ALL-AMERICAN APPLE PIE

All-American Apple Pie image

It's the 4th of July...what better way to celebrate than with an All-American dish like homemade apple pie?? There are lots of recipes out there, but I prefer this one that calls for the addition of cinnamon, nutmeg, and ginger for some added spice. Also, I like my apple pie overflowing with apples (an apple pie isn't supposed to be flat like a pumpkin or cream pie!) so this version has LOTS! The ingredients list granny smith, but I tend to use a variety, incorporating granny smith, gold delicious, and braeburn.

Categories     Pie

Time 4h20m

Yield 1 pie, 10 serving(s)

Number Of Ingredients 17

2 1/2 cups all-purpose flour
1 tablespoon sugar
3/4 teaspoon salt
10 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1/3 cup chilled vegetable shortening, diced
6 tablespoons ice water
1/2 cup sugar
1/4 cup golden brown sugar
3 tablespoons all-purpose flour
1 tablespoon lemon juice
2 teaspoons grated lemon peel
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
3 1/2 lbs granny smith apples, peeled, cored, sliced into 1/4-inch thick slices
1 tablespoon milk
1 teaspoon sugar

Steps:

  • For the Crust: Blend flour, sugar and salt in a food processor.
  • Add butter and shortening and cut in, until mixture resembles coarse meal.
  • Add 6 tablespoons ice water and process until clumps form, adding more water by teaspoonfuls if dough is dry (I never need more than 6 tablespoons).
  • Gather into ball; divide into 2 pieces.
  • Flatten each into a disk. Wrap each in plastic; chill at least 2 hours. Can be made a day ahead.
  • For the filling: Position oven rack in lowest rack of oven and preheat to 400°F
  • Mix all of the filling ingredients except apples in large bowl. It should be very dry and clumpy -- not really a 'sauce' at all.
  • Add apples and coat.
  • To assemble: Flour a sheet of parchment paper; roll out 1 dough onto paper until it is a 12-inch round.
  • Transfer to 9-inch-diameter glass pie dish by flipping the paper over, then gently pressing so that the dough is along the bottom of the pie dish. There should be an overhang all the way around.
  • Add filling.
  • Roll out second dough to 13-inch round. Cut into twelve 1-inch wide strips. Arrange 6 strips across pie, leaving gaps between the filling and the lattuce along the way (that will make weaving the others easier).
  • Form lattice by arranging 6 strips across the first strips, taking care as you go. If one breaks, don't worry--just tuck the break underneath!
  • Gently fold over the edges onto the lattice, pressing with a fork to seal.
  • Brush lattice with milk, and sprinkle lightly with additional sugar.
  • Cover edges with foil and bake pie 10 minutes.
  • Without opening the oven (I know, its so hard to resist!), reduce oven temperature to 375°F
  • Continue baking until juices are thickened and crust is golden, about 1 hour 10 minutes.
  • Allow to cool for at least one hour before eating.

GRAMMY'S ALL-AMERICAN APPLE PIE

Grammy's All-American Apple Pie image

I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

Provided by Angela (Grammy) Derby

Categories     Pies

Number Of Ingredients 8

crust for 2 9" pies (use for top and bottom)
1 c sugar
1/3 c flour
1 tsp nutmeg
2 tsp cinnamon
dash of salt
8 c thinly sliced, pared apples (my family loves mcintosh)
3 Tbsp butter

Steps:

  • 1. Heat oven to 425'F. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with the apples until all are coated.
  • 2. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut into it, or use a fork to make holes in the top. (This allows steam to escape.) Seal the edges and using your fingers, make a flute all around. Place onto a baking tray, to catch any spills.
  • 3. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in crust. If the top starts to get too browned, cover it with foil too

Apple pie is a quintessential American dessert, loved by millions across the country. It is a classic dessert that has been enjoyed for generations, and remains a staple in American households. Whether it's a family gathering, holiday celebration, or just a lazy afternoon, there is no better way to enjoy an apple pie than with a scoop of vanilla ice cream. American apple pie recipes are diverse and vary from region to region, but they all have one thing in common – the perfect balance of sweet and tart, with a flaky, buttery crust.

History of Apple Pie in America

The history of apple pie in America can be traced back to the early settlers who brought with them their recipes for fruit pies. Apples were a popular fruit in early America and were used for both savory and sweet dishes. Apple pie quickly became a favorite dessert, and by the 19th century, it had become a symbol of American ingenuity and resourcefulness. In fact, apple pie was so deeply ingrained in American culture that during World War II, the saying "as American as apple pie" became a popular slogan.

Ingredients of American Apple Pie

American apple pie recipes typically call for the following ingredients:
  • Flour
  • Sugar
  • Butter or shortening
  • Apples
  • Lemon juice
  • Cinnamon
  • Nutmeg
  • Salt
Crust
The crust of the apple pie is one of the most important components. It is typically made from flour, sugar, butter or shortening, and salt. The crust must be rolled out thin and evenly to ensure that the pie will bake evenly. Some recipes call for a top layer of crust while others call for a lattice top.
Filling
The filling of the apple pie is also critical. The star of the show is, of course, the apples. Tart apples such as Granny Smith are popular for their firm texture and tartness, which balances well with the sweetness of the sugar. To prevent the apples from getting too mushy during the baking process, it is important to use apples that are firm and hold their shape. Other flavorings such as lemon juice, cinnamon, nutmeg, and sugar are added to the filling to enhance the flavor.

