From Grandma Yonkman. Delicious! She adds, 'do not try to substitute almond extract for almond paste; you need the texture of the almond paste!'

1 cup raisins
1 ½ cups water
4 teaspoons butter
1 egg
1 cup white sugar
2 ¾ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 cup almond paste, grated
1 cup walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.

  • Beat the egg and sugar together in a large bowl until the sugar dissolves into the mixture. Sift the flour, baking soda, and salt together in a separate bowl; stir in batches into the egg mixture along with the cooled raisin mixture, alternating small amounts of each as you stir. Mix the almond paste and walnuts into the mixture. Pour about half of the resulting batter into each loaf pan.
  • Bake in the preheated oven until the top springs back when pressed, about 1 hour.

DRIED CHERRY BREAD

Dried Cherry Bread image

I was looking for a muffin or quick bread recipe that called for yogurt but all were a bit too wholesome for me so I dreamed up this dried cherry bread. But at least I kept the oats! I am sure this batter could be used to make muffins too. A streusel topping or powdered sugar glaze would be extra naughty and extra good too but I didn't want to be too naughty.

There's nothing quite like the smell of fresh-baked bread coming out of the oven. One of the best things about making bread at home is that you can experiment with different flavors and ingredients to create unique and delicious recipes. If you're looking for a new recipe to try, consider making almond carrot currant bread. This bread combines the sweet and nutty flavors of almonds and currants with the subtle sweetness of carrots to create a tasty and nutritious treat. Here are some valuable tips to keep in mind when making amazing almond carrot currant bread recipes.

Tip 1: Measure Your Ingredients Carefully

When making bread, it's important to measure your ingredients accurately. Even small variations in measurements can affect the texture and flavor of the final product. Use measuring cups and spoons to ensure that you're using the correct amount of each ingredient. Be especially careful when measuring flour - use the scoop-and-level method rather than packing the flour into the measuring cup. This will ensure that you don't end up with too much flour, which can result in a dry and dense bread.

Tip 2: Use Fresh and High-Quality Ingredients

The quality of your ingredients can make a big difference in how your bread turns out. For almond carrot currant bread, use fresh carrots that are free from blemishes or soft spots. Use high-quality almonds and currants, and make sure they're fresh and not stale. When selecting flour, choose one that is high in protein, such as bread flour. This will help create a sturdy and elastic dough that will rise well and produce a soft, fluffy bread.

Tip 3: Use Active Dry Yeast

Yeast is a key ingredient in bread-making, and using the right type of yeast is important. For almond carrot currant bread, use active dry yeast. This type of yeast needs to be dissolved in warm water before being added to the dough. Make sure the water is at the correct temperature - around 110°F to 115°F (43°C to 46°C). If the water is too hot, it can kill the yeast, and if it's too cool, the yeast won't activate properly.

Tip 4: Knead the Dough Thoroughly

Kneading is an important step in bread-making as it helps develop the gluten in the flour, which gives the bread its structure and texture. When making almond carrot currant bread, knead the dough for at least 10 minutes. This will ensure that the dough is smooth and elastic. It's best to knead the dough by hand rather than using a mixer, as this allows you to feel the bread and adjust the kneading as needed.

Tip 5: Let the Dough Rise Twice

After kneading the dough, it needs to be allowed to rise. For almond carrot currant bread, let the dough rise twice. After the first rise, punch down the dough and shape it into a loaf. Place the loaf in a greased loaf pan and let it rise again until it's doubled in size. This second rise will help the bread rise more evenly and create a light and airy texture.

Tip 6: Bake the Bread Until Golden Brown

Baking is the final step in bread-making, and it's important to get it right. For almond carrot currant bread, bake the bread until it's golden brown on top and sounds hollow when tapped on the bottom. The internal temperature of the bread should be around 190°F (87°C). If the bread is undercooked, it can be gummy and dense, while overcooked bread can be dry and tough.

Conclusion

Making almond carrot currant bread can be a rewarding and delicious experience. By using high-quality ingredients, measuring carefully, and following the tips above, you can create a bread that's both nutritious and tasty. Don't be afraid to experiment with different variations, such as adding other nuts or fruits, to create your own personalized recipe. With a little practice and patience, you'll be baking amazing almond carrot currant bread in no time.
