Some years ago, I was a cook on a large cattle ranch. One day, I thought back to the hush puppies I'd had as a child on a southern trip, and I ended up creating my own version of them. They go well as part of an old-fashioned fried chicken dinner with mashed potatoes and gravy, buttermilk biscuits, corn on the cob and watermelon pickles! -Karyl Goodhart, Geraldine, Montana

Hush puppies are a delicious and crispy side dish that is often served with seafood dishes. This Southern comfort food is loved by many, and it is easy to see why. With a crispy crust and a soft center, hush puppies are irresistible. But, making hush puppies can be quite tricky. To help you make the perfect hush puppies, we have compiled a list of valuable tips that you can follow.

1. Proper Equipment

The first step to making amazing hush puppies is having the right equipment. You will need a deep fryer or a frying pan for frying the hush puppies. A deep fryer can give you a more even fry, but a frying pan will work just fine. You will also need a slotted spoon or a spider to remove the hush puppies from the oil. Additionally, a bowl, a whisk, and a measuring cup will be used for mixing the batter.

2. The Batter

The batter is the most critical part of the hush puppies. You need to get the right consistency to achieve the perfect texture. The batter should be thick enough to hold its shape, but not too thick that it does not spread in the fryer. The ideal texture of the batter is creamy and smooth, without any lumps.
2.1 Cornmeal to Flour Ratio
The ratio of cornmeal to flour can affect the texture of the hush puppies. A higher proportion of cornmeal will make the hush puppies crispy on the outside and tender on the inside. However, a higher ratio of flour will make the hush puppies dry and less flavorful. Therefore, it is recommended to use a 50-50 ratio to achieve the perfect balance of texture and flavor.
2.2 Liquid to Dry Ingredients Ratio
The correct ratio of liquid to dry ingredients is crucial in achieving the perfect consistency. Too much liquid will make the batter runny and cause the hush puppies to flatten in the fryer. On the other hand, too little liquid will make the batter too thick, resulting in heavy and dense hush puppies. A good rule of thumb is to use one cup of liquid for every two cups of dry ingredients.

3. Flavors and Enhancements

The key to making amazing hush puppies is to add flavors and enhancements to the batter. Some popular additives include diced jalapenos, green onions, chopped garlic, and grated cheese. Additionally, spices such as paprika, cumin, and cayenne pepper can add a depth of flavor to the hush puppies.
3.1 Preparing Additives
If you decide to add jalapenos or onions, make sure to finely chop them before adding them to the batter. The smaller the pieces, the easier it will be to mix them into the batter. Additionally, you can sauté the onions or garlic before adding them to the batter to enhance their flavor.
3.2 Resting the Batter
Allowing the batter to rest for 10-15 minutes before frying will help the flavors develop and create a more tender and flavorful hush puppy. This also allows the cornmeal and flour to absorb the liquid, making the batter thicker and easier to handle.

4. Frying the Hush Puppies

Frying the hush puppies can be a bit messy and tricky, but following these tips can help you get it right every time.
4.1 Oil Temperature
The oil temperature is crucial in achieving the perfect texture. If the oil is too hot, the hush puppies will burn on the outside and remain undercooked inside. If the oil is not hot enough, the hush puppies will soak up the oil and become greasy. The ideal temperature for frying hush puppies is 350°F to 375°F.
4.2 Frying in Batches
Frying too many hush puppies at once can cause the temperature of the oil to drop, making the hush puppies greasy and soggy. Fry the hush puppies in batches to ensure that they cook evenly and maintain their crispy texture.
4.3 Drain Excess Oil
After removing the hush puppies from the fryer, place them on a wire rack or a paper towel-lined plate to drain off excess oil. This will help to keep the hush puppies crispy and prevent them from becoming greasy.

Conclusion

With these tips, making amazing hush puppies is easy. By using the proper equipment, getting the right batter consistency, adding enhancements, and frying at the proper temperature, your hush puppies will turn out perfectly crispy and flavorful every time. Whether you are serving them with fried catfish, shrimp, or crab cakes, your guests will love these Southern comforts.
