2 large eggs

2 cups quick oats
12 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, cream butter and.

1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 cup chopped walnuts
1 cup flaked coconut

Steps:

  • Sift flour, baking powder, soda and salt. In a separate bowl cream butter until fluffy; add sugars, eggs and vanilla. Beat well.
  • Add flour mixture to butter mixture. Mix well. Stir in oats, nuts, and coconut. Mix until well blended.
  • Bake on ungreased cookie sheets for 10-12 minutes at 350 degrees F (180 degrees C).

These are the cookies my mom used to make and I haven't found a better recipe anywhere! I also like to mix in white chocolate chips or the Nestle swirled chips. Just make sure to put some of the swirled chips on top of each ball right before you cook them.

2 teaspoons vanilla
1 egg
2 1/4 cups unbleached all-purpose flour

2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 375°F.
  • In a small mixing bowl, stir together flour, baking soda and salt.
  • Set aside.

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray.

2 large eggs

1 orange (ZEST only ~ save juice and pulp for another use)
8 ounces crushed pineapple (DRAINED WELL)
1 cup sweetened flaked coconut
1 cup pecans (TOASTED and chopped)

  • Preheat oven to 350F with rack in the center.

1 cup golden raisin
1/3 cup diced dried apricot
2 3/4 cups all-purpose white flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, slightly softened
2/3 cup corn oil
2 cups packed light brown sugar
1 large egg
2 1/2 teaspoons vanilla extract
1 pinch of finely grated orange zest (optional)
1 1/2 cups shredded sweetened coconut
1 1/3 cups corn flakes, crushed
1 1/4 cups candied pineapple
1 cup chopped pecans
2/3 cup old fashioned oats, tip, to crush corn flakes, place in plastic bag and squeeze several times
