AMARETTO CUSTARD
Asking for different custard recipes, which my dad just loves, I was given this recipe. I have not tried it, but it looks really good!

Steps:
- Warm Half& Half.
- Place sugar, egg yolks, salt, Amaretto, vanilla flavor, almond flavor, and almond paste in another bowl, mix well.
- Mix the Half& Half with egg yolk mixture.
- Pour mixture through a sieve.
- Pour mixture into well-buttered and sugared ceramic molds.
- Bake at 350 degrees in water bath for about 45 minutes or until set.
- Cool, unmold, and serve with fresh sliced fruit, fruit sauce, caramel sauce, or whipped cream.
- Yield: four servings.

- In a large heavy saucepan, combine sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Stir in the butter, Amaretto and vanilla. Cool to room temperature., Transfer custard to a small bowl; press waxed paper onto surface of custard. Refrigerate until chilled. , Just before serving, spoon 1/4 cup strawberries into each of four parfait glasses. Layer each with 1/3 cup custard, 1/4 cup raspberries and 1/3 cup custard. Top each with a whole strawberry. ,

AMARETTO AND CREAM CHEESE CUSTARD
This custard's flavor and presentation are equally lovable! We used a 12oz can of evaporated milk and a 14oz can of condensed milk... turned out perfectly.

- 1. Preheat your oven 375F. Preprare a deep pan ( brownie or lasagna pan will work) with water for the (bain marie).Put a side.
- 2. Beat together all the ingredients (except the roasted almonds)until evenly mix. Put a side.
- 3. For the caramel place 1 cup of sugar on a sauce pan med heat. Until it start melting and change color. Pour the caramel on 6 individual ramekins cover all the bottom . Finally pour the custad mix. place the ramekins on the bain marie. Bake for 40 to 45 minutes until sets. Serve wth the crushed almond and whipped cream on top
AMARETTO BAKED CUSTARD

Steps:
- 1. In a heavy nonreactive saucepan combine the egg yolks, sugar, flour, and salt.
- 2. Beat until the mixture is pale yellow. Place over low heat and slowly stir in the warm milk & warm cream.
- 3. Cook, stirring constantly, for 7 to 10 minutes.
- 4. Add in Amaretto.
- 5. Let sit while you butter your ramekins.
- 6. Pour even amount into buttered ramekins. Set Ramekins into a water bath. (Broiler pan filled with 1 inch hot water)
- 7. Bake at 325 for 35 minutes or until set. Custard is set when center barely moves after touching ramekin.
- 8. Cool on a wire rack and chill. You can leave custard in the ramekin and serve or you can turn them out to serve. Shake some nutmeg on top before serving. =)

Steps:
- Press some of the toasted almonds in bottom of the pie crust.
- Bake in a 350 degree Fahrenheit oven until lightly browned, about 10 15 minutes.
- Meanwhile in double boiler heat 1/2 and 1/2 cream to 110 degrees Fahrenheit.
- In another bowl mix egg yolks, almond paste, vanilla extract, almond extract, and Amaretto together.
- Temper cream into egg yolk mixture.
- Mix until smooth.
- Pour into pie crust.
- Cook in ban marie water bath under pie pan so it doesn't get wet.
- Bake at 350 degrees Fahrenheit for 45 minutes until set.
- Beat egg whites with 1/4 cup sugar until stiff.
- Put on top of custard.
- In a broad band around perimeter of pie, spread the toasted almond flakes.
- Bake until merigue browns.

History
Custard has a long history, with evidence of its existence dating back to ancient Roman times. The word custard is derived from the French word “croustade” which means a crust. The dessert was originally made by cooking eggs with cream and sugar, which was then poured into a crust and baked. Later, the crust was eliminated, and custard became a standalone dessert. The amaretto liqueur on the other hand, originated in Italy, where it was made from bitter almonds. The name “amaretto” means “a little bitter” in Italian, referring to the bitter taste of almonds. The liquor became popular in the 19th century and has been used in various recipes since then.Ingredients
To make amaretto custard, you will need:- 1 cup of heavy cream
- ¾ cup of sugar
- 4 egg yolks
- 2 tablespoons of amaretto liqueur
- A pinch of salt
- 1 teaspoon of vanilla extract
Method
To make amaretto custard:- In a saucepan, heat the heavy cream, salt, and ½ cup of sugar over medium heat. Stir occasionally until the sugar dissolves and the mixture is hot but not boiling.
- In a medium mixing bowl, whisk the egg yolks and remaining ¼ cup of sugar until thick and pale yellow.
- Slowly pour the hot cream mixture into the egg yolk mixture, whisking continuously to prevent the eggs from curdling.
- Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon.
- Remove from the heat and strain the custard through a fine-mesh sieve into a bowl.
- Stir in the amaretto liqueur and vanilla extract.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour until chilled.
- When ready to serve, transfer the custard to serving bowls or glasses and garnish with sliced almonds or fresh berries if desired.
