsalted butter
1 small yellow onion, halved and thinly sliced
Kosher salt and freshly ground black pepper
2 Granny Smith apples, peeled, cored and cut into 1/4-inch dice
1 teaspoon sugar
Pinch ground ginger
1 tablespoon plus 2 teaspoons chopped fresh thyme
1/4 cup plus 4 teaspoons Cheddar cheese spread
Two 9-inch sheets refrigerated pie dough (from one 14.1-ounce box)
1 large egg
1 tablespoon white sesame seeds
1 tablespoon poppy seeds

Steps:

  • Melt 1 tablespoon of the butter in a medium saute pan over medium-low heat. Add the onion, a pinch of salt and a few grinds of pepper. Cook, stirring frequently, until the onion is softened and caramelized, 8 to 10 minutes. Add 2 tablespoons water and scrape up any browned bits from the bottom and sides of the pan.
  • Increase the heat to medium high. Add the apples and cook, stirring, until just starting to soften, 3 to 5 minutes. Add the remaining 1 tablespoon butter, then sprinkle with the sugar, ginger, 2 teaspoons of the thyme and another pinch of salt. Cook, stirring, until the apples are very tender and light golden, about 6 minutes more. Stir in 1/4 cup of the Cheddar cheese spread and cook until melted and smooth, then remove from the heat. Transfer to a medium bowl and refrigerate until completely cool, about 30 minutes.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • Unroll a pie dough sheet on a cutting board or clean work surface. Cut out 8 circles with a 4-inch round cutter; gather and reroll the dough if necessary. Beat the egg in a small bowl with 1 teaspoon water. Place about 1 tablespoon of the apple filling into the center of a dough round, then top with 1/4 teaspoon of the remaining Cheddar cheese spread. Brush the edges with some egg wash and fold the dough over to make a half-moon shape. Press out the air and seal the edges with a fork. Transfer to one of the prepared baking sheets. Repeat with the remaining dough and filling.
  • Brush the hand pies with more egg wash and sprinkle with the sesame seeds, poppy seeds and remaining 1 tablespoon thyme. Bake until golden brown and puffed, 20 to 25 minutes.

Categories     Pie

Time 3h15m

Yield 8 serving(s)

Number Of Ingredients 12

1 pastry for double-crust pie, chilled (enough for a double crust)
4 lbs apples
3/4 cup sugar
1 lemon, zest of
2 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1/8-1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
2 tablespoons graham cracker crumbs (or dry bread crumbs)
2 tablespoons cold unsalted butter, cut into bits
milk or heavy cream
coarse sugar

Steps:

  • Butter a 9-inch deep dish pie plate (Pyrex is recommended).
  • Working on a well floured surface, roll out 1 piece of the dough to a thickness of about 1/8 inch; fit the dough into the buttered pie plate and trim the edges to ½ inch overhang.
  • Roll the other piece of dough into a 1/8 inch thick circle and slip it onto a baking sheet lined with parchment paper.
  • Cover both the circle and the crust in the pie plate with plastic wrap and refrigerate for 20 minutes, while you preheat the oven and prepare the filling.
  • Position oven rack in center of oven; preheat to 425°.
  • Peel, core, and slice the apples; put apples in a large bowl and add the sugar, lemon zest, tapioca, cinnamon, nutmeg, and salt.
  • Toss everything together well; if you have time, let the mix sit for about 5 minutes, until juice starts to accumulate in the bottom of the bowl.
  • Remove the pie plate and top crust from the refrigerator and put the pie plate on a baking sheet line with parchment paper.
  • Sprinkle the crumbs evenly over the bottom of the crust; turn the apples and their juices into the crust.
  • The apples will heap over the top of the crust, pat them down into an even mound.
  • Dot apples with the bits of cold butter.
  • Very lightly moisten the rim of the bottom crust with water; center the top crust over the apples.
  • Either fold the overhang from the top crust under the bottom crust and crimp the crust attractively, or press the top crust against the bottom crust and trim the overhang from both crusts even with the rim of the pie plate.
  • If you have pressed and trimmed the crust, use the tines of a fork to press the two crusts together securely.
  • Use a sharp paring knife to cut about 6 slits in the top crust.
  • Brush the top crust with a little milk or cream and sprinkle it with sugar.
  • Bake the pie for 15 minutes; decrease oven temperature to 375° and bake for another 50-60 minutes, or until the crust is gorgeously browned and the juices bubble up through the top crust.
  • After about 40 minutes in the oven, if the top crust looks as if it is browning too quickly, cover pie loosely with a foil tent.
  • Transfer pie to a rack and let it rest until it is only just warm or until it reaches room temperature.

