2 cups granulated sugar
1 cinnamon stick
1 teaspoon whole cloves
1 vanilla bean, split
2 star anise
1/2 lemon
8 Bosc pears, peeled, cored, and quartered
1/2 cup coarsely crushed amaretti cookies
8 ounces crème fraîche or full fat Greek yogurt
Ground cinnamon, for serving

Steps:

  • In a large pot, combine sugar with 8 cups water and bring to a boil over high heat. Add the cinnamon, cloves, vanilla, star anise, and lemon, stir until the sugar is dissolved.
  • Add the pears to the liquid and reduce heat to low. Cover and simmer the pears until tender, about 20 to 25 minutes. Remove pot from heat and let the pears cool in their liquid at room temperature.
  • When ready to serve, use a slotted spoon to transfer pears to serving platter. Top with a dollop of crème fraîche, amaretti cookie crumbs, and a light dusting of cinnamon.

2 tablespoons sugar
1/4 cup sliced almonds, toasted

Steps:

  • Heat oven to 350°F. Place six 6-oz. oval or round ramekins or custard cups in 13x9-inch pan. In medium bowl, combine egg yolks and 1/2 cup sugar; beat with wire whisk until light and fluffy. Add whipping cream, amaretto, vanilla and salt; mix well.
  • Strain mixture into 4-cup measuring cup or another medium bowl. Pour about 1/2 cup mixture into each ramekin. Pour hot water into pan until halfway up sides of ramekins. Cover loosely with foil.
  • Bake at 350°F. for 40 to 50 minutes or until edges are set but center still jiggles slightly when gently shaken. Remove ramekins from water bath; place on wire racks to cool for 30 minutes. Pour out water from pan.
  • Transfer ramekins to same pan. Cover; refrigerate at least 3 hours or up to 24 hours before serving.
  • Sprinkle each ramekin with 1 teaspoon sugar. Watching constantly, broil custards 4 to 6 inches from heat for 1 to 4 minutes or until sugar bubbles and is caramelized. Refrigerate at least 1 hour or up to 3 hours to harden topping.
  • Just before serving, sprinkle toasted almonds over chilled crème brûlée. Store in refrigerator.

1 extra-large egg
4 extra-large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream
1 1/2 teaspoon vanilla
1 tablespoon orange liqueur (recommended: Grand Marnier)
Preheat the oven to 300 degrees F.

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined. Meanwhile, scald the cream in a small saucepan until it's very hot to the touch but not boiled. With the mixer on low speed, slowly add the cream to the eggs. Add the vanilla and orange liqueur and pour into 6 to 8-ounce ramekins until almost full. Place the ramekins in a baking pan and carefully pour boiling water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes, until the custards are set when gently shaken. If using 4 large white ramekins, I bake for 45 minutes in water bath. Remove the custards from the water bath, cool to room temperature, and refrigerate until firm. Can use quick freezer method for an hour or so if needed. To serve, spread 1 tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar carmelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens.

1 lb mascarpone (500gr)
11 ounces low-fat yogurt (300gr)
1/2 cup sugar (100gr)
1 lemon, juice of
17 fluid ounces whipping cream, whipped (400gr)
7 ounces amaretti (200gr)
4 tablespoons Amaretto
cocoa, for dusting (optional)

Steps:

  • Mix the mascarpone, yoghurt, sugar & lemon juice, using an electric mixer, until well combined.
  • Fold in the whipped cream.
  • Place the amaretti biscuits in a zip lock and bash or roll with a rolling pin until broken up.
  • Mix the broken up amaretti biscuits with the amaretto liqueur and fold into the cream mix.
  • Place in a large serving bowl, dust with cocoa and garnish with whole amaretti buiscuits.
  • Alternatively you can divide it into 8-10 single servings in a pretty glass (martini glas for example), dust it with cocoa and garnish with amaretti biscuits.
  • If you don't serve it immidiately, refridgerate.
