THAI CASHEW CHICKEN STIR FRY

Thai Cashew Chicken Stir Fry image

Recipe video above. Crunchy and creamy cashews are the star in this popular Thai chicken stir fry! Tossed with a bold and savoury Thai stir fry sauce, make this as spicy as you want - or not at all.Thai Cashew Chicken is a dry-style stir fry so there's not a ton of sauce like with Chinese Cashew Chicken. But the flavour in this one is much more intense so you don't need nor do you want more sauce, it will be too salty!SPICINESS: Nice buzz to it from 1/2 a fresh chilli, not blow-your-head-off spicy.

200g/7oz chicken thighs (, skinless and boneless, sliced into 1cm / 1/3" thin strips (Note 2))
2 green onions (, cut into 2.5cm / 1" lengths, white part separated from green part)
1/2 red cayenne pepper (, deseeded and finely sliced on the diagonal (omit or reduce if preferred) (Note 3))
1 tbsp oyster sauce ((Note 4))
1 tsp dark soy sauce ((Note 5))

  • Sauce: Mix all the Sauce ingredients in a small bowl.
  • Cook cashews: Heat oil over medium heat in a wok or large skillet. Add cashews and cook for 5 minutes until they become a dark golden colour and crunchy (yep, you might have to eat one to check!). Remove from skillet with a slotted spoon.
  • Garlic & onion: Turn heat up to high. Add garlic and onion. Cook for 30 seconds.
  • Chicken: Add chicken. Cook for 1 minute until the outside changes from pink to white.
  • White part of green onion & chilli: Add white part of green onions and chilli. Cook for 1 minute until chicken is just cooked through.
  • Add Sauce: Cook for 1 minute until it reduces down to a syrup, coating the chicken nicely.
  • Green onion & cashews: Add green part of green onions and cashews. Toss for 30 seconds.
  • Serve: Transfer to serving dish. Serve with jasmine rice, or other rice of choice, garnished with extra red chilli (if you can handle the heat!).

AUTHENTIC THAI CASHEW CHICKEN

Authentic Thai Cashew Chicken image

I adapted this recipe from a cooking class I took while I stayed in Bangkok. You can adjust the veggies and spiciness to your personal preference and you can substitute firm tofu for chicken. Serve over jasmine rice. Adjust the amount of chili garlic paste for spiciness.

Valuable Tips When Making Amazing Cashew Chicken Recipes

Cashew chicken is a popular Chinese dish that has made its way into western cuisine. It is a simple and delicious stir-fry dish that is a favorite for many people. Cashew chicken can be made in many ways, but the most popular and tasty way is to make it from scratch. In this article, we will give you some valuable tips on how to make amazing cashew chicken recipes that are sure to impress.
Tip 1: Use Fresh Ingredients
The key to any good dish is to use fresh ingredients. When making cashew chicken, it is essential to use fresh vegetables such as onions, carrots, and bell peppers. The chicken should also be fresh and properly cooked to retain its flavors. The cashews should be roasted and not salted to give the dish a crunchy texture without overpowering the flavors.
Tip 2: Marinate the Chicken
Marinating the chicken before cooking is an excellent way to infuse it with flavor. The marinade can consist of soy sauce, ginger, garlic, and rice wine or sherry. The chicken should be marinated for at least 30 minutes to an hour to allow the flavors to penetrate the meat. This technique will result in tender, juicy and flavorful chicken that will elevate the dish.
Tip 3: Properly Cook the Vegetables
The vegetables used in cashew chicken should be cooked properly to retain their flavors and textures. Overcooking vegetables, especially bell peppers and onions, can result in a mushy and unappetizing dish. The vegetables should be cooked until they are crisp-tender and still have their color.
Tip 4: Use the Right Sauce
The sauce is a crucial component of cashew chicken. A good sauce should balance the flavors of sweet, sour, salty and spicy. The sauce can be made from soy sauce, rice vinegar, sugar, cornstarch, and chicken broth. Other flavors can be added such as chili flakes or hoisin sauce to give the dish a kick.
Tip 5: Add the Cashews at the End
Adding the cashews at the end of cooking is a technique that will help to retain their flavor and crunch. Cashews have a high oil content, and if added too early, they will lose their texture and turn soggy. Roasting the cashews beforehand will help to enhance the flavor and give them a nice crunch.
Tip 6: Garnish
The presentation of the dish is just as important as the flavor. A good garnish can make even the simplest dish look appetizing. Green onions, fresh cilantro, or sesame seeds can be used as a garnish for cashew chicken to add some color and texture to the plate.
Tip 7: Serve with Complimentary Sides
Cashew chicken can be served with a variety of side dishes that will complement its flavors. Steamed rice or noodles are the most popular sides and will help to soak up the delicious sauce. Stir-fried vegetables such as bok choy, broccoli, or snow peas can also be served as a healthy and tasty side.
Conclusion
Making amazing cashew chicken recipes is easy with the right techniques and ingredients. Using fresh ingredients, marinating the chicken and cooking the vegetables properly are all essential to making a perfect dish. Adding the cashews at the end and using the right sauce will elevate the dish's flavor and texture. Garnishing the dish and serving it with complementary sides will complete the experience. Follow these tips, and you will be making amazing cashew chicken that will impress your family and friends.
