Yield 6

Number Of Ingredients 10

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Let rest for 10 minutes before slicing and serving.

Meatloaf is a classic American dish that is a favorite of many. It is a versatile and delicious dish that can be served for any meal of the day. While there are many different meatloaf recipes, the key to making an amazing meatloaf is to follow some important tips. In this article, we will discuss some valuable tips on how to make the perfect meatloaf, my way.

Tip 1: Choose the right meat

The first and most important tip for making a delicious meatloaf is to choose the right mix of meat. Many people use only ground beef, but combining beef with pork or veal can add extra flavor and moisture to the dish. The ideal meat mix for meatloaf is a combination of 2/3 beef and 1/3 pork or veal. This combination results in a perfect blend of flavors and texture for a juicy and flavorful meatloaf.

Tip 2: Use the right binder

Another important component of an amazing meatloaf is the binder. A binder is what holds the meatloaf together and prevents it from falling apart. The traditional binder for meatloaf is breadcrumbs, but you can also use crushed crackers, cornmeal, or oatmeal depending on your preference. It is essential to use a generous amount of the binder in your meatloaf to ensure it holds together and stays moist.

Tip 3: Use flavor enhancers

The third tip for making amazing meatloaf is to use flavor enhancers. Flavor enhancers are ingredients that add an extra layer of flavor to your meatloaf. Some popular flavor enhancers for meatloaf are Worcestershire sauce, soy sauce, ketchup, mustard, and herbs like parsley, thyme, and oregano. Using the right amount of these flavors can take your meatloaf from ordinary to extraordinary.

Tip 4: Add cheese

Cheese is a great ingredient to add to your meatloaf for additional flavor and moisture. Adding shredded cheddar, parmesan, or mozzarella cheese can give your meatloaf a delicious cheesy flavor that is bound to please. You can mix the cheese into the meat mixture or add it as a layer in the middle of your meatloaf for a tasty surprise.

Tip 5: Use a glaze

A glaze is an essential component of an amazing meatloaf. A glaze is a sweet and tangy sauce that is brushed onto the top of the meatloaf before baking. A glaze can be made from a combination of ketchup, brown sugar, garlic, and Worcestershire sauce. It adds an extra layer of flavor and moisture to the meatloaf, and also gives it a beautiful caramelized crust.

Tip 6: Don't overmix

Overmixing the meat mixture is a common mistake when making meatloaf. Overmixing can cause the meatloaf to become tough and dry. It is important to mix the ingredients just enough to combine them, but not enough to overwork the meat. A good rule of thumb is to mix the ingredients until they are just combined, then stop.

Tip 7: Let it rest

Giving your meatloaf time to rest before slicing is another important tip for making amazing meatloaf. Allowing the meatloaf to rest for at least 10 minutes after baking will allow the juices to settle and be reabsorbed by the meat. This will result in a juicier and more flavorful meatloaf.

Conclusion

Meatloaf is a classic dish that is easy to make and always satisfying. By following these valuable tips, you can make an amazing meatloaf that is moist, flavorful, and delicious. Remember to choose the right mix of meat, use the right binder, add flavor enhancers, add cheese, use a glaze, do not overmix, and let it rest. With these tips, you are sure to make the perfect meatloaf, your way.
