MEATBALLS

Meatballs image

This classic baked meatball recipe is easy to make, full of great flavor, and totally versatile. Pair it with your favorite Italian marinara sauce, BBQ sauce, Swedish cream sauce...and beyond!

Provided by Ali

Time 45m

Number Of Ingredients 14

1 cup Panko breadcrumbs
1/3 cup milk
1 pound ground beef
1 pound ground pork
4 cloves garlic, pressed or minced
2 eggs
1 cup (1 1/2 ounces) finely-grated Parmesan cheese
1/4 cup finely-chopped fresh Italian herbs (I used half parsley, half basil)
1/4 cup grated yellow onion
2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large mixing bowl, stir together the panko and milk until combined. Set mixture aside to soak for 5 to 10 minutes while you prepare the other ingredients.
  • Add the ground beef, ground pork, garlic, eggs, Parmesan, fresh herbs, onion and Worcestershire sauce to the (same) mixing bowl. Sprinkle the oregano, salt, black pepper and crushed red pepper flakes evenly on top. Use your hands to mix the ingredients until evenly combined, being careful not to over-mix the ingredients.
  • To make the meatballs easier to form, I recommend covering and chilling the mixture in the refrigerator for 1 hour. But if you're pressed for time, you can skip this step.
  • Heat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  • Using a medium cookie scoop or a spoon, scoop and roll the mixture into 2-tablespoon balls and place them on the prepared baking sheet. (I recommend greasing your hands with a bit of olive oil to prevent the mixture from sticking.)
  • Bake for 10-12 minutes, or until an instant-read thermometer measures the internal temperature of the meatballs to be 160°F. Remove pan and transfer to a wire cooling rack.
  • Serve meatballs immediately and enjoy!

EXCELLENT MEATBALLS

Time 1h23m

Yield 18 to 20 meatballs

Number Of Ingredients 20

Extra-virgin olive oil
1 large onion, 1/4-inch dice
Salt
2 cloves garlic, smashed and chopped
Pinch crushed red pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
2 large eggs
1 cup grated Parmigiano
1/4 cup finely chopped fresh Italian parsley leaves
1 cup breadcrumbs
1/2 cup water
Marinara Sauce, recipe follows
1/4 cup extra-virgin olive oil
1/4 pound diced pancetta
2 large Spanish onions, cut into 1/4-inch dice
Kosher salt
4 large garlic cloves, smashed and chopped
4 (28-ounce) cans Italian plum San Marzano tomatoes

Steps:

  • Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and the crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.
  • In a large bowl combine the meats, eggs, Parmigiano, parsley and bread crumbs. It works well to squish the mixture with your hands. Add the onion mixture and season generously with salt and squish some more. Add the water and do 1 final really good squish. The mixture should be quite wet. Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more. Add more anyway.
  • Preheat the oven to 350 degrees F.
  • Shape the meat into desired size. Some people like 'em big some people like 'em small. I prefer meatballs slightly larger than a golf ball. Coat a large saute pan with olive oil and bring to a medium-high heat. Brown the meatballs on all sides. Place them on a cookie sheet and bake them in the preheated oven for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! YUM!
  • Coat a large saucepot with olive oil and add the pancetta. Bring the pot to a medium-high heat and cook the pancetta for 4 to 5 minutes. Add the onions, season generously with salt and stir to coat with olive oil. Cook the onions for 6 to 7 minutes stirring frequently. The onions should become very soft and aromatic but have no color. Add the garlic and cook for another 2 to 3 minutes stirring frequently.
  • Pass the tomatoes through the food mill. Be sure to pass all of the pulp through the holes leaving only the stems and the seeds, and be sure to scrape the pulp off of the bottom of the food mill. That's all of the big money stuff! Add the tomatoes to the pot and rinse out 1 of the empty tomato cans with water and add that water to the pot (about 2 to 3 cups). Season generously with salt and TASTE IT!!!! Tomatoes take a lot of salt. Season in baby steps and taste every step of the way. Cook the sauce for 2 to 3 hours, stirring occasionally and tasting frequently.
  • Use the sauce right away on pasta or for any other tomato sauce need. This sauce can also be cooled and stored in the refrigerator for a few days and freezes really well.
  • Yield: 2 quarts

