This recipe is a no fail for the most tenderest wings, drumsticks, and even turkey necks you will find. You can do just wings, or just drumsticks, or just necks. Also, You can lightly brush them with your favorite bbq sauce just before putting them in the oven. Enjoy. :)

- Preheat oven to 250F (low). Heat 1 tbsp butter and the olive oil in a large ovenproof skillet (or transfer to 9x13 after browning) over medium high heat.
- Add wings and drumsticks only. Sear outside to brown, turning as needed, about 5 minutes.
- Add necks so that all the meat is single layer in the pan. Season well with remaining butter, salt, and black pepper. (Brush with BBQ sauce now if using).
- Cover tightly with lid or aluminum foil and bake for about 3 1/2 hours (4 hrs if using legs).
- Carefully remove lid (watch for steam). Enjoy.

- Preheat oven to 350 degrees F. rinse the turkey legs and pat dry.
- Stand the turkey legs upright (as if turkey were standing). Press a knife downward into the deep tissue, creating 2 or 3 long pockets. Press a piece of celery into each opening. Pull back the skin on the legs, rub with butter, and season lightly with salt. Lay the leges in a roasting pan.
- Roast uncovered for 1 1/2 to 2 hours, until legs are golden brown and the internal temperature is 180 degrees F when taken with a meat thermometer. Add more water if needed while roasting and baste occasionally with the juices or butter.

- Ingredient amounts are any amount you wish to use.
- This is a method more than a recipe since the amounts you use will depend upon how many you are serving and whether you want to have turkey to freeze for future casseroles/salads.
- Generally speaking, roast 6 legs/wings at a time, usually enough for supper and lots left for freezing Ask your butcher to cut the turkey legs crosswise for you, dividing each one of them into three pieces, a bony part at the bottom which is saved for broth making and two equal portions from the fleshy part of the leg.
- Place the fleshy parts of the legs in an uncovered roaster, and bake at 375 degrees for 1 hour.
- Sprinkle the legs with sage, salt and pepper, add water to roaster, cover and bake at 325 degrees for 1 hour.
- Remove the roaster from the oven, add the potatoes, onions and carrots, sprinkle them with salt and pepper, cover roaster and roast for another hour or until veggies are tender.
- (Those troublesome tendons in the turkey legs which cause so much trouble are very easy to remove after the meat is tender.) Serve the turkey and veggies, counting exchanges for the portion used.
- After the unused turkey is cool enough to handle, remove the meat from the bones and freeze in portions to use for future casseroles or salads.

BUFFALO CRANBERRY TURKEY LEGS

- Preheat oven to 425 degrees F. Line a baking sheet with a couple sheets of foil, for easy clean up. Then place an oven-safe wire rack onto the baking sheet. Set aside.
- In a large bowl, toss together the turkey legs, olive oil, salt, pepper and poultry seasoning until evenly coated. Place the turkey legs onto the wire rack over the baking sheet. Roast for 30 minutes, turning over halfway.
- In the meantime, place the cranberry sauce into a blender or food process with a splash of water and blend until smooth. Pour out into a medium saucepan, along with the buffalo sauce and honey. Cook over medium heat, stirring often, until the mixture has thickened and reduced by a third, about 15 minutes.
- After the turkey legs have cooked for 30 minutes, baste them with the cranberry buffalo sauce every 15 minutes, turning them over after each basting. Continue cooking and basting them for another hour and a half or until the internal temperature reaches 180 degrees F.
- Remove from the oven and baste once more. Allow to rest for about 15 minutes before transferring to a plate or platter. Garnish with a sprinkling of blue cheese and fresh cranberries before serving.

My mum did this and I've made them since. The sauce would go well with chicken or ribs, but it takes the question out of what to do with turkey wings. Plus it's a change from the usual and it tastes good.

- In saucepan, melt butter. Add onion and garlic and cook until onion is soft.
- Stir in chili powder and cook one minute.
- Add ketchup, brown sugar, lemon juice, salt basil, pepper and Tabasco. Stirring constantly, bring sauce to a simmer.
- Remove from heat; set aside.
- Place turkey pieces in large roasting pan. Pour sauce evenly over pieces. Cover with foil and bake at 350°F for two hours.
- Remove foil and continue baking for 20 minutes.

- Heat oven to 250 degrees. Spread bread cubes in an even layer on 2 rimmed baking sheets. Bake until edges have dried, but centers still slightly moist (cubes should yield to pressure)., 45-60 minutes, stirring several times during baking. Transfer dried bread to large bowl and increase oven to 375.
- While bread is drying, use a paring knife to poke each chicken segment 4-5 times. Heat oil in a 12 inch skillet over med-high heat, until shimmering. Add wings to skillet and cook until golden brown on both sides, about 8 minutes. Transfer wings to separate bowl and set aside.
- Melt the butter in the fat left in the skillet over med heat. Add onion, celery and 1/2 tsp salt and cook, stirring occasionally, until vegetables are softened (7-9 minutes). Stir in thyme, sage and pepper and coom until fragrant, about 30 seconds. Stir in one cup broth, scraping up any browned bits, and bring to a simmer. Remove from heat, add this vegetable mixture to the bowl with the dried bread, toss to combine.
- Grease a 13x9 inch baking dish. Whisk the eggs, remaining 2 cups chicken broth, 1 1/2 tsp of salt and any accumulated juices from the wings in a bowl. Add this to the bread mixture withe the chopped parsley and toss to combine. Transfer to the prepared baking dish. Arrange wings on top of stuffing, cover tightly with foil, and place baking dish on a rimmed baking sheet.
- Bake on lower rack until wings register 175 degrees, about 60 minutes.
- Remove foil and transfer wings off stuffing to reserve for another use (soup or salad maybe). Gently fluff stuffing with fork, let rest 5 minutes before serving.
