"PORK ON PORK" CHOPS

Provided by Amanda Freitag

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 7

1 pound pancetta, cut into small dice
2 tablespoons fresh thyme leaves
1 tablespoon fresh rosemary leaves
3 garlic cloves
4 center-cut pork chops, each about 2 1/2 inches thick
Kosher salt and freshly cracked black pepper
3 tablespoons canola oil

Steps:

  • Preheat the oven to 400 degrees F.
  • In a food processor, combine the pancetta, thyme, rosemary and garlic. Pulse until the mixture is finely ground. Set aside.
  • Make sure the pork chops are at room temperature, then liberally season them with salt and pepper on both sides.
  • Heat the canola oil in a large ovensafe skillet or grill pan over high heat. When the oil is hot, sear the pork chops for about 2 minutes on each side.
  • Stick the pan in the oven to finish cooking the pork, 5 to 6 minutes. Depending on your oven, of course, and the thickness of your chops, this should result in a medium to medium-well chop, still slightly pink in the middle. If you prefer a more well-done chop, add a minute or 2 to the cooking time.
  • While the pork chops are in the oven, heat a large saute pan over high heat. Add the pancetta and herb mixture. Turn the heat down to low and continue to cook the pancetta, stirring continuously to break up any large chunks, until all the fat is rendered and the pancetta is crispy, 8 to 10 minutes.
  • Serve the pork chops topped with the crispy herbed pancetta and rendered fat. Serve while hot and bubbling!

Valuable Tips When Making Amanda's Saucy Pork Chops Recipe

Amanda's saucy pork chops recipe is an all-time favourite dish loved by many. It is a dish that is easy to make and very delicious. The recipe is made up of a tasty blend of spices, herbs, and a few other key ingredients that add depth of flavour and complexity to the dish. However, there are some valuable tips that one should know when making this recipe to ensure it turns out as perfectly as intended. This article will provide insight into valuable tips for making Amanda's saucy pork chops recipe.
Tip #1: Use High-Quality Pork Chops
One of the most important tips when making Amanda's saucy pork chops recipe is to use high-quality pork chops. The quality of the pork chops you use will ultimately determine the overall taste of the dish. For best results, choose pork chops that are well-marbled, fresh, and not dried out. Additionally, ensure that the pork chops are not too thin or too thick as this can affect the cooking time and make it difficult to cook the pork chops evenly.

How to Choose High-Quality Pork Chops

When choosing pork chops, look for cuts that are pink and not grey or brown. This indicates that the pork chops are fresh. Additionally, look for cuts that have a good marbling of fat throughout the meat. This fat will add flavour and juiciness to the dish when cooked.
Tip #2: Marinade the Pork Chops Overnight
Another valuable tip when making Amanda's saucy pork chops recipe is to marinate the pork chops overnight. This allows the pork chops to absorb all the flavours of the marinade and become tender and juicy. The marinade used in this recipe is made up of soy sauce, Worcestershire sauce, minced garlic, and a few other spices. This combination of flavours is what gives the pork chops their unique taste and aroma.

How to Make the Marinade

To make the marinade, mix the soy sauce, Worcestershire sauce, minced garlic, black pepper, paprika, and dried oregano in a bowl. Place the pork chops in a shallow dish and pour the marinade over them. Ensure that both sides of the pork chops are coated with the marinade. Cover the dish with cling wrap and refrigerate for at least 4 hours or overnight.
Tip #3: Cook the Pork Chops at the Right Temperature
Cooking the pork chops at the right temperature is key to ensuring they are cooked through and juicy. Overcooking the pork chops can result in dry, tough meat that is not enjoyable to eat. To achieve the perfect temperature, use a meat thermometer to check the internal temperature of the pork chops.

How to Check the Internal Temperature with a Meat Thermometer

Insert the meat thermometer into the thickest part of the pork chop. Ensure that the thermometer does not touch the bone as this can give a false reading. For pork chops, the recommended internal temperature is 145°F (63°C). Once the pork chops have reached this temperature, remove them from the heat and let them rest for 3-5 minutes to allow the juices to redistribute throughout the meat.
Tip #4: Let the Pork Chops Rest Before Serving
Letting the pork chops rest before serving is another valuable tip when making Amanda's saucy pork chops recipe. Resting allows the juices to distribute evenly throughout the meat, making the pork chops more tender and flavourful. If you cut into the pork chops immediately after cooking, the juices will escape, resulting in dry and less tasty meat.

How to Rest Pork Chops

To rest pork chops, remove them from the heat and place them on a plate. Cover the plate with foil and let the pork chops rest for 3-5 minutes. This will give the juices time to redistribute throughout the meat, resulting in tender and juicy pork chops.
Tip #5: Serve with the Right Accompaniments
Serving the pork chops with the right accompaniments can elevate the entire dish and make it even more enjoyable. For Amanda's saucy pork chops recipe, a side of mashed potatoes or roasted vegetables would be a perfect match. Additionally, a glass of red wine would complement the flavours of the pork chops well.

Example of Accompaniments to Serve with Pork Chops

- Mashed potatoes - Roasted vegetables (such as carrots, potatoes, and onions) - Rice pilaf - Grilled asparagus - Green beans almondine - A glass of red wine (such as Cabernet Sauvignon or Merlot)
Conclusion
In conclusion, Amanda's saucy pork chops recipe is a delicious dish that is easy to make with a few key ingredients. However, there are some valuable tips that one should know when making this recipe to ensure it turns out perfectly. It is important to use high-quality pork chops, marinade the pork chops overnight, cook the pork chops at the right temperature, let the pork chops rest before serving, and serve the pork chops with the right accompaniments. By following these tips, you will be sure to impress your family and friends with juicy, tender, and flavourful pork chops.
