½ cup plain Greek yogurt (full fat preferred)
¼ cup olive oil
zest of one lemon
⅓ cup lemon juice
4-5 cloves garlic pressed or minced
2 tablespoons dried italian seasoning
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Whisk together ingredients for marinade. Toss chicken in marinade to fully coat. Allow to sit for at least 15 minutes, or keep in the refrigerator for longer, up to overnight.
  • When ready to cook, preheat oven to 425°F.
  • Line a baking sheet with foil for easy cleanup. Arrange chicken on baking sheet in a single layer.

3 teaspoons olive oil
1 garlic clove (minced)
4 green onions (diced)
6 boneless chicken thighs
salt and pepper
1/2 teaspoon oregano
1/4 teaspoon garlic powder
1 cup grape tomatoes
1/2 cup black olives
1 lemon (juiced)
1 lemon (zest)
2 tablespoons parsley
4 tablespoons feta cheese

Steps:

  • Combine onions and garlic in oil, saute a few minutes; remove from heat.
  • Season thighs with salt, pepper,garlic poweder and oregano; cook in a medium hot skillet about 2-3 minutes until they are golden brown, turn over, add onion & garlic mixture,lemon juice and zest and 1 T. parsley, cook another 3 minutes.
  • Place chicken in a baking dish, top with olives and tomatoes.
  • Roast 15-20 minutes until chicken juices run clear.
  • Remove from oven; top with parsley and feta cheese, serve.

Perfect harmony of traditional Greek flavours, mixed with a little Canadian flare :) Plus, you NEED a fresh loaf of delicious bread to dip into the sauce. It is delicious!

8 chicken thighs (with skin on)
1/2 tablespoon seasoning salt (Lawry's or Hy's )
fresh ground pepper
1 tablespoon oregano
1 1/2 lemons (don't use realemon, it won't be the same)
1/2 cup olive oil
butter, a few knobs

Steps:

  • Preheat oven to 350.
  • In a large baking dish, add chicken thighs, skin side up. Add olive oil and the juice of 1 lemon. Give them a good stir to evenly coat the thighs. Sprinkle with seasoning salt, pepper, and oregano.
  • (Optional) You can stick small knobs of butter underneath the chicken skin if you want to have an extra special meal :).
  • Add a little water, just to prevent the pan from burning and to create a "zoumee", sauce, in Greek :).
  • Put it in the oven for about 30-40 minutes, or until the meat is cooked. Halfway through, add more water if it needs (maybe 1/4 cup) and the other half of the lemon.
  • When the meat is cooked, put oven on BROIL to crisp up the skin at the very end. Watch it carefully when you do this because the skin may burn quickly. We're goin for a crisp deep golden brown.
  • You're done! Eat with a fresh loaf of bread, some lemon potatoes and a greek salad with lots of feta.
