I think I have made this since I have been married ~ that would be 46 years ago. Add extra things to it as the mood hits. Always quick and easy meal and usually have hamburg in the freezer. Steps:
- 1. In large saucepan, I use my cast iron fry pan, coat with a little olive oil, add hamburg and chop it all up on medium heat. While that is cooking cut up your peppers, onion and zucchini and celery. Drain fat from pan and add your peppers and onions to hamburg and fry them lightly, then add 1 cup of water and your zucchini and celery pushing them down into the water to simmer.
- 2. When tender add tomato paste and seasonings and stir to mix all together.
- 3. Add your cooked elbow macaroni and 1 cup of water that you cooked the elbows in. I cover and let simmer to combine all flavors. When all is tender and combined, remove cover. Mix all well and add your Parmesan cheese and a little sugar to reduce acid. At this point I always put 1 Tablespoon of butter in as it makes the sauce smooth and silky. Before serving I sometimes sprinkle grated cheese on top as well. Muncha

- 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
- 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
- 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

- Prep your veggies by washing your bell pepper, and then chopping your onions and bell pepper into small pieces
- Preheat your frypan and when hot add the oil
- Once the oil is good and hot go ahead and add your ground beef. Make sure to brown the beef to get that great flavor. Remove the ground beef when cooked through.
- Now, get the water boiling for the elbow macaroni. Once the water is boiling add your macaroni and cook until al dente. Strain the water out of the macaroni.Add a little bit of oil to the macaroni elbows to make sure they dont stick.
- In the same frying pan go ahead and saute the onions and peppers. Add more oil if needed.After the onions are translucent go ahead and add the sauce, salt, Italian seasoning and ground beef to the pan. Bring to a boil.After it gets to a boil turn it down to a simmer.
- Now add it all together. Pour the sauce over the cooked elbows and mix it all together.

This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

- Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.

- Add tomato soup.
- Cook hamburger in a skillet until redness is gone. Add to soup mixture and simmer for awhile.
- Add macaroni to a pot of boiling water. Cook until macaroni is al dente. Drain. Add soup mixture to macaroni, stir and season to taste.

- 1. Cook onion and green pepper in oil on medium heat for 10 minutes. Stir in garlic for half a minute.
- 2. Add ground beef and cook until pink is gone. Spoon off fat. Add tomatoes and stir in tomato paste, water, oregano, crushed red pepper and salt & pepper.
- 3. Cover and simmer for 30 minutes, meanwhile cook elbows according to package directions.
- 4. Stir cooked elbows into finished sauce. When serving, sprinkle with cheese.
