RICE PILAF

Rice Pilaf image

Categories     side-dish

Time 45m

Yield 6

Number Of Ingredients 12

1 tablespoon unsalted butter
1/2 medium onion, finely chopped
1/2 medium red bell pepper, finely chopped
1 1/2 teaspoons kosher salt plus 2 pinches
2 cups long-grain white rice
1 pinch saffron, steeped in 1/4 cup hot but not boiling water
2 1/2 cups chicken broth
1 1-by-2-inch strip orange zest
2 bay leaves
1/2 cup peas, fresh or frozen
1/4 cup golden raisins
1/4 cup pistachios, chopped

Steps:

  • Preheat the oven to 350.
  • Melt the butter in a 3-quart saucier over medium heat.
  • Stir in the onion, bell pepper and 2 pinches of salt.
  • Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes.
  • Add the saffron and its water, the broth, orange zest, bay leaves and the remaining 1 1/2 teaspoons salt. Increase the heat and bring to a boil.
  • OK, now the weird part: Thoroughly wet a clean towel, kill the heat, scatter the peas on top of the rice, then place the towel across the top of the saucier. Top with the lid, then fold the towel corners up over the lid.
  • Transfer the saucier (towel and all) to the oven and bake 15 minutes.
  • Remove and rest at room temperature for 15 more minutes without opening the lid.
  • Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.

FRIED RICE

Fried Rice image

Provided by Alton Brown

Time 45m

Yield 1 pint

Number Of Ingredients 8

4 ounces firm tofu
2 teaspoons sesame oil
1 pint cold cooked rice, preferably takeout
4 ounces shelled edamame, thawed if frozen
2 scallions, sliced
2 tablespoons soy sauce
2 tablespoons chile paste, such as sambal oelek
1 cup fresh basil leaves, shredded

Steps:

  • Cut the tofu into 1/2-inch slices and wrap in three layers of paper towels. Then, sandwich the bundle between two plates, set a 28-ounce can of tomatoes on top and leave at room temperature for 30 minutes. Unwrap and cube.
  • Heat the wok as hot as you can get it. If you turn off the lights, the bottom should glow...I am not kidding. When the wok is very hot, add the sesame oil (there will be smoke) and swirl to coat the pan. Immediately add the cold rice, edamame and scallions and fry, moving constantly, for 2 minutes, or until the scallions wilt. Add the soy sauce, chile paste and basil and fry for 1 minute more. Steps:

  • Place the vegetable oil in a 7-quart Dutch oven and set over medium-high heat. Add the onion, bell pepper, celery, salt and pepper to the pot. While the water is coming to a boil place the butter into a 3-quart saucepan, set over medium heat. Once the butter begins to bubble, add the rice and stir to combine. Add the salt and cook for 2 to 3 minutes, stirring frequently. Carefully pour the water over the rice and stir to combine. Decrease the heat to the lowest setting, cover, and cook for 15 to 20 minutes. Serve the beans over the rice.
  • Combine all of the ingredients except the ice and the pork in a 2-quart non-reactive saucepan, set over high heat and bring to a boil. Reduce the heat and maintain a simmer for 3 minutes. Remove from the heat, add the ice and stir. Place the pork into a 1-gallon zip top bag and add the cooled pickling liquid. Remove as much air as possible; seal the bag and place in the refrigerator for at least 3 days, turning the bag occasionally. Use within 2 weeks or remove from the pork from the brine and freeze.

Baked brown rice is a popular dish that is easy to prepare and can be a healthy addition to any meal. Alton Brown's baked brown rice recipe is a simple and delicious way to make this dish. However, there are a few tips that can help you achieve the perfect texture and flavor.

Tip #1: Rinse and Soak the Rice

One of the most important steps in making baked brown rice is to rinse and soak the rice before cooking. This helps to remove excess starch and any impurities that may be present. It also helps the rice to cook more evenly. To rinse the rice, place it in a fine-mesh strainer and rinse it under cold running water until the water runs clear. Then, transfer the rice to a bowl and cover it with cold water. Soak the rice for at least 30 minutes or up to 2 hours.

Tip #2: Use the Right Ratio of Water to Rice

The next important step is to use the right ratio of water to rice when cooking. Brown rice requires more water than white rice, so it's important to follow the recipe instructions carefully. In Alton Brown's baked brown rice recipe, he recommends using 2 1/2 cups of water for every cup of brown rice. This ratio ensures that the rice is properly hydrated and cooked to the right texture.

Tip #3: Use a Covered Dish and Oven

To achieve the best results, it's important to use a covered baking dish and bake the rice in the oven. This helps to trap in the moisture, resulting in tender and fluffy rice. For Alton Brown's baked brown rice recipe, he recommends using a 9x13-inch baking dish with a lid. This size is perfect for the amount of rice in the recipe and allows for even cooking.

Tip #4: Don't Stir the Rice

When baking brown rice, it's important not to stir the rice while it's cooking. This can break up the grains and result in sticky and mushy rice. Instead, simply place the rice and water in the baking dish, cover it with the lid, and let it bake in the oven. This will result in perfectly cooked and fluffy brown rice.

Tip #5: Rest the Rice

Once the rice has finished baking, it's important to let it rest for a few minutes before serving. This allows any excess moisture to be absorbed and the rice to set up properly. Alton Brown's baked brown rice recipe recommends letting the rice rest for 10 minutes before fluffing it with a fork and serving.

Conclusion

Baked brown rice is a delicious and healthy side dish that can be enjoyed with a variety of meals. Following these tips when making Alton Brown's baked brown rice recipe can help you achieve the perfect texture and flavor. With a little bit of patience and attention to detail, you can create a flavorful and nutritious dish that will be the highlight of any meal.