Cheddar Cheese Apple Pie image

Provided by Anne Thornton, Host of Dessert First

Time 3h15m

Yield 1 (9-inch) pie

Number Of Ingredients 13

2 1/2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon fine sea salt
1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
1 cup coarsely grated sharp cheddar cheese, firmly packed
5 tablespoons ice water, or more as needed
1 1/2 tablespoons cornstarch
1/3 cup sugar
6 (6 to 7-ounce) Golden Delicious apples, peeled, cored, and thinly sliced
1 tablespoon fresh lemon juice
1/2 teaspoon grated fresh lemon zest
Pinch fine sea salt
2 tablespoons (1/4 stick) chilled unsalted butter, diced

Steps:

  • For the crust: In a food processor, mix the flour, sugar, and salt and blend for 5 seconds. Add the chilled butter and pulse until the dough looks like fine meal. Add the cheese and pulse 5 times. Transfer the mixture to a large bowl and sprinkle with 5 tablespoons of ice water. Use a fork to fluff the mixture until moist clumps form. Add more ice water by the tablespoonful if the mixture is dry. Gather the dough into a ball and divide in half. Shape each half into a disk. Wrap in plastic and chill at least 1 hour.
  • For the filling: Preheat the oven to 400 degrees F. In a large bowl, mix the cornstarch and sugar, making sure there are no lumps in the cornstarch. Mix in the apples, lemon juice, zest, and salt.
  • On a lightly floured surface, roll out 1 of the dough disks into a 13-inch round. Transfer the dough to a 9-inch diameter deep-dish glass pie dish and brush the overhang with water. Pour the filling into the dough-lined dish and dot it with the 2 tablespoons butter. On the same lightly floured surface, roll out the second dough disk into a 12-inch round. Place the dough on top of the filling. Press the overhang of the bottom and top dough pieces together to seal. Cut the overhang to 1/2-inch. Fold the overhang under and crimp decoratively, forming a high-standing rim. Cut 3 (2-inch) slits in the top of the crust to allow steam to escape.
  • Bake the pie until golden brown, about 30 minutes. Cover the crust edge with foil and reduce the oven temperature to 375 degrees F. Bake the pie until the filling bubbles thickly in the center, about 30 minutes. Cool pie on a rack for 1 hour.

One of the most noteworthy and delicious apple pies is the American glory apple cheese pie. This dessert is unique, as it is a combination of two popular desserts – apple pie, and cheesecake. If you are looking for a special dessert to surprise your family or guests at a dinner party, an American glory apple cheese pie is the way to go. In this article, we will give you valuable tips on how to make this dessert.

Tip 1: Choosing the Right Apples

The key ingredient for making an American glory apple cheese pie is the apples. For a homemade American glory apple cheese pie, it is crucial to use the right kind of apples, as this aids in maintaining the texture and flavor of the pie. Granny Smith apples are the most popular apples used in apple pies in America, and they work exceptionally well with this recipe. It's tartness and crispness provide a nice balance to the sweetness of the pie.

Tip 2: The Proper Thickness of the Apple Slices

No one wants to bite into an apple pie and only have mushy or crunchy pieces of apple. It is vital to make sure that you cut the apple slices evenly and maintain the same degree of thickness. If the slices are too thin, they will disintegrate and become mushy during the baking process. On the other hand, if the slices are too thick, they will remain raw in the middle. Therefore, it is essential to make sure that the thickness of the slices is between 1/8 and 1/4 inch.

Tip 3: Pre-cook the Apple Filling

If your American glory apple cheese pie filling is not cooked before baking, the filling will turn out soupy and watery. Pre-cooking the apple filling helps to remove excess water from the apples and makes the pie come out a lot firmer. You can sprinkle the pre-cooked apple filling with a little bit of cinnamon and sugar, which adds flavor to the pie.

Tip 4: The Cheese Filling

The cheese filling is what makes the American glory apple cheese pie stand out from other apple pies. It is essential to use high-quality cream cheese and to make sure that it reaches room temperature before adding the remaining ingredients. The cheese filling should be creamy and smooth, which can be achieved by mixing the ingredients at a low speed. Also, note that the cheese filling should be poured over the apples and not vice versa.

Tip 5: The Pie Crust

The pie crust is a crucial part of any pie. It would be best if you made sure that the crust is golden brown and evenly baked. To achieve this, you must preheat your oven adequately, to around 375°F. It is important to have an even distribution of the crust, with the same thickness on all sides. If the crust is too thick, it will be tough, and if it is too thin, it will become soggy. A good tip is to pre-bake the pie crust for 10 to 15 minutes before adding the filling. This will help to ensure that the crust is fully cooked by the time the filling is done.

Tip 6: Decorate the Pie

The presentation of an American glory apple cheese pie is as essential as the taste. Once your pie is baked, it would be best to add some decorative touches to make it more appealing. You can use a knife or a pastry cutter to create some decorative edges around the crust. To add a rustic touch, you can also create slits in the middle of the pie, which will allow the steam to escape while it's baking. Finally, it would help if you added more cheese filling atop the pie, and sprinkle it with cinnamon and sugar.

Conclusion

Making an American glory apple cheese pie is a fantastic dessert that will impress your guests. Adding a cheesecake filling to the apple pie creates a unique and flavorful experience that will surprise your diners. By following these valuable tips in terms of the choice of ingredients, cutting the apples to the right thickness, pre-cooking, cheese filling, pie crust, and decoration, you will make a pie that will be fit for even the most discerning diner. Take your time and enjoy the experience of making the American glory apple cheese pie. It is an excercise that requires patience and skills, but which can ultimately be very rewarding for you and all those who will taste this amazing dessert.