Types of American Apple Pies

There are many variations of American apple pie recipes. The most common types include:
  • Classic Apple Pie
  • Dutch Apple Pie
  • Caramel Apple Pie
  • Sour Cream Apple Pie
  • French Apple Pie
  • Apple Crumb Pie
Classic Apple Pie
Classic apple pie is the quintessential American dessert. It is made with a double crust, which encases a filling of tart apples, cinnamon, sugar, butter, and lemon juice. The filling is poured into the bottom crust and enclosed with a top crust, which is usually vented to allow steam to escape during baking.
Dutch Apple Pie
Dutch apple pie, also known as crumb-topped apple pie, is made with a sweet and crumbly topping of flour, sugar, butter, and cinnamon. The apple filling is made similarly to classic apple pie and is poured into the pie crust. The crumb topping is then sprinkled over the top of the filling, and the pie is baked until golden brown.
Caramel Apple Pie
Caramel apple pie is a decadent twist on the classic dessert. It is made with a filling of sliced apples, cinnamon, sugar, and a drizzle of caramel sauce. The pie is then baked until the filling is bubbly and the crust is golden brown.
Sour Cream Apple Pie
Sour cream apple pie is a unique take on the classic dessert. It is made with a filling of sliced apples, sour cream, sugar, and cinnamon. The sour cream adds a tangy depth of flavor to the pie, and the filling is poured into a pre-baked pie crust and baked until golden brown.
French Apple Pie
French apple pie, also known as tarte tatin, is a French twist on the classic American dessert. It is made by caramelizing apples in a mixture of sugar and butter, then baking them in a pie crust until golden brown. The pie is then flipped over so that the caramelized apples are on top, and served warm with a dollop of whipped cream.
Apple Crumb Pie
Apple crumb pie is a flavorful and easy-to-make dessert. It is made with a filling of sliced apples, sugar, and cinnamon, and is poured into a pre-baked pie crust. A crumbly topping made of flour, sugar, butter, and cinnamon is then sprinkled over the top of the filling, and the pie is baked until golden brown.

Conclusion

American apple pie recipes are a delicious and timeless addition to any dessert table. American Apple Pie is undoubtedly one of the most loved and cherished desserts all around the world. Known for its buttery and flaky crust, juicy and spiced apple filling, and the irresistible aroma, Apple Pie is the epitome of comfort food. Making the perfect American Apple Pie can be a challenging task, but with some valuable tips, you can achieve success every time you bake it. Here are some valuable tips that will help you make the perfect American Apple Pie.

Tip 1: Choose the Right Apples

The choice of apples plays a significant role in the taste and texture of your Apple Pie. Some apples are tart and juicy, while others are sweet and firm. For best results, you should use a combination of both types of apples. Granny Smith, Honeycrisp, Braeburn, Jonathan, and Rome apples are some of the best apples for making Apple Pie. Make sure you choose apples that are firm and fresh, without any blemishes or bruises.

Tip 2: Don’t Overwork the Dough

The key to a perfect crust for your Apple Pie is to handle the dough with care. Overworking the dough can make it tough and chewy, which can ruin the texture of your pie. To keep your dough tender and flaky, handle it gently, and avoid over-rolling or stretching it. You can also refrigerate the dough for at least 30 minutes before rolling it out, which makes it easier to work with.

Tip 3: Keep the Dough Cold

One of the essential tips for making a perfect Apple Pie is to keep the dough cold. Cold dough is easier to handle, and it produces a flakier and more tender crust. You can chill the dough in the refrigerator for at least 30 minutes or freeze it for up to a month. You can also freeze the rolled-out dough in the pie dish, which saves time and effort in the future.

Tip 4: Use the Right Spices

Spices are an integral part of Apple Pie filling, and they give it its characteristic aroma and flavor. Cinnamon, nutmeg, and allspice are the most commonly used spices in Apple Pie recipes. You can also add a pinch of cloves or ginger to enhance the flavor. The amount of spices you add depends on your personal preference, but a teaspoon of cinnamon and a quarter teaspoon of nutmeg are the standard measurements for most recipes.

Tip 5: Preheat the Oven

Preheating the oven is crucial for baking a perfect Apple Pie. A hot oven ensures that the crust becomes crispy and golden brown, while the filling is cooked through. Preheat your oven to 375°F or 190°C, and place a baking sheet on the bottom rack to catch any spills. You can also brush the top of the pie with egg wash or milk to get a shiny and golden crust.

Tip 6: Use Cornstarch or Flour to Thicken the Filling

The filling of an Apple Pie should be thick and gooey, and not runny or soupy. To achieve the right consistency, you can use cornstarch or flour to thicken the filling. Cornstarch is the preferred thickener as it produces a clear and shiny filling. You can use one or two tablespoons of cornstarch, depending on the juiciness of the apples. Flour is an alternative thickener, but it can make the filling cloudy and opaque.

Tip 7: Use an Egg Wash for a Shiny Crust

An egg wash is an essential step in making a perfect Apple Pie. It gives the crust a shiny and golden finish and helps it to stick together. To make an egg wash, beat an egg yolk with a tablespoon of milk or cream, and brush it over the top of the crust. You can also sprinkle some coarse sugar on top for a crunchy texture.

Tip 8: Let the Pie Cool Before Serving

One of the common mistakes people make while making Apple Pie is serving it too soon. Apple Pie needs to cool down for at least an hour before cutting it. Cutting it too soon can make the filling runny and the crust soggy. You can also reheat the pie in the oven for a few minutes before serving to get that fresh-out-of-the-oven taste.

Conclusion

Making a perfect American Apple Pie is not rocket science, but it requires some patience, skill, and the right tips. By choosing the right apples, using the right spices, and handling the dough with care, you can make a perfect Apple Pie that will impress your family and friends. And don’t forget to let it cool down before serving to get the best results. Happy Baking!