THE BEST MEATBALLS

The Best Meatballs image

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Time 50m

Yield 8

Number Of Ingredients 11

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

Tips for making amazing homemade meatballs

Making homemade meatballs is not as difficult as one might think. With a little patience, creativity and attention to detail, it is possible to whip up mouth-watering meatballs that will impress your family and friends. In this article, we will outline some helpful tips to make amazing homemade meatballs recipes that will leave everyone craving for more.
1. Choose the right meat
The first step in making delicious meatballs is to choose the right meat. For optimal texture and flavor, ground beef with a 80/20 ratio of meat to fat is recommended. Other alternatives include ground turkey, chicken or pork, depending on your preference. It is important to select meat that has some fat content for moistness and to avoid using lean meat, which can result in dry and tough meatballs.
2. Add flavor with aromatics
Aromatics such as onions and garlic are key ingredients in meatball recipes. They add depth of flavor to the meat and help to balance out the richness of the meat. The onion adds sweetness and moisture, while the garlic adds a subtle pungency to the meat. Sautéing the onions and garlic beforehand can help to remove sharpness from them and bring out their natural sweetness.
3. Use breadcrumbs or filler
Breadcrumbs or a filler such as oats or quinoa can be used to add texture to the meatballs and help to bind the ingredients together. Depending on the recipe, breadcrumbs can be soaked in milk or water for added moisture or flavor. It is important not to add too much filler, as this can result in dry and crumbly meatballs.
4. Don’t overwork the meat
When mixing together the ingredients for the meatballs, it is important not to overwork the meat. Overworking the meat can make it tough and result in a denser meatball. The key is to gently combine the ingredients until they are just incorporated.
5. Chill the meat mixture before rolling
Chilling the meat mixture for at least 30 minutes can help to firm up the meat and make it easier to roll into meatballs. This also helps the meatballs to hold their shape when cooking.
6. Roll meatballs evenly
To ensure that your meatballs cook evenly, it is important to roll them into the same size. This can be achieved by using a cookie scoop or measuring the meatballs with a tablespoon. Not only will evenly sized meatballs cook at the same rate, but they will also look more visually appealing.
7. Use the appropriate cooking method
There are several ways to cook meatballs, including frying, baking, or simmering in a sauce. Choosing the appropriate method depends on the recipe and desired outcome. For instance, frying meatballs delivers a crispy exterior, while baking meatballs is a healthier option that saves time and effort. Cooking meatballs in a simmering sauce ensures the meatballs absorb the flavors of the sauce.
8. Don’t overcook the meatballs
Overcooking meatballs can result in dry and rubbery meatballs. The optimal temperature for cooking meatballs is 165 F. It is important to use a meat thermometer to ensure that the meatballs are cooked through, but not overdone.
9. Experiment with different fillings
There are endless possibilities when it comes to meatball fillings. From cheese-filled meatballs to veggie-packed meatballs, experimenting with different fillings can add a unique twist to the classic meatball. Not only does this add extra flavor, but it also provides a nutritional boost to the meal.
10. Finish with a flavorful sauce
A flavorful sauce can take any meatball recipe to the next level. From classic marinara sauce to spicy peanut sauce, the possibilities are endless. The right sauce can add depth of flavor and bring all the ingredients together for a harmonious taste. In conclusion, making amazing homemade meatballs is not as difficult as it may seem. By following the tips outlined above, anyone can create mouth-watering meatballs that are sure to impress. From choosing the right meat to experimenting with different fillings, the key is to be creative, patient and pay attention to the details. With a little practice, anyone can whip up a delicious batch of homemade meatballs that will have everyone asking for the recipe.
